Easy
Marinated Broccoli Salad
PAT Broccoli, broccoli, broccoli! We love this simple vegetable. Nothing is easier than blanching broccoli, and once this delicious dressing—a little sweet, a little savory, a little sour, and a little spicy—is added, the transportable dish becomes super-duper. As Gina always says, “A great dressing is like a great handbag and shoes. It makes the whole outfit look (taste) perfect.”
Watermelon Cooler
GINA You can’t celebrate the Fourth without watermelon. In Memphis, you’ll see trucks on the side of the road selling the ripest, juiciest, and sweetest watermelons in the country. And if you watch our show, y’all already know I loves me some watermelon. I can eat it every day in the summertime: it is so refreshing—but, more important, it’s a natural sweet, and you know we women are always trying to watch our figures. (I have watched mine walk right out the door and look back at me and say, “Bye, girl!” as it left.) I mention this so you know I do try to keep a lookout for those things that are just plain good for me. . . . So you take my favorite fruit and add in some fresh limeade (summertime in a glass), vodka, and mint simple syrup (OMG), and, baby, you can cross your legs and let ’em swing, because that’s a wrap!
Mama Neely’s Baked Beans
PAT Every Fourth of July, Mama Neely made her famous baked beans: she’d brown ground beef and then doctor that beef with molasses, brown sugar, and plenty of spices. Let me tell you, those beans were good. And so are these. We’ve found that using smoked sausage in place of the ground beef (or pork shoulder, as in our restaurant recipe) adds a smoky depth to the dish. Once you make these beans, there is no going back. If you want to put your own spin on it, you can use kidney beans instead of pork and beans, but I say my mama’s way is best.
Summer Rice Salad
PAT Grilled corn is good enough all by itself. Here we feature it in a light, slightly smoky salad with rice, bell peppers, cherry tomatoes, and kidney beans. It’s an awesome combination, but once you add in the feta cheese, “Girl, you did that!” That’s what Gina’s mom always says. We used white rice, but brown will work just as well and give it an earthy, nutty flavor.
Spicy Grilled Cheese Bread
PAT I refer to this dish as “sophisticated cheese toast.” Gina and I actually got the idea from a famous Memphis restaurant, though in our version we make it with baguettes, because we are going to grill these puppies, and baguettes can withstand the heat. Now, you can use any cheese you like, but on my spicy grilled cheese bread, we must have Parmesan and mozzarella.
Creamsicle Float
PAT Now, y’all know I’m crazy about my ice cream, so sometimes I disregard the set quantities in this recipe and put in ten scoops. Sorry, I just can’t help myself. Gina says I got a real problem. The first step is to admit you have a problem, so here it is. “Hello, my name is Pat, and I’m an ice-cream-holic.” GINA To make this PG drink a little more R-rated, add a shot of orange-flavored liquor (such as Absolut Mandarin) or vanilla-flavored vodka to the juice.
Big Green Salad with Cherry Tomatoes and Buttermilk Dressing
This dressing is so easy and flavorful, with lots of tang as well as creaminess. Dress your greens just before serving, to avoid that limp and soggy salad sadness.
Easy Ice Cream Sandwiches
PAT This is a simple and a delightful treat. Y’all know Gina loves pecans almost as much as she loves pigs. Well, maybe not that much. But butter- pecan ice cream—mmmm. Need I say more?
Classic Picnic Potato Salad
Everybody in the South has their own potato-salad recipe, and our version, using red potatoes and the coarse-ground, zippy Creole mustard, makes this a winner. Be sure to drain your potatoes thoroughly, because additional water will dilute the fantastic ingredients in the salad. It’s best to dress the potatoes while they’re still warm, so they can fully absorb the flavors.
Smoky Grilled Corn with Zesty Lime Butter
There is nothing like grilled corn. Ours calls for butter spiked with lime, which gives it a citrus zing that acts as a perfect complement to smoky grilled corn. Rolling the husk back over the cob after adding the lime butter helps keep the corn from drying out. Some people prefer to soak the corn in a water bath beforehand, but this gives off steam when the corn is cooking inside the husk, and we prefer having the extra-smoky flavor instead.
Neely’s Coleslaw
This is it: the famous sweet and spicy slaw from the restaurant that people come and buy by the bucketful. Make extra; trust us, you’ll need it!
Delightful Asparagus Frittata
Any time you add olive oil, salt, and pepper to asparagus, you’re off to a delicious start. This dish calls for both whole eggs and egg whites, which cuts down on the calories but not on the flavor. Feta is also a low-fat, low-calorie cheese. So no excuses—a slice of this light vegetable delight will be irresistible to any mother.
Homemade Turkey Sausage Patties
Who needs pork? (Did we really just say that?) This herb- and spice-infused turkey sausage is a Mother’s Day masterpiece. Moms won’t have any idea that the patty is all turkey and no pork.
Mustard Slaw
The little zing of this crunchy mustard slaw is just the right thing to round off the kick of cayenne in the catfish and the bite of cheddar in the hush puppies.
Chewy Pecan Bars
When you’ve got your hands full with cleaning, you don’t have time for a full-on dessert stop. But these pecan bars will tempt you and “hit the spot,” in addition to making an incredible snack-pack treat when you’re on the go. Scrumptious brown sugar and chocolate are ooey, gooey, and satisfying, and they’re the perfect reward for a day of hard work.
One-Handed Turkey Burgers
PAT Gina seasons these burgers perfectly. And unless you are standing in the kitchen while she’s preparing them, you’ll never be able to tell whether they’re turkey or ground beef. Once these babies hit the grill and the sizzle starts, your neighbors will be peeking over the fence. Ground turkey, as a rule, has less fat than ground beef, so don’t buy lean ground turkey (also known as ground turkey breast). Instead, buy regular ground turkey, which is a mix of white and dark meat, and makes for a moister burger. We also add the garlic, shallot, cheddar cheese, and Worcestershire sauce to give it some extra juice and flavor. What you’re left with is a healthy little handful (if you can eat just one!).
Roasted Red Potatoes
PAT Gina loves the daintiness of these “baby reds,” and the garlic, rosemary, and olive oil pop on your palate. But Spenser and Shelbi inherited their need for some potatoes with most meals from their daddy. We love us some taters.
Buttered and Spiced Spring Peas
It’s springtime, y’all! So—sauté these peas in butter with onions, and a hit of red-pepper flakes, and your kitchen will fill with the smells of this wonderful season. It’ll put you and your guests in a happy mood and put a spring in everybody’s step.
