Barbecued Cheddar Burgers
Top the grown-ups' burgers with the caramelized onions with barbecue sauce and be sure to have mayonnaise and mustard on hand. Serve corn on the cob and the baked potato wedges to the whole crowd.
Buttermilk Pancakes
For variety, sprinkle berries, nuts or chocolate chips over the pancakes before turning them over on the griddle.
Butternut Squash Ravioli in Cider Broth
Potsticker wrappers are a quick substitute for the homemade dough used at the Chelsea Grill.
Blue Cheese Dressing
We use this dressing with our Onion-Crusted Fried Chicken Salad, but it's great, too, as a dip with pieces of fried chicken, vegetables, or best of all, with fried frogs' legs. It's a real thick dressing that gets even thicker when chilled.

Artichokes with Romano, Cracked Pepper and Olive
The olive oil-and-cheese dressing is a nice alternative to drawn butter.
Green Chili and Monterey Jack Quesadillas
A full-bodied Zinfandel would stand up well to the spicy chilies. Or offer frosty glasses of cold Mexican beer.

Potato and Gruyère Croquettes
Great served as a side dish with roast chicken, pork chops or veal chops.
Huevos Rancheros
This simple but highly seasoned breakfast, brunch or supper dish became fashionable during the craze for Tex-Mex food that began in the Southwest and California in the 1940s. Our recipe highlights tortillas that are currently available in a variety of flavors, like sun-dried tomato and jalapeño.
New York Cheesecake
We find that different generations have different ideas about what a typical New York cheesecake is. To us, a New York cheesecake is high, firm, and dense, with a slightly lemony flavor. The Lindy's cheesecake in our January 1991 issue, adapted here for a simpler crust, is all of that. It's also a cake that keeps for up to two weeks and lends itself easily to flavor variations.
Crème Fraîche
This recipe produces a crème fraîche reminiscent of the enchanting varieties found in France. Crème fraîche is wonderful just as it is to adorn a pie or pastry, but it also can be lightly sweetened and whipped while still maintaining its mild tang. Any left over is great for finishing savory sauces because, unlike sour cream, it does not curdle with heat.

Cuban Opera Cake
Melissa Harden of Omaha, Nebraska, writes: "To celebrate our recent engagement, my fiancé and I spent a long weekend at the Mondrian in Los Angeles. Our stay was perfect, as was dinner at the hotel's Asia de Cuba restaurant, where I couldn't get enough of the rich Cuban Opera cake."
A traditional Opera cake is made from very thin layers of cake, coffee buttercream, and coffee mousse — all covered with chocolate glaze. This version, which is perfect for a special occasion, is taller than your average Opera cake, owing to its thicker layers.
Goat Cheese and Sun-Dried Tomato Tartines
Chef Laurent Manrique is a big fan of Laura Chenel goat cheese in Sonoma, which is available at many cheese shops across the country.
