Gravlax

The intense orange color, meltingly tender texture, and wonderful flavor of gravlax give it an allure shared by few fish preparations—not bad for a dish whose name means “buried salmon” in Swedish. The curing process intensifies the color, tenderizes the texture, and enhances the flavor. Although most chefs jazz up gravlax with sauces and side dishes, it is brilliant on its own or with just a few drops of lemon or mild vinegar. And the rankest kitchen novice can make it at home. Be sure to check your salmon fillet for pinbones, the long bones that run down the center of the fillet; these are not always removed by routine filleting. Press your finger down the center of the flesh and you will feel them; remove them, one at a time, with needle-nose pliers or similar tool.

Poached Eggs

The perfect poached egg isn’t easy to achieve, and it’s unlikely you’ll produce one on your first try. Patience. If you want to get good at it, sacrifice a dozen or two and practice. Or don’t worry so much; a ragged-looking poached egg tastes just as good as a lovely one. Just don’t overcook.

Hard-Cooked Eggs

Few people hard-cook eggs correctly (and I myself have changed my technique about five times in the last thirty years, though I do think this is it). For one thing, they should not be boiled. For another, they should not be overcooked. Here’s how.

Akoori

Eggs are a significant source of protein in India, and when you eat a lot of eggs you look for ways to vary them. This is a standard preparation and a great one for lunch, a late supper, or for those who like really savory breakfasts. They’re also made as street food, which is how I first had them—prepared at a cart and eaten from a paper plate standing up (and, in a hurry, in the back of a car). In India, these eggs might have cooked lentils (Dal, page 433), black-eyed peas (page 434), or cooked shredded potatoes stirred into them.

Huevos Rancheros

As long as you are not a person who eats only sweets for breakfast, there is nothing more satisfying than huevos rancheros, the original “breakfast burrito.” Since you finish the dish in the oven, you can prepare all but the eggs ahead of time, which makes it a great brunch dish when you have guests; the recipe is easily doubled or even tripled.

Baked Eggs, West Indian Style

Shirred eggs with a spicy sauce make a great brunch dish. Serve with toast or Arroz a la Mexicana (page 517).

Baked Eggs “Flamenco”

I love baked eggs, so I was delighted to come across this elaborate version, served as an appetizer before a Spanish dinner (I like it at brunch). When it was made for me, it contained small amounts of asparagus and peas, but you could use bits of any vegetable you like; leftovers are the best option. Use both meats, either, or neither; this is essentially a dish that was created to combine eggs with whatever else is on hand.

Tortilla

Perhaps the most commonly seen tapa of all, this is a dish I have loved eating (and making) since I first visited Spain more than twenty years ago. Don’t be put off by the large quantity of olive oil; much of it will be poured off (and will have a lovely taste, so you can use it for sautéing; refrigerate in the meantime).

Chilaquiles

A wonderful brunch dish, often served for breakfast in Mexico as a way to use up the previous day’s leftovers. But the combination of crunchy tortillas, spicy tomato sauce, and melted cheese is so irresistible you’ll want to make it just for its own sake. If you do not want to fry the tortillas, you can either bake them until quite crisp—this will take 15 minutes or so—or simply substitute unsalted (or lightly salted) corn tortilla chips.

Omelette aux Fines Herbes

The omelet remains the standby dinner for many accomplished French cooks, and it remains on the menu of many restaurants. Delicious and gorgeous, it’s a bit trickier than a frittata (page 558), but considerably faster, and nonstick pans have made it a lot more reliable. Fresh herbs are a must here; I would say butter is a must also, but I’d rather you made the omelet with olive oil than not at all. Once you learn how to do this, it will become a staple for you, and variations will be second nature. I offer a few to get you started.

Hainanese Chicken Rice

A Chinese dish that is also seen in parts of Southeast Asia. Serve with Ginger-Chile Sauce. Even more than usual, be sure to use a good-quality chicken here; its flavor is what makes the rice special.

Asparagus with Eggs and Parmesan

I’ve had variations of this spring creation in a number of places. In Holland, they use ham; in Italy, they use Parmesan; in Germany, they use both. The key ingredients, however, are good asparagus and fried eggs, and the results are as delicious as they are easy. The combination of melted butter and runny egg yolk mimics Hollandaise sauce, though I think browning the butter yields a more flavorful result. The most difficult decision may be when to serve this. I like it as a light supper, but it’s also great at brunch. Other vegetables you can prepare this way: cauliflower would be equally nice.

Oshinko

Essentially a simplified sauerkraut and a very light pickle. Use good-quality soy sauce and serve this as a side dish with Japanese or other Asian food. Do not try to make this in very hot weather; fifty or sixty degrees is ideal. Other vegetables you can prepare this way: any mixture of vegetables, as in the variation.

Torta di Porri

Somewhat more elegant than its more famous French cousin, which is featured in the variation. Good hot, perhaps even better warm or at room temperature, this is an ideal buffet or picnic preparation. Like the eggplant pie on page 459, this may be prepared without a crust. Other vegetables you can prepare this way: onions of any type.

Sautéed Piquillo Peppers

This is a side dish or an appetizer, but a very quick one, since piquillos (sold in cans or jars) are already cooked. You can use freshly roasted red peppers (page 470) as a substitute, but not canned pimientos, which will fall apart (and, in most cases, are tasteless anyway). Add a few anchovy fillets along with the garlic if you like.

Platanos Maduros

The hardest part of making these beauties is waiting for the plantains to turn black, though if you live in a neighborhood with a Latin market, you can probably buy them that way. Otherwise, buy the ripest (yellowest, with spots of black) plantains you can find and let them sit on your counter until they have turned black with no traces of yellow. To peel, cut off the tips, then cut crosswise into thirds; make a slit in the skin of each piece, then remove the skin. For Plantain and Meat Casserole (page 420), cut the plantains into thirds and then split each piece lengthwise—rather than cutting them crosswise—before sautéing.

Escabeche with Mackerel

Generally speaking, escabeche is a method used for flavoring (and preserving—but we don’t use it for this purpose) fish after it has been cooked. It’s great with dark-fleshed fish like mackerel, tuna, and bluefish, but it also works nicely with cod and even flatfish like flounder. All that changes is the cooking time, and, of course, the flavor. Serve this as part of a buffet with other South American or almost any Western European dishes.

Torta di Patate e Pomodori

A beauty—mild, soothing, and delicious. Be sure to use waxy (“new”) potatoes, which will not fall apart. As with the other tarts in this chapter, this is best warm or at room temperature and may be prepared without any crust at all. If you’re using a crust, the recipe will take less time if you have a premade crust.

Uttapam

If you’re going to the trouble of making dosa—all the soaking, pureeing, and overnight resting—it’s sensible to make the amount called for in the preceding recipe (plus it’s not like 4 cups of rice and 1 cup of dal cost much more than half those amounts). But it’s unlikely you’ll have the griddle stamina or appetite to make it through all that batter. Hence, uttapam—a fancy version of dosa. These are perfect for lunch—I usually fry a couple and eat them with whatever leftovers there are from the dosa meal the night before. And although it might be untraditional, I season them with a pinch of chaat masala (page 594), but feel free to omit it if it doesn’t appeal or you don’t have it on hand. If you’re using a pancake griddle, you should be able to cook two uttapam at a time; or you could have two nonstick griddles going at the same time.
