Avocado “Mayonnaise”
Neither mayonnaise nor guacamole, but something in between and, in some instances, better than either as a sandwich spread. Great, too, as a dip for cold shellfish. You can also thin it with heavy cream, sour cream, or yogurt and use it as a salad dressing (think of it as real Green Goddess). Make it spicy or not, as you like; I’ve had it both ways.
Berry Pudding
Berries are a big deal in Scandinavia. The farther north you go, the more precious they become. They are not only enjoyed fresh and preserved; they are celebrated, almost worshiped. This Jell-O-like dessert is a beaut.
Simple Fruit Soup
Made with soft berries, this is straightforward, easy, and delicious; it also has beautiful color. I like it best with blueberries, because they need no straining. If you use raspberries or other berries with seeds, force the soup through a fine strainer instead of pureeing it in the blender to remove them. This is great not only as a dessert but also for breakfast or as a snack.
Buttermilk Panna Cotta
Panna cotta is a no-brainer, sweetened cream thickened with gelatin. It has long been made with whatever dairy is around, and I think it’s far better when a certain amount of the cream is replaced by buttermilk. The result is more complex and not so stultifyingly rich.
Basbousa
Something between pudding and cake, basbousa is popular throughout the Middle East. It’s always drenched in sugar syrup and often topped with fresh whipped cream. Rose water (sold in small bottles at Middle Eastern stores; it keeps indefinitely) is an odd ingredient, a lovely flavor that can quickly become overpowering. Use it judiciously.
Sirniki
A classic Russian dessert that I like to serve for breakfast, which is convenient because the dough—or batter; actually it’s somewhere in between—can rest overnight (or longer). Serve with sour cream and jam.
Kolackys
This is all about the dough: there is none better. My earliest appreciation for it came from a cookie my grandmother made. I could never get over how delicious they were, but it was only years later that I realized they were a variation on the standard kolacky. These are most easily filled with thick preserves, or you can make your own fillings from stewed dried or fresh fruit as long as the mixture is thick. Some people add enough flour to make a stiff dough, but it’s really preferable to leave the dough sticky, which translates to tenderness, and refrigerate it for a few hours, which makes it easier to handle. If you’re in a hurry, however, make the dough a little stiffer and roll it out right away. These are fun to make with kids, as the ultimate shape really doesn’t matter.
Tarte Vaudoise
If you want to impress your guests with minimalism, here’s the ticket: a crust with a little sweetened cream on it. Ridiculously simple but—like a simple sugar cookie—enormously enjoyable. And be assured that this and the variation are traditional recipes. This is best with good, thick heavy cream, not ultrapasteurized. It’s worth a trip to a nearby farm or farmers’ market if that’s possible.
Cheese and Chile Quesadillas
In their simplest form, quesadillas are warm corn tortillas encasing spicy melted cheese, but the basic construction simply begs to be built upon. See the variations and keep in mind that the possibilities are endless—take advantage of what you have in the refrigerator or garden. Fresh corn tortillas are best, but flour ones are acceptable. You may dry-sauté the quesadillas, with no oil, in a nonstick or well-seasoned cast-iron skillet.
Subz Miloni
Like many dishes from India, this one contains a lot of ingredients and requires a fair amount of precooking work but is easy to assemble. If you can find fresh paneer—the simple cheese that appears in many Indian dishes—by all means use it. But tofu makes a great substitute. Serve over rice or as part of a larger Indian meal.
Eggplant Fritters
You can make eggplant into fritters, seasoned with almost anything you like, but my taste here runs to Parmesan; the combination is magical. Fritters are usually deep-fried, but it isn’t necessary in this case. Here they are made into flat, pancake like forms and cooked in far less oil. Like most fried foods, these are best hot; but, as with most fritters, they’re acceptable up to a half hour after they’ve been made (and, though I wouldn’t serve them to company this way, they’re pretty good cold).
Buckwheat Crêpes
Everyone knows about sweet crêpes (page 645), but visitors to France quickly become addicted to these—the classic snack food of Brittany—especially the ham-and-cheese variation. Traditionally, the batter sits for an hour before starting to cook. As long as you plan ahead a bit, that shouldn’t be a problem. But in a pinch you can skip the resting period—it doesn’t make too much difference—and overall these are easy to make and great as savory starters or a light lunch or supper.
Queso Frito
Variations of this exist around the world, but I like the Spanish version for its paprika and because I like Spanish cheese. A fresh cheese made of sheep’s milk is ideal here, but you can use any soft cheese you like, even mozzarella. This is best when it’s really hot, when the cheese is soft and the outside crisp; serve immediately after making it.
Queso Fundido
The original and superior version of nachos with cheese has the smoky spiciness of roasted chile and chorizo. While it can be served with tortilla chips, it is best scooped and wrapped into warm corn or flour tortillas. This makes a great simple lunch served with salad or soup.
Spinach Pancakes
Another good pancake starter or side dish. At their best hot, but still good warm. You can use frozen spinach for this if that’s all you have.
Gougères
Gougères are perfect dinner party fare; they’re elegant, delicious, and filling, all of which buys you a few extra minutes when you’re getting the main course ready. Gougères are fried as commonly as they’re baked, but baked gougères hold numerous advantages for the home cook: they’re less messy, they can be baked in advance (even a day ahead: let them cool to room temperature, store in an airtight container overnight, then reheat in a 200°F oven), and they can be served at room temperature. I like them best made with well-aged Gruyère, but any of the cheeses suggested below will work well.
Manti
Like Wor Teep, Chinese pot stickers, these meat-filled dumplings are filling and delicious (with store bought dumpling wrappers, they’re also quite easy). But the serving style is completely different: these are usually cooked and served in broth, with yogurt. Alternatively, you can boil them in water and serve them with yogurt or melted butter.
Cheese-Filled Vareniki or Pierogi
These are usually quite sweet but served as a main course nevertheless, because they’re incredibly filling. Most frequently boiled and served with melted butter, like the meat-filled dumplings in the preceding recipe, but I grew up eating them fried in butter, and they are superior that way. (Ideally, they’re served with sour cream as well.) These, served with some of the other vareniki or pierogi on these pages, are just great.
Empanadas
A street snack of Central America and the Caribbean, empanadas can really be filled with anything you have on hand. This recipe and its variations offer several of the traditional fillings. Masa harina can be found at most supermarkets and Latin grocery stores. It adds a nice crunch to the dough, but regular flour works well, too.
Pork, Piquillo, and Cheese Canapés
You can use leftover pork (or any meat, really), for these canapés, because its flavor is not the most important thing here. What is important are the piquillos and the manchego. Without these the dish has no authenticity. That said, this is a great basic recipe combining meat, cheese, and pepper, and you can substitute for any of them—I especially like this with a bit of chorizo and a strong blue cheese. If you start with raw pork tenderloin, cut it into 4 slices and brown it in a little olive oil in a nonstick skillet over medium-high heat for about 3 minutes per side.
