Caramelized Onion, Mushroom, and Roasted Red Pepper Focaccia

Even the thought of making yeast breads can be intimidating, but this recipe is pretty simple and always works. Because of the oil in the dough and all of the toppings, the dough can take a lot of abuse without being a problem. I top the focaccia with whatever we happen to have on hand. It’s also great with sliced tomatoes, garlic, thyme, or mozzarella. This is one of those recipes for which the possibilities truly are endless.

Baked Mac ’N’ Cheese

Ready to think outside the box? While it may take a touch more time than its boxed counterpart, this creamy casserole is exponentially better than anything off the grocery shelves. The light crunch of the panko bread crumbs set against the thick, gooey underbelly of cheese-laden pasta makes for a most decadent taste and texture experience. Feel free to experiment, trading out some of the Cheddar for Gruyère or a smoked Gouda, if you so desire.

Three-Cheese Grits

Grits are a true thing of beauty when properly cooked. Unfortunately, instant grits can never come close. If you’re really pressed for time, wait for a pleasant Sunday morning when you can afford those few extra minutes. Your patience will be rewarded.

Elliot’s Grilled-Vegetable Salad

While I was playing around with salad ideas in my head, my good buddy Elliot happened to email me asking if I’d make him a grilled-vegetable salad with a Sriracha vinaigrette. He’d been gallivanting about our local farmers’ market and forwarded to me a list of produce that had looked appealing that day. We gave it a go not long after, and I hope you do, too.

Sriracha Pesto

While certainly decadent enough on its own as a dip for crusty baguette or chewy ciabatta, this pesto is right at home as a base spread for all sorts of panini. Of course, it’s also a natural tossed in with penne or fusilli pasta (hot or cold), and it makes an excellent marinade or finishing sauce for chicken, salmon, or any delicate whitefish.

Parmesan Muffins

These addictive Parmesan muffins are excellent with eggs for brunch or served as a dinner roll.

Artichoke and Mushroom Pasta

Feel free to experiment with cheeses besides Parmesan. Try mozzarella, feta, or provolone—each makes a completely different meal. Fresh wild mushrooms, such as chanterelle or shiitake, add a complex, earthy flavor, but dried mushrooms work well, too, and may be easier to find. I like to keep dried wild mushrooms in my pantry for spur-of-the-moment dishes. Sometimes I place them in a bowl, cover with boiling water, and let sit for fifteen minutes to soften, then drain and use. Other times I simply chop the dried mushrooms and throw them into the pot for a chewier version that adds another texture to the meal.

Boulder Polenta

Tofu is like a sponge and will absorb whatever flavors you give it if you squeeze it dry first. I often sandwich the block of tofu between several layers of paper towels and then set the Dutch oven on top to press out as much liquid as possible. If you’re not into tofu, substitute eight ounces of ricotta cheese. Using freshly grated nutmeg is always a treat. I keep a few whole nutmegs in a jar and simply run one across a Microplane grater. Save the rest of the nut in a jar so it will be fresh and aromatic the next time you want it. A whole nutmeg can last a year or longer. Try to break a block of frozen spinach into pieces before adding it to the pot, and realize that it will add some liquid as it melts. Let the pot sit for a few minutes with the lid off before serving to allow the polenta to absorb any extra liquid.

Sautéed Ravioli with Cheese and Bread Crumbs

So many kids only want to eat mac and cheese right from the box. We decided to come up with an alternative dish for Jack—one where Mom and Dad are in charge of quality control. Jack always cleans his plate, so we have to be quick if we want to sneak a few pieces for ourselves!

Almost Aunt Peggy’s Roasted Eggplant and Mozzarella Bake

Our Aunt Peggy does a zucchini bake for every get-together, and it is so good that we decided to try cooking eggplant the same way. Since we don’t fry it, this is a healthier, easier take on your standard eggplant Parmesan, and, served over spaghetti with a crisp romaine and tomato salad, it makes a delicious vegetarian meal. (Of course, you can always add grilled chicken breast, if you prefer.)

Savannah Baked Bow Ties and Black-eyed Peas

One of our favorite things about pasta is that you can get creative with your sauce. Bell peppers, black-eyed peas, and Tabasco give this baked pasta a racy Southern taste. Jamie and his family eat so much pasta at their house that we like to joke that if they weren’t from the South, they’d be from southern Italy.

Hearty Bacon and Beef Pasta Casserole

Like Mama’s goulash, this easy, meaty baked spaghetti is based on ground beef. We add olives, Alfredo sauce, and bacon to give it loads of flavor. This is one of those dishes that folks line up for at a church dinner or school fund-raiser. It’s not much more complicated than following the instructions on the back of the Hamburger Helper box—but it’s a whole lot more satisfying. Serve it with a tasty and hearty green salad like our Crisp Romaine and Tomato Salad (page 115).

Quick Spaghetti and Meatballs

When we think of spaghetti and meatballs, we think of someone’s Italian grandma in the kitchen all day. But we love this childhood favorite too much to wait for it, so we just had to make our own, weeknight version. Add Cheesy Garlic Bread (page 102), and you just can’t get a tastier meal in less time.

Grilled Caesar Pork Tenderloin

You can order yourself a grilled chicken Caesar anywhere. But we figured we could jazz up that combo a little while still keeping it fairly healthful if we swapped in tender slices of grilled pork instead. The smoky, juicy pork and crunchy, tangy salad is a uniquely delicious pairing, if we do say so ourselves. We love to serve it with our Grilled Cheesy Olive Bread (page 90), but then again, we love just about anything with that bread!

Creamy Chicken Alfredo Bake

We try to eat a healthy, balanced diet, but you know Paula Deen’s boys have a taste for rich, creamy sauces. One of our favorite foods in a jar is Alfredo sauce, and it’s the perfect base for the world’s fastest chicken and pasta casserole. We throw in peas for a little green color, and add a nice tomato salad to get our veggies in.

Bed and Breakfast Casserole

Bed and breakfast inns are very popular in the areas surrounding Austin, Texas, which is known as the “Hill Country.” Around here, B&Bs are usually historic homes that have been in the innkeepers’ families for years. One of the best aspects of staying at a B&B is breakfast! The innkeeper traditionally gets up early and prepares a lovely morning spread for the guests. The richness of Brie, sausage, and egg reminds us of days well spent relaxing around a perfect breakfast with other guests at our favorite B&Bs.
