Slimming Banana Smoothie
When looking for the perfect banana for a smoothie, you want to choose one that is not green but also not overly ripe (a few brown spots are great, but you don’t want it to be brown). Green bananas are difficult to blend smoothly in the blender and won’t give you the nice sweetness ripe bananas will. But, if they’re overly ripe, the flavor will be overpowering. If you’re a big fan of smoothies, it’s best to buy bananas in bulk when they’re on sale. When they are the perfect ripeness, peel them and store them in resealable freezer bags in the freezer so they’re ready for you whenever the craving strikes.
Chicken Caesar Salad with Sun-Dried Tomatoes
Depending on the flavor and thickness of the brand of dressing you buy, you may want to consider adding a little lemon juice to it before tossing it with the salad. Lemon can really brighten the flavor and/or thin thicker dressings (thus requiring less dressing). Be careful, though—some brands are already pretty acidic, so adding lemon juice may make the dressing sour. Buy prewashed lettuces to save time.
Lemon Poppy Seed Pancakes
If eaten plain, these pancakes are a tad on the dry side, which is why I love to layer them with yogurt. The tartness of the lemon, paired with the creaminess of the yogurt and sweetness of the powdered sugar, transforms ordinary pancakes into a decadent, dessertlike breakfast. Store the batter in a resealable plastic container in your fridge to have on hand. Note, however, that when the batter sits in the fridge, it will thicken slightly, so use a scant 1/4 cup batter per pancake to get 6 pancakes. Another time-saving option is to freeze the cooked pancakes. To reheat frozen pancakes, microwave them in a single layer on high for 30 seconds to 1 minute, or until warmed through. Alternatively, place the pancakes on a nonstick baking sheet in a single layer. Cover the pan with foil and place in a 350°F oven for about 5 minutes, or until warmed through.
Mini Frittatas with Herbed Goat Cheese
These frittatas are ridiculously easy, especially if you consider how elegant they look. I’ve served them numerous times to last-minute brunch guests . . . and on those mornings where I just needed a hot, high-protein breakfast without any fuss. Do note it’s important to let the frittatas rest a couple of minutes before serving. You need to give the egg a chance to set a bit before eating. Also, when crumbling goat cheese, it’s best that it’s cold (it’s not a bad idea to freeze it slightly). When goat cheese is room temperature or only slightly chilled, it’s softer and thus tends not to crumble well. Also, 16 large egg whites or 2 cups 100% liquid egg whites can be swapped in for the egg substitute if preferred. Add 2 large egg whites or 1/4 cup 100% liquid egg whites to each cup of the muffin tin, and then follow the instructions below.
Bacon & Egg Breakfast Quesadilla
Instead of slaving over a stove in the morning, buy packaged 50% reduced-fat bacon pieces. You’ll save tons of time, and you’ll be less likely to overindulge because you won’t have the smell of bacon wafting through the house for hours. Look for the bacon pieces near the croutons and other salad ingredients in your favorite grocery store. Or, if you love them as much as I do, head to Costco and buy them in a big bag. They keep fresh in the refrigerator for a long time.
Lazy Sunday Mimosa
What can I say, girlfriends? It is not uncommon for my husband to serve me mimosas, along with breakfast in bed, on a Sunday morning. You think he’s looking for something in return? I figure we work hard all week and he’s just treating me special. I tell you what, though: Nothing kicks off a lazy, loving Sunday like a sip of bubbles. We make these drinks one at a time, allowing the shifting strawberries to mix the drink as you sip, but you could also combine the ingredients in a large serving pitcher.
Barbecue Bloody Mary
Pat: It’s the last chapter of the book, right? Gina: It is. Pat: Our last chance to use barbecue sauce, right? Gina: Did we use it in the dessert chapter? Pat: I don’t think so. Gina: Well, okay, then. Neely’s Barbecue Sauce and your favorite spicy morning libation are a match made in heaven. Using robust vegetable juice like V8 (in place of tomato juice) helps balance out the flavor of the tangy sauce. To make a Virgin Mary, skip the vodka and add an extra squeeze or two of fresh lemon juice.
Homemade Hash Browns with Smoked Ham
Pat: Don’t even think about servin’ me fried eggs and toast unless they come with a side of crispy, golden hash browns. We make ours with salty browned smoked ham. I’ve been making them this way for years. My girls love ’em, and if my girls love ’em you know they’re good. Sometimes I’ll use a food processor to shred the potatoes coarsely; other times I’ll cube them and fry them up until they are golden brown and crispy. And if I really want to go overboard, sometimes I’ll top each serving with a slice of American cheese.
Cheesy Egg Casserole with Kale and Smoked Ham
Gina: Feeding a crowd for brunch—no problem (and welcome to my life with the Neely boys!). Assemble this casserole the night before you plan to serve it. Sautéed onion, red bell pepper, and kale make this dish beautiful and good for you, too.

Kitchen Sink Omelet
Pat: My kitchen sinker—also known as the omelet with everything—includes bacon, ham, two kinds of cheese, and anything else I find lying around in the fridge. When my girls get involved, I need to change it up a bit by adding vegetables to the mix, so I sauté up a mixture of onion, tomato, pepper, and scallion. But if you ask me, they just get in the way of the meat and cheese, and since I’m always the first one up, I make it my way! With my omelets, there is no flipping or flapping—I just bake them in the oven.
French Toast Panini with Grilled Bananas
Pat: French toast is one of my greatest loves. I like mine made with thick slices of white bread and a rich egg-and-milk batter with a kiss of cinnamon, and topped with lots of maple syrup. I also love to have a couple of over-easy eggs alongside. Gina is always saying to me, “Why you gotta fry eggs? There are eggs in the batter!” Gina: I’m not sure if the French were the ones who made this toast famous, but I’m sure they would love what I’ve done to it: turned it into a sandwich! Everyone knows two pieces of French toast are better than one, and the only thing better than two pieces of French toast is two pieces with something sweet sandwiched in between! How about bananas? Then you take the whole thing and cook it on a panini press. The hot grill makes for an irresistibly crispy version of a morning classic, and it creates grooves that collect plenty of butter and maple syrup. You love peanut butter? Consider making a peanut-butter-banana French-toast sandwich. (Peanut butter was my protein staple during both my pregnancies.) The possibilities, girl, are endless. Bread that is a day or two old works best for this recipe, because it holds up better on the grill.

Gina: A muffin for the chocolate lover in all of us. They’re great for festive brunches and holiday breakfasts, or with a cup for tea for an afternoon pick-me-up. Pat’s been known to sneak them in the middle of the night, too, to eat with his ice cream (he thinks I’m not watchin’, but, girlfriend, you know we are always watchin’ . . .).
