Shrimp Cakes with Chili-Lime Cream Sauce
Bonnie Hillard of Washington, DC, writes: "My sister and I stumbled across Sansei Seafood Restaurant & Sushi Bar at the end of a day of shopping at the Kapalua Shops on Maui. We'd read about this popular spot in a guidebook, and we couldn't resist stopping in for dinner. Everything was fabulous, especially the shrimp cakes we shared."
Nuked Nachos
This is the ultimate party dish because you can add it to your spread in no time flat. Almost everything for this mini meal comes out of a bag or a can, but brightening up the dish with some fresh cilantro makes it taste and look really fresh. A few minutes in the microwave makes everything warm and gooey.

Mini Fudgey Chocolate Cakes
If you're looking to end the meal on an intense decadent note, then this is the way to go. These are meant to be served fresh out of the oven so that the inside is still warm and runny. You can put the batter into the little cupcake tins earlier in the day and then refrigerate until you're ready to pop them into the oven toward the end of your meal. While you're waiting for the cakes to finish, clear the table and serve some tea or coffee. And don't worry, baking has never been easier. Just make sure to have all of your ingredients at room temperature before you start.

Sweet-Cherry Clafouti
Chef Michael Presnal of The Federal Restaurant in Agawam, Massachusett, writes: "The recipe here was featured on one of my first menus as a chef, before I got into the kind of complex cooking I do now at The Federal. That was over ten years ago, but I still love making this dish at home. It calls for just a few fresh ingredients and takes only a couple of steps."
A French country dessert that's like pudding and tender cake all in one.

Pasta with Anchovies, Currants, Fennel, and Pine Nuts
Chef Sal Passalacqua of Dimaio Cucina in Berkeley Heights, New Jersey, writes: "My father's family is from Sicily and I spent my teenage years there, so that's where a lot of my culinary influences come from. At first glance, Sicilian cooking seems very simple, but that simplicity depends on using the freshest ingredients and often the combination of sweet and tart flavors. The anchovy pasta is a perfect example."
This dish is a variation on the traditional Sicilian pasta made with sardines. Anchovies have replaced the sardines, but the flavors are still very authentic.

Drunken Noodles
There isn't a drop of alcohol in this dish — the name refers to how much you'll want to drink to combat the heat. We suggest a nice cold beer or sparkling wine.
Roasted Red Pepper with Feta Dip
Crudités and toasted pita triangles are good dippers for this Greek mezede.
