Honey-Sriracha Glazed Buffalo Wings
Once you’ve made these for friends or family, plan on making them regularly. Even without a football game on TV, somebody will always have a craving for these and won’t let up until you make them again. Serve alongside celery and carrot sticks with blue cheese or ranch dressing for dipping. If you need even more heat, serve with a side of SriRANCHa dressing (page 20).
Rice Paper Moo-Shu Rolls
One of my favorite ways of getting people to enjoy eating veggies is to wrap them in rice paper rolls. If you’ve ever supped on Vietnamese spring rolls, you’re probably familiar with these delightful translucent silky casings that hug veggies tight as a drum. They can be found in any Asian market or the Asian section of most grocery stores. The trick to working with rice paper is all in the water. In the package they look delicate, like round sheets of frosted glass, but slip them into warm water for about twenty seconds and they become soft and pliable. Put them back on the counter, add the ingredients, and wrap them just as you would a small burrito. It may take two or three tries, but I promise you’ll get the knack (I’ve even taught the technique to kids). The result will be veggie heaven, as the rolls are easy to swallow and digest.
Orange Ginger Roasted Chicken
Roasted chicken is such a staple for many people that I wanted to provide a zippy recipe that would avoid the all-too-frequent pitfall of bland, dry results. Here, I’ve replaced the common rosemary-thyme rub with ginger, orange zest, and cinnamon, which are also appetite stimulants. Rubbing the spices under the skin, filling the cavity with more aromatics and orange juice, and then roasting the whole shebang makes for one moist, tasty bird! Drizzle with Moroccan Pesto (page 186) or add a dollop of Apricot Pear Chutney (page 175).
My Family’s Favorite Chicken
My Grandma Doris was a real piece of work. As they said in the old days, “That lady had class!” Doris was allergic to kitchens, so she used to take my brother Jeff and me out to fine restaurants whenever we visited. She loved one French restaurant in particular, where she would always order chicken paillard with potato puree. It seemed so exotic, so chic, that Jeff and I always ordered the same dish and loved it. It wasn’t until I was in cooking school years later that I learned it was just a fancy name for pounded chicken with mashed potato. You gotta love the French! But it’s still my favorite chicken dish, and it’s great for people who are having trouble eating. That’s because pounding the chicken flat makes it quick to cook and very easy to chew.
Curried Chicken Salad
This salad was inspired by one of those gorgeous, colorful Bollywood flicks that offer a feast of singing, dancing, and romance. I love Indian food, as it was my first real introduction to all things curry. Only much later did I learn that turmeric, a typical spice in curries that gives them a yellow tint, has tremendous antitumor and anti-inflammatory properties. And to think, I loved it just for its taste! Here, I was hankering for a swirl of flavors with an Indian feel. The chicken makes a great starting point because it’s full of protein and amenable to all sorts of accessorizing. In this case, the mango and raisins play delightfully off the curry spices.
Cozy Comfy Chicken and Rice
This has always been my personal comfort dish, a meal I made from leftovers after roasting a chicken on the weekend. One day a friend was in the kitchen when I was making it, and she started asking innocuous questions: “Say, how much of the shallot are you using?” “Was that a half cup of olives?” I was so busy cooking that I didn’t really pay attention to what she was doing with the answers. She figured out the recipe and started making it for friends, who loved it and wanted the recipe too. I guess I wasn’t meant to hold onto this one. That’s okay. It’s really, really good, and I hope you get as much pleasure out of it as I do.
Chicken and Broccoli Stir-Fry with Cashews
There’s something about a chicken and broccoli stir-fry that screams “Chinese take-out! “ But given that this is a healthier and tastier recipe than your standard MSG-fest, let’s call it “Chinese take-in.” The slightly higher fat content in dark meat makes for a flavorful, moist dish, so people with throat or mouth issues may find it a lot easier to chew and swallow. (That said, you can substitute an equivalent amount of breast meat if you like.) The sauce is thickened with kudzu root, a phenomenal anticancer plant, which is a lot more desirable than the cornstarch of questionable quality found in most carry-out fare. Plus, the blend of tamari, lime juice, ginger, and maple syrup in the sauce is so delicious that you’ll be able to take that Chinese restaurant off the speed dial.
Warm Napa Cabbage Slaw
When I was growing up, coleslaw was pretty one-dimensional. It didn’t matter where you went, German deli, Greek diner, it was all pretty much the same: cold cabbage drowned in mayo with a few slivers of carrot for coloring and maybe a few celery seeds. These days, slaw has gotten an extreme makeover, and there are now more versions to choose from. This concoction is both warm and sweet and serves as a great base for salmon, chicken, tofu, or tempeh. Sautéing the onions, red cabbage, and carrots in a little brown rice vinegar, tamari, and ginger makes it easy to eat and mighty flavorful.
Thai It Up Chicken Soup
What’s the first thing you think of when somebody says, “Let’s get Thai food”? Most of my friends have an involuntary response: they start to sweat. Many people think that Thai food is hot, hot, hot. Well, maybe not, not, not. True, some Thai food can set off smoke detectors. But real Thai cooking emphasizes distinctive flavor combinations regardless of the heat. This soup, a takeoff on traditional Thai tom kha gai (a chicken soup), uses coconut milk, which is very soothing to the nerves. The ginger aids digestion, while the lime brightens up the overall flavor. The result is a soup guaranteed to jump-start even the most jaded taste buds.
Lemony Greek Chicken Soup
A little cultural pride is a good thing, and I have to tell you I always thought my people had the market cornered when it came to making chicken soup. I mean, there’s a reason they call it Jewish penicillin, right? Well, in the interest of complete fairness, let me say that the Greeks know a thing or three about chicken soup, as well. Their Mediterranean take is to fold a little lemon and egg into the mixture. And unlike the yiddishe version, which I love but which can be a little fatty, this version is light and bright. Because of the egg, which provides protein, and the Chicken Magic Mineral Broth, this a nutrient-dense bowl of yum. You’ll need to cook the farro in advance, so plan ahead.
Chicken Vegetable Soup with Ginger Meatballs
If ever there was a dish that proved I wasn’t Italian, it’s meatballs. And that’s kind of embarrassing, because not only do I love to make Italian food, I even studied (okay, suffered, but it amounted to the same thing) under an Italian signora on the Isle of Elba. But no matter how hard I tried, I could never figure out how to keep my meatballs from falling apart, until I tried basmati rice. Now my meatballs not only taste great, they also don’t disintegrate on the fork. These are actually mini meatballs, closer to the Latin-American version known as albondiguitas, with the ginger providing a little zing. If timing is an issue, the meatballs can be prepared ahead of time and refrigerated until you’re ready to cook them. Also, this recipe makes twice as many meatballs as you’ll need for the soup. To save the remainder for later, place them in the freezer for 1 hour to firm up, then transfer to an airtight container and refrigerate for up to 5 days or freeze for up to 3 months.
Thai Chicken
Sometimes I like to enhance the Thai flavor of this recipe by adding a few sprigs of mint to the pot. If you can find Thai basil, that would add even more authenticity To make this even spicier, increase the amount of sweet chili sauce by 1/2 teaspoon. Find sweet chili sauce along with fish sauce in the Asian section of the grocery store or at an Asian market.
Savory Port-Mushroom Chicken
Try this recipe with steak or tempeh or even veal. Spoon any residual broth over the chicken before serving and remember to remove the rosemary sprig.
Santa Fe Chicken
I became a green chile addict when I lived in New Mexico. Home in Colorado, I buy them by the freshly roasted bushel in the fall and freeze them in one-quart plastic bags so I can always get that green chile fix when I need it. This is a great meal to make when you don’t have any fresh vegetables in the house. Stock up on the canned or frozen ingredients and you’ll be able to whip up this Southwestern staple in a jiffy. You can use bone-in or boneless, skin-on or skinless, fresh or frozen chicken pieces; they will still take the same amount of time to cook. You can control the amount of spiciness by the type and amount of chile peppers or salsa you decide to use. My personal favorites are Hatch green chiles, but any chile works. Or use your favorite salsa.
Sweet-Tart Chicken
Pomegranate molasses has a taste that is sweet but with a tartness reminiscent of cranberries that is satisfying for the kid in all of us. Great with boneless, skinless thighs, this chicken dish is glazed with flavor. Don’t forget to spoon the sauce at the bottom of the pot over each serving as you won’t want to miss a drop! (See page 139 for a discussion of pomegranate molasses.) Brussels sprouts that touch the side or lid of the pot may get some roasted leaves. If you prefer to avoid this, simply keep them away from the edges of the pot or cover with sauce.
Stuffed Cabbage
My grandmother used to spend all day making her Old World cabbage rolls stuffed with ground beef, onions, rice, and raisins. We all loved them, but I don’t have the time or the patience to do it her way. Feel free to substitute chopped mushrooms in place of the ground meat for a vegetarian version. Hope you enjoy my take on this heirloom recipe!
Scarborough Fair Chicken
Inspired by the classic tune, all this dish is missing is the rosemary; it’s too strong a flavor for this meal. Keeping the sprigs of herbs intact streamlines the preparation. The flavors mingle and infuse the food even though the leaves are still on the stems. Be sure to remove the thyme sprigs before serving; the stems are too woody to eat.
Simply Chicken
With its basic mix of flavors, this recipe is great for kids and other picky eaters. This could easily work as a quick, last-minute dinner of frozen ingredients: a bottom layer of frozen hash browns, then boneless chicken pieces frozen individually, and half a bag of frozen peas and carrots. From the pantry, add dried mushrooms presoaked for about ten minutes in boiling water, then drained. No advance planning needed! For a bit more flavor, drop in a few halved garlic cloves underneath and around the chicken. Consider drizzling about two tablespoons of your favorite Italian vinaigrette over the chicken instead of salt and pepper for a totally different and inviting flavor combination.
Pranzo Italiano
The basic flavors of Italian cooking are olive oil, garlic, oregano, and basil. Add either tomatoes for a hearty ragout, or white wine, parsley, and some lemon for a lighter taste. You can use dried basil and oregano instead of fresh, but you’ll need only 1 teaspoon of each.
Rosemary Chicken
I like to think of this recipe as comfort food without all the pots and pans. In the Western tradition, rosemary has traditionally been a symbol of friendship, love, and remembrance. In Chinese medicine, the evergreen herb is used as a warming remedy. Either way, this meal is guaranteed to bring a sense of warmth and security to all who partake. To prepare acorn squash, cut off the top and bottom ends and cut in half. Then scoop out the seeds and strings with a spoon. Cut into wedges and peel. Or cook with the peel on, as it will easily come off once cooked. The deep orange of this squash boosts your intake of vitamins A and C. If using very large potatoes, cut into one-inch cubes to be sure they cook through. The smaller the cubes, the more thoroughly they will cook.
