Spinach and Yogurt Dip

Here’s a nourishing dip for whole-grain crackers or pita bread.

Ingredients

1 tablespoon light olive oil
1 small onion, minced
2 to 3 garlic cloves, minced
10 to 12 ounces fresh spinach, well washed, stemmed, and coarsely chopped
1 cup low-fat plain yogurt or soy yogurt
Salt and freshly ground pepper to taste

Preparation

  1. Step 1

    Heat the oil in a large skillet. Add the onion and garlic and sautƩ over low heat until lightly golden.

    Step 2

    Add the spinach, in batches if need be, cover, and cook briefly, just until it wilts. Remove from the heat, and stir in the yogurt. Season with salt and pepper, and serve.
