Maple-Roasted Baby Carrots

Preparation

  1. Combine a 16-ounce bag of baby carrots with maple syrup to taste, a little light olive oil, and cinnamon; toss, and roast in a 425°F oven for about 20 minutes, or until tender. Additionally, you can stir some chopped walnuts or pecans into the mix.
