Five-Flavor Fish

This basic fish dish is so easy to prepare that it’s just about foolproof.

Ingredients

Olive oil spray
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried thyme, crumbled
4 mild fish fillets, such as orange roughy (about 4 ounces each), rinsed and patted dry

Preparation

  1. Step 1

    Preheat the oven to 425°F. Heavily spray a 13 x 9 x 2-inch glass baking dish with olive oil spray.

    Step 2

    In a small bowl, stir together the remaining ingredients except the fish. Sprinkle on both sides of the fish, pressing gently so the mixture adheres. Put the fish in a single layer in the baking dish.

    Step 3

    Bake for 10 to 12 minutes, or until the fish flakes easily when tested with a fork.
