Crepes
Crepes are one of those brunch dishes that always impress people. They are versatile and a snap to whip out. In this section I’ve put together a list of some of my favorite ways with the French pancake. All of the recipes are a slight variation of the Basic Crepe Batter, substituting different types of flour, fillings, and techniques. They are all amazing, and after you master the basic crepe batter, you can create your own different recipes. Tapping your inner chef has never been so easy.
Croissant French Toast with Soft Caramel Apples
I like Granny Smith apples for this particular recipe because of their low water content; they hold up really well when you cook them. Juicy apples, such as McIntosh, are not ideal for this because they fall apart and turn to mush. I developed this recipe at Cafeteria in New York City. The gooey caramel apples are amazing with the croissant French toast. This dish was written up in InStyle magazine.
Soft Scrambled Eggs with Smoked Salmon and Avocado
Soft scrambled eggs put a smile on my face in the morning. They are super easy to make and they require very little forethought. I first tasted “real” scrambled eggs while traveling through Paris as a starving college student. Café et des oeufs was just about all I could afford for breakfast. It was simple, but it was magic.
Blueberry Scones with Lemon Glaze
These are scones, not stones, the hard, crumbly things you may be used to. Avoid using frozen blueberries because the color bleeds too much into the dough and spoils the look of the scone. This is a side note to all the guys out there. If you bring your woman warm blueberry scones for breakfast in bed, you’ll thank me later.

Being a kid from South Carolina, I always had fresh biscuits growing up. This recipe is as close to my grandmother’s as I could get without having a spiritual adviser. They’re big, fat, and light as a cloud, just like I remember them. The peach and rosemary spoon fruit adds a little contemporary twist.

Coconut Bread with Sweet Pineapple Butter
If you’re ever in Sydney, Australia, there is a breakfast place in Darlinghurst called bills. The name is simple, and the place serves simply some of the best food I’ve ever had. When you order coffee, the waiter brings out small plates of warm toasted coconut bread freshly dusted with powered sugar. After one bite, my girlfriend and I decided to go back for breakfast every morning for the rest of our trip. This bread really holds up if you wrap it in plastic or put it in a storage container. You’ll still be snacking on it days later.
Orange Cranberry Bread
Dried cranberries, widely available today, fleck the texture of this bread. If you use fresh berries that were frozen, be sure they are at room temperature because frozen berries affect the baking time. Toast the walnuts while preheating the oven.
Banana Nut Bread
Whenever bananas get a bit too ripe, I bake banana nut bread and keep a few loaves in the freezer. Whole wheat flour enhances the nuttiness of the loaves. Baking time in the convection oven is reduced by 10 to 15 minutes for either size loaf.
Brunch Babies
These are puffy pancakes baked in 8-inch foil pie tins. Serve one per person. Offer toppings at the table. All six pancakes take just a few minutes to bake to crusty perfection at convection bake.
Hazelnut Cinnamon Coffee Cake
A ribbon of cinnamon sugar and nuts runs through this coffee cake. This is irresistible served while still warm.
Blueberry Cream Cheese Coffee Cake
This will impress your guests when you want something extra special to serve for brunch on a summer morning during blueberry season. I sometimes make an extra cake just for backup and keep it well wrapped in a round metal tin in the freezer.
Popovers
Popovers can be baked by themselves at a high temperature, or along with a roast at a lower temperature. Mix the batter up to a day ahead and refrigerate, not only for convenience but also for the highest, lightest popovers.
Buttermilk Biscuits
Biscuits have been an American favorite since the early 1800s. Anything so well known has as many variations as there are enthusiasts. My favorite recipe includes an egg for lightness. As expected, when they’re baked in the convection oven, they bake more quickly at a lower temperature.
Cream Scones with Currants and Orange
There isn’t much difference in baking time between convection and regular ovens when you bake scones, only 5 to 10 minutes. The difference is in the wonderful texture, moist tender crumb, and golden, delicate crust that you can expect from the convection oven.
Caramel-Pecan Sticky Rolls
Baking temperature is reduced when baking these gooey rolls, but the baking time remains about the same as in a conventional oven. The advantage of convection? The rolls are moist and delicious, not doughy.
Basic Sweet Dough for Yeast Coffee Cakes and Rolls
This is an easy refrigerator dough method, which requires no kneading. Once refrigerated for 2 to 24 hours, it is easy to shape and bake a number of different ways. These breads are rich with special ingredients, which will all brown quickly while baking. So, the baking temperature must be lower than that of conventional ovens while the baking time remains about the same. You’ll be delighted with the moist crumb; because the crust is formed early in the baking, it locks in moisture.
Cinnamon-Raisin Bread with Walnuts
Cinnamon perfumes the air as this loaf bakes. This not-too-sweet wheat bread is a perfect match for aged sharp Cheddar. This dense loaf bakes beautifully in the convection oven at a lower temperature than you’d expect.
