Tea with Jam
Tea is usually served black in Russia, with preserves. You can add milk or cream if you like. Also completely optional, but not inappropriate, is a bit of vodka, brandy, or rum.
Fruit-Infused Vodka
You might call this pickled fruit, but more people will discard the fruit and drink the vodka than the other way around. You could, of course, eat the one and drink the other.
Spiced Vodka
Contrary to what you might believe, Absolut and Stolichnaya did not invent flavored vodka; it’s been around forever, and you can make your own.
Classic Daiquiri
The real thing, not the frozen kind, an elegant and delicious drink, especially when made with good aged dark rum.
Cuba Libre
The classic rum drink of the fifties. To make a Dark and Stormy, use dark rum and ginger ale.
Margarita
The influx of great-quality tequilas into this country over the last decade has gently nudged my concept of what a margarita should be ever further away from the sweet blender drinks that bars and American Mexican restaurants pass off as “margaritas.” These days a long pour of good tequila, a dash of orange liqueur, and a quarter of a lime over ice is how I make them. The following recipe has a little more padding, but is still a vehicle for the flavor of tequila, so I advise buying the best you can (it should be 100 percent agave). If the salt-rimmed glass doesn’t appeal to you (or a guest), omit the first step.
Mojito
I have had more bad mojitos in the last couple of years—since they became popular—than I had had in my entire life previously. This is the real thing and a fantastic cocktail. There should be enough mint to chew on.
Sangria
The original sangria is this: good red wine, spiced with lemon juice, served with a piece of lemon over ice, with a splash of soda. That sangria has become more complicated, and a cliché of America’s Spanish restaurants, does not detract from its basic appeal; it’s as good a way as exists to spice up insipid red wine. Of course, the better the wine you start with, the better the sangria; decent but inexpensive (red) Zinfandel, wine from the south of France, and Rioja are all good.
White Sangria with Peaches
A great alternative to red wine sangria and perfect for the summertime. This is a good place to use canned peaches.
Pollo con Salsa Verde
There are as many green sauces in the world as there are red ones, and this is one of my favorites. Fresh tomatillos are best for this dish, and those, like pepitas (pumpkin seeds) are increasingly easy to find. Though it’s probably at its best with Arroz a la Mexicana (page 517), you can serve this with almost any rice dish.
Chicken alla Cacciatora
The name refers to “hunter’s style,” whatever that is supposed to mean. I doubt that hunters in Italy, or anywhere else, ever carried all these ingredients, but this is a traditional southern Italian dish. This is a far better version than those popularized in the sixties, which were essentially chicken with canned tomato sauce. This is great with bread, even better with a simple risotto (page 521).
Stir-Fried Chicken with Walnuts
A basic stir-fry and—like every other—one that you can vary however you like. Cashew nuts or peanuts are also great here. Start with Spicy Cold Celery (page 17) and serve this with rice.
Stir-Fried Chicken with Creamed Corn
Hong Kong, where East and West have met and exchanged ideas for a long time, has devised some dishes that to most American palates may seem more bizarre than stewed pigs’ ears. Among them is this recipe, stir-fried chicken with creamed corn. Yes: Canned cream corn, as in Jolly Green Giant or Clarence Birdseye. It’s not fancy, but it’s a good home-cooked dish, quick, easy, and convenient.
Chicken with Citrus Sauce
Here are two versions of this delicious sweet-and-sour dish, which is prepared at roadside stands and restaurants on many Caribbean islands: Pan-cook it in the winter, grill it in the summer. Serve it with Coconut Rice and Beans (page 516).
Avgolemono
Truly one of the great delights of Eastern Mediterranean cooking, always refreshing and comforting. For an easier version, try simplest Egg-Lemon Soup (or the Lithuanian recipe that follows) as a variation. I am tempted to say you must use good homemade stock for this, but I’ll leave it as a recommendation. I had the soup made with tomatoes once—a regional variation—and enjoyed it very much. But the color may not be what you’re expecting.
Nadroo Korma
The first time I ate these—I was in Delhi—I was convinced they were pork rind; that’s how crisp and delicious they are. Frying them is foolproof, and they rank with the great finger foods of the world. Lotus roots are sold at many Asian markets and top-notch supermarkets as well.
Yakitori
Yakitori shops—small places, mostly joints, where you sit at the counter—specialize in chicken, though you can use this sauce and technique for almost anything that can be cut into bite-sized pieces: chicken wings, chicken skin, chicken livers or gizzards, bits of pork, shiitake mushrooms, scallions, even garlic cloves. Sometimes different things are combined on skewers, too, so feel free to go that route. A good hot fire, preferably made with real charcoal (not gas and certainly not briquettes) is requisite. Chicken thighs are often boned before sale; if you can find only bone-in thighs, you will quickly figure out how to remove the meat from them—it’s simple (and the bones make great stock). Do not use breasts in this recipe unless you are a fan of dry meat. As long as you have the grill going, you might make some Roasted Red Peppers (page 470). Or, if you feel like it, Sautéed Peppers with Miso (page 78). Either is a great accompaniment. Shichimi pepper is a spice mixture sold in Japanese markets.
Steamed Chicken Cups
Steamed dishes are not common even in Thailand (most Thai dishes are stewed or stir-fried). But this is a lovely, mild, sweet dish I had at an upscale restaurant in Bangkok; I thought it was an innovation, but it turns out to be quite traditional. You can prepare the mixture ahead of time, cover, and refrigerate the ramekins until you are ready to steam them. Serve it with rice and a salad or vegetable dish. To make ground chicken yourself, cut boneless, skinless breasts or thighs into chunks and put them in a food processor; pulse until ground, being careful not to overprocess. You can use turkey or pork in place of the chicken if you like. Information on Thai fish sauce (nam pla) is on page 500.
Onion and Saffron Chicken
Little more than chicken braised with onions but with a couple of “secret” ingredients. The first is a lot of saffron. Saffron takes a bit of an initial investment (it’s $30 or more an ounce), but it lasts a very long time; I use it regularly, and an ounce lasts me years. (Of course, I usually add it in pinches; this is a more extravagant dish.) The second is preserved lemon. If you can buy this at a Middle Eastern store, you’re in luck. If you can’t, you’ll have to make your own, but it takes weeks, so this recipe requires what you might call advance planning. However, the results are great even without the lemon. Couscous (page 526) is a natural here, as is the Spicy Carrot Salad on page 191.
Poached Eggs
The perfect poached egg isn’t easy to achieve, and it’s unlikely you’ll produce one on your first try. Patience. If you want to get good at it, sacrifice a dozen or two and practice. Or don’t worry so much; a ragged-looking poached egg tastes just as good as a lovely one. Just don’t overcook.
