Cooks' note:

To make 1 cup simple syrup, bring 1 cup sugar and 1/2 cup water to a simmer in a small saucepan, stirring until sugar is dissolved, then simmer 5 minutes. Cool syrup completely. (Leftover simple syrup can be used to sweeten iced tea and lemonade.)
