Cabbage with Prosciutto

Typical of hearty vegetable dishes of the Apulian region of Italy is this easy-to-make mixture of cabbage, onion and prosciutto.

Stuffed Turkey

Turkey will take a little longer to cook when it is stuffed and must be perfectly balanced on your spit. It is wise to tie it securely once you have achieved perfect balance with it. The stuffing will take the place of a starch dish and cut down on the preparations for the dinner. Allow 1 cup of stuffing for each pound of turkey.

Family-Style Veal Roast

The roast is cooked along with beef short ribs, ham hocks and sausage for a hearty meal. Offer with polenta, mashed potatoes or the Roasted Root Vegetables with Green Onions . Begin the veal the day before cooking to allow the garlic-herb rub to flavor the meat.

Saffron Rice and Ham Primavera

Steamed asparagus and a baguette are good accompaniments. Drizzle Champagne over raspberries and diced pineapple for dessert.

Deviled Ham on Celery

We wanted to give this savory starter a modern look for the photograph, so we cut away the curved edges of the celery to make flat pieces. If you're short on time, it looks just as nice with the edges left on. You will have about 1/4 cup deviled ham left over — you can make a few more celery hors d'oeuvres or simply put it in the fridge to serve on crackers the next day.

If you can't find one type of the greens for this recipe, you can either increase the other two kinds proportionally or substitute kale and/or chard.

Phyllo-Wrapped Figs with Prosciutto and Stilton

Gail W. Dorsey of Lynnfield, Massachusetts, writes: "Fresh figs were featured in an unusual appetizer at The Gatehouse Restaurant in Providence, Rhode Island. The figs were stuffed with cheese, wrapped in phyllo, and served with two sauces. They would make an impressive starter for a dinner party." This is terrific made with fresh figs when they're in season. But dried ones, which are readily available year-round, work well, too.
