Wendy’s Date Nut Truffles
One day my coauthor, Mat, was reminiscing to his mom, Clair, about an ice cream store he worked at while in college. “I told her that I got so sick of ice cream that for two years after I quit I couldn’t go near it.” At which point Clair mentioned that as a girl she worked for years at the chocolate counter at Gimbel’s, one of New York’s famous retailers. Gimbel’s let you eat as much chocolate as you liked on the job, so long as you didn’t take any home. “I asked Mom if she ever got sick of chocolate. She just looked at me like I was nuts and said, ‘Why would I?’” Which brings us to these little morsels. For chocolate aficionados, nothing provides a better fix than a truffle. My friend Wendy, an incredible chocolatier, designed these confections from a scrumptious mélange of chocolate, dates, orange zest, and ground nuts, all rolled in coconut. I could tell you that the reason to eat these is because they’re high in protein and phytochemicals, but how ‘bout we just call that a nice side benefit of yum! Since you’re going to indulge in a chocolate dessert, be sure to make it the best by using high-quality chocolate.
Chocolate Tapioca Pudding
One of the reasons comfort foods are such a big part of this book is that in times of stress, it’s natural to seek out foods that have never let you down. So it is with tapioca pudding, a staple throughout the world. The cassava root, which is made into tapioca pearls, is rich in carbohydrates and gluten free, making this dessert a good treat for people who want to maintain weight without taxing the digestive system. A little chocolate sweetens the package, making this an ideal dessert to eat by the fireplace. Be sure to use very high-quality chocolate to enhance the yum factor. You can make tapioca without presoaking, but plan on an extra 10 to 20 minutes of cooking time.
Chocolate Rice Crispy Treats
SunButter is used in place of marshmallow as the binder in this allergen-free version of an old favorite. In addition to being delicious, this rice crispy treat is also packed with protein and vitamin E, so you can feel indulged and virtuous, all at the same time! Dark Karo syrup contains molasses instead of high-fructose corn syrup, and thus is better in my opinion, but dark and light corn syrup are interchangeable.
Coconut Chip Bars
Often called “dream bars,” these double-layered bar cookies have a crunchy graham cracker base and a chewy, caramelized top. My friend Ben Duke says, “The only problem with these cookies is that there aren’t more of them!”
Fudge Brownies
Up until I created this recipe, allergen-free, gluten-free brownies were a bit like the Holy Grail. I kept searching, but to no avail. I worked on my own recipe, but making brownies without dairy, soy, gluten, and, most of all, eggs is not easy! Granted, there were recipes out there that called themselves brownies, but they were really just mini cupcakes. A chewy, moist brownie with a nice crusty, glossy top remained elusive. Until now, that is. Yup, that’s right, after years of trying, I’ve finally baked it—an honest-to-goodness allergen-free, gluten-free, vegan tray of real brownies. Go ahead, I dare you, try eating just one.
SunButter Greenies
This cookie was a happy accident. I was experimenting with SunButter and discovered that when you bake it combined with maple syrup, it turns the center of the cookie green. (It has to cool to work its alchemy.) My husband loves these cookies because they have no refined sugar, and my kids like them for their Dr. Seuss–like hue. They’re perfect for the Christmas season or as a healthy snack all year round. Use organic unsweetened SunButter if you can fi nd it; if not, regular works fine, too. Be sure to measure the SunButter and the maple syrup with a liquid measuring cup. Remember there is a small chance of soy cross-contamination with SunButter (see page 179 for more information), but if that’s a problem you can make your own sunflower seed butter.
Chocolate Thumbprint Cookies
Pretty and elegant, these cookies will make your mouth water, and they’re fun to make! Kids love sticking their thumb in the middle of the cookies, and filling the mini pool with creamy delicious chocolate. See below for a fruity variation.
Chocolate Chip Cupcakes with Chocolate Chip Frosting
These could just as easily be called “Allergen-Free Heaven.” Need I say more?
Allergen-Free Chocolate Chip Cookies
I would argue that these egg-free, dairy-free, wheat-free cookies are even better than traditional counterparts. The edges have that coveted toffee-like crunch, and the inside is soft and chewy.
Double Choco Chunk Cookies
These chewy, brownielike cookies contain a double dose of chocolate and are full of Enjoy Life Boom Choco Boom chunks. They’re perfect for every chocoholic (and I should know!).
Chocolate Pudding Tart
My friend Amy has celiac disease and a dairy allergy. She says this tart is just perfect, and makes her feel “normal” again. She loves that she can share it with her non-food-allergic husband and kids, and that they gobble it just as voraciously. The shortbread crust is heavenly with the rich chocolate pudding.
Chocolate Dirt
Although dirt may not sound appetizing, this fun topping is perfect for dusting cakes and cupcakes. You only need one simple ingredient—dark chocolate chips. Just be sure to clean out your coffee grinder before and after making it so you don’t get coffee-flavored dirt or chocolate-flavored coffee—though I could think of worse things.
White Chocolate Frosting
Eureka! A frosting with just two ingredients. Spread this rich, sweet, creamy frosting over Chocolate Cupcakes (page 22), Strawberry Cupcakes (page 24), or, for an extra sweet treat, White Chocolate Cherry Cupcakes (page 40).
Chocolate Ganache
According to Joy of Cooking, a ganache is a sleek, rich coating on a European torte, or the center of a rich chocolate truffle. I have adapted the old standard from this amazing cookbook, which is the most dog-eared in my collection. I like this recipe best with Triple Chocolate Cupcakes (page 33) or Almond Fudge Cupcakes (page 38).
Vegan Chocolate Frosting
Who would guess that this super-rich and thick chocolate frosting is vegan? Frost over everything, or simply eat it with a spoon, like I do.
Valentine’s Cupcakes
Dreamy whipped cream coupled with luscious chocolate ganache makes these cupcakes enticing for your Valentine.
Gluten-Free Black Forest Cupcakes
Chocolate cake with a whipped cream center is then topped with chocolate frosting, more whipped cream, chocolate shavings, and a cherry.
Flourless Chocolate Coconut Cupcakes
Have a soft spot for Mounds candy bars? This simple flourless cupcake is made of shredded coconut and chocolate. It’s great with my Vegan Chocolate Frosting (page 92) or without any frosting at all. Shredded coconut provides great fiber, and the dark chocolate is full of antioxidants.
