Costoletta di Vitella alla Palermitana

Cutlets or chops of veal are pressed with oregano, garlic, and bread crumbs, then sautéed or grilled and proffered throughout the island as the fish-phobic’s Sicilian supper. One is likely to be presented with a fibrous little cutlet that makes one long to be supping somewhere else. This version, though, inspired by Osteria ai Cascinari in Palermo, begs the rubbing of a good, thick chop with a paste of herbs before giving it a quilt of crumbs mixed with pecorino and sesame seeds and, finally, a brief sauté and a splash of white wine. It makes for a fine dish, especially when accompanied with a bit of pesto di pistacchi e olive (page 193).

Pasta con le Sarde

Harvests from the great, silent fields of sun-bronzed wheat result in more bread than pasta for la tavola siciliana, yet there is a trio of pasta dishes that is cooked throughout the island. One of them dresses pasta in eggplant and tomatoes perfumed with wild mint and basil, the whole dusted with grated, salted ewe’s milk ricotta. Called often pasta alla Norma in celebration of Catanian son Vincenzo Bellini it can be a gorgeous dish. Then there is pasta chi vrocculi arriminati—dialect for a dish that calls for a paste of cauliflower and salt anchovies studded with raisins and pine nuts. Although it is luscious, it cannot compete with the glories of the island’s pasta con le sarde. A dish full of extravagant Arab timbres, it employs fresh, sweet sardines, salt anchovies, wild fennel, and a splash of saffroned tomato. One presents the pasta cool, as though heat would be violence against its sensuousness. Wild fennel grows abundantly on the lower shanks of Sicily’s mountains and, too, along the craggy paths of some of her islands. I used to collect wild fennel along the banks of the Sacramento River and I’ve heard tell of great clumps of its yellow lace heads bobbing along country roads in America’s Northeast. Now I find it a few kilometers from our home in thickets against the pasture fences along the Via Cassia on the road to Rome. Though the scent and the savor of cultivated fennel is sweeter, it behaves well in collaboration with these other elements and yields a still-sumptuous dish.

Cialledd’ alla Contadina

A sort of Lucanian stone soup, this is from Basilicata’s long repertoire of dishes built from almost nothing at all. Once the sustenance of shepherds who could concoct the dish with a handful of wild grasses and the simple stores they carried, too, it was often the family supper of the contadini—the farmers—whose ascetic lives asked that each bit of bread nourish them. I offer it here as balm, a pastoral sort of medicine, one of the thousand historical, wizened prescripts known to soothe and sustain.

Brasato di Funghi con Aglianico del Vùlture

Rionero in Vùlture, a tiny village crouched on the hem of a quiet volcano, is where Basilicata’s worthy red wine is born. Ancient gift of the Greeks were the vines called Aglianico, still flourishing, somehow, stitched up nearly three thousand feet onto the shoulders of the long-sleeping Vùlture, their black-skinned fruit nourished by the volcano’s ashes and the nearness of the sun. The yields of the rich fruit of the Aglianico is each year less, not for the nature of things but for the dearth of a new generation of vine workers. Even now, the production is sadly small. Young, the wine is untamed, full of acid and tannin and potential. After five years, an Aglianico can ripen into a wine sitting on the fringes of nobility. After an all-night rain and the next morning’s mushroom hunt in the forests above Rionero in Vùlture, this dish, with a 1992 Aglianico and a half-loaf of coarse, whole wheat bread taken, warm, from the village forno, made our lunch.

Pasta alla Pecoraio

An inordinately rustic dish, it asks so little of the larder and the cook and gives up good, potent flavor. The Lucani are wont to add another crushed chile to the pasta at table or under a tree, as the case may be.

Pasta in Nero della Consolazione

We had been in Puglia and its environs nearly a month. Sapped from our journeys, our palates debauched into slumber from the opiate of too many chile peppers, our wits palled from nightly Circean cups, we needed redemption from the table. We asked each other what would soothe. Surely we needed to stop driving. Fernando wanted pastina in brodo—tiny pasta cooked in broth. I wanted a small custard pie, warm, soft. I wanted bread and butter. We both wanted to be in a place with not one more three-thousand-year-old olive tree. We wanted sympathy more than we wanted supper. And there we were, lost in Otranto. When finally we asked the same giornalaio, newspaper seller, for directions to our intended destination of Melpignano for the third time and got the third different answer, we thought it a good thing to surrender our search for the unnamed, unsigned place there that had been pressed upon us by our friends in Lecce and simply brake at the next and nearest little place with even the thinnest promise about it. Finding it, we tumbled out of the car, shuffled up the drive and asked if there might be a room for us. The cheery little man took our things, showed us up the stairs, started up the heater for the bathwater and began the reverent story of his wife’s genius in the kitchen. I saw Fernando’s face fading a bit toward citrine. Swooning, I tried so to smile at the even cheerier little man through my narrowing vision. He began his pastoral roundelay with her pigeons braised in red wine and juniper, on to her lamb roasted with potatoes and wild mushrooms, before coming to the rhapsody of her way with goats’ hearts poached in white wine and lemon. Fernando was nearly able to deflect him with an inquiry about the era of his handsome stone house before he began the lip-smacking tale of the pigs’ livers roasted on branches of bay. We closed the door. We took a bath. As we were dressing, the cheery little man knocked gently. They were waiting for us—he, his wife the cook, his son the university student, his brother the hunter, his friend the winemaker. They’d thought, since there were no other guests, we might dine together, make a real celebration of the evening. They had laid a beautiful fire and lit candles upon a narrow, wooden, unclothed table set for seven. They were so sweet, so excited by our presence, for their own clever spontaneity, for the prospect of a long winter’s evening to be passed at table. Fernando rallied and began nibbling at a creamy heft of new pecorino sitting on a crisp white cloth next to our aperitivi. I followed the lady into her kitchen, unraveling our adventures in a nervous sort of monologue. Rather than sympathy, she offered her envy. “Beati voi, tutti questi giorni in giro, sempre a ristoranti.” “Blessed are you, all these days running about, always in restaurants.” I thought to be more direct. “You know,” I said, averting my eyes from the legs of lamb she was basting, “what I would like most this evening is to eat something simple and comforting. I feel like a tired child.” She looked at me for the first time, really looked at me, heard me. She wrapped her great, fleshy arms about me, crushing me to her moist, rosemary-perfumed bosom. She had understood. She marched me back to the table with instructions to sit quietly, sipping at the winemaker’s best red and to wait. After a half an hour’s sashaying to and from the kitchen with the first of the feast’s plates, the lady, her broad olive cheeks blushing up to the corners of her dark eyes, carried in a small, white porcelain bowl with its own cover and set it down before me. I lifted the lid, unloosing the scents of cinnamon and butter and perhaps of chocolate, which curled up through a tangle of pale yellow noodles swathed in a curiously dark sort of sauce. “Ecco la pasta in nero,” she exclaimed. “There it is, pasta in b...

Pasta alle Cozze e Capperi

Mussels unfettered by garlic taste more like their own sweet, turgid selves. On the tiny porch of the seaside bar where we ate this pasta, the cook who was the mussel gatherer who was the bartender who was the pastrymaker added crushed, dried seaweed to the finished dish. He cooked the mussels and the pasta over a fire he’d built of driftwood a few meters from the bar. It was a fairly good-sized blaze, ample enough to heat an old cauldron along with the mussel pot, it bubbling with a potion of wild myrtle berries in which he immersed a great, gray fish net, tinting it, cooking it to a deep, bright blue.

Orecchiette con Rape e Cavolfiore

Orecchiette—little ears—are a pasta made from grano duro, or semolina, and served often with a rough sauce of cima di rape, the bitter leaves of a variety of Italian turnip not always available in America. Do not mistake them for young broccoli, as some do. Should the real thing not be at hand, it is a better business to substitute dandelion or beet or turnip greens or red chard or even to make the sauce only with cauliflower, especially the grassy-green, purply-edged Roman variety.

Maccheroni alla Carrettiere

Though the ancient origins of pasta are likely Egyptian, it was inside the eternal Saturnalia of fifteenth-century Napoli where the simple stuff began its story as an everyday comfort against the hungers of the southern Italian poor. Crafted and cooked and dispatched from painted wagons spirited through the city’s boisterous alleyways— they were exuberant vehicles of rescue enrobed in garlicky vapors, for nearly everyone could sport the price of a portion of il carrettiere’s belly-warming wares, hence thwarting the troll for yet a few more hours. Typically, il carrettiere prepared his long, thick cords of dried pasta by dragging them through a warmed coalescence of olive oil, ravishingly perfumed with garlic, oregano, and peperoncino. Should one have been so flush as to call for cacio, his dose would have been handsomely dusted with the piquant pecorino of Crotone in Calabria. The formula stayed safe through time, its solace radiating north and south, where still some one or another version of pasta all’ aglio, olio, e peperoncino prevails as cure for surfeit now as much as for want, but always, one hopes, with homage to il carrettiere. As rudimentary as this dish is, don’t mistake it for one whose elements might be collected without care. One needs crisp, sharp, juicy garlic and a fine extra-virgin oil. That little bottle in the cupboard with the blue or red top that is older than the Flood and smells only of dust is no longer oregano. And the pure, clean fire that comes from a small, whole dried chile pepper crushed between your thumb and fingers can rarely be had from flakes of them long-ago collected in jars.

Brasato di Fesa di Vitello del Carnacottaro

It was not often,that one was plump enough in the purse to buy a kilo or so of meat from the butcher, carry it home, and cook it up into some luscious, soulful dish. When fortune placed in one’s purse a few centesimi more than were necessary for subsistence, one sought out the carnacottaro (an itinerant seller of cooked meat).

Salsicce di Agnello alla Brace

Another dish often prepared for the panarda (page 50), the sausages are rubbed with olio santo, wrapped in Savoy cabbage leaves, and grilled over wood. Because lamb fat can give up an aggressive, even disagreeable, flavor, overpowering the savor of the lamb itself, pork fat is recommended to keep the sausages full of juices and to support their intricate spicing.

Minestra di Lenticchie e Zafferano di Santo Stefano di Sessanio

II Gran Sasso is the highest peak of the Apennines, surging up from the sea, a beast longer than twenty miles, a great-winged harpy, petrified, iced in flight and leaving only a slender shelf of coastal plain in its wake. And hitched halfway up its magnificence sits the medieval fastness of Santo Stefano di Sessanio. One meets few of its two hundred folk on a Wednesday evening’s sunset walk through its catacombs and labyrinths, peering into the unbarred doors of abandoned houses that spirit up invention and half-light musings. Inside the bar—there is always a bar—a Medici crest embellishing its door, the briscola squad is hard at play. Curious at what could bring us forty-five hundred feet up into the January cold that afternoon, we told them we were looking for lentils. Sometimes I can still hear their laughing. But they found us some lentils, the last of that year’s harvest, they told us, and they convinced us to stay the evening, the night, in a little locanda, an inn, closed for the season but of which one of them was the owner. Of course we stayed and of course we cooked and ate the beautiful black lentils that looked so like a great bowlful of glossy jet beads and of course we drank beautiful wine. And afterward we slept close by the fire. Though it is hardly traditional to adorn this humble soup with cream, when our host offered it with the willowy dollops melting into its warmth, it tasted like a dish as old as the mountains’ secrets. And I would never again eat it any other way. The ennobling of the soup with saffron is common in many dishes of the region but only for these last half a hundred years. Fields of crocus have flourished, though, for centuries in the peculiar micro-climate of the high plains of Navelli and Civitaretenga, since a curious village monk, when sojourning in Spain, folded a fistful of their dried seeds in his handkerchief and tucked them in a prayer book. The monk sowed the seeds first in the monastery gardens, and when the flowers bloomed and he harvested their pistils according to the rites he learned in Spain, he and his brothers planted whole fields of the sweet flowers, desiring to use the saffron as a pharmaceutical and as a colorant for ceremonial vestments. Still, the old monk’s is the only saffron cultivated in Italy.

Scrippelle ’mbusse alla Teramana

The raffinatezza—refinement—of the food of Teramo is legendary. And the Teramani propose that it was, indeed, among them that crepes—called crespelle or scrippelle in dialect—were first fashioned. It was much later, they say, that their delicate, eggy secrets traveled to France via the gastronomic exchange during the epoch of the Bourbons. Often one finds the scrippelle plumped with a stuffing of mushrooms or a truffled paste of some sort, then gratinéed. Sometimes, they are composed into a timballo—a lovely molded cake, its layers spread with savory filling. Though they are luscious and a genuine part of the culinary heritage of the region, these fall too far, for me, from the ingenuousness of la cucina Abruzzese. The following, though, is a version of scrippelle that is more homespun, the one we eat always at a lovely Teramana osteria called Sotto le Stelle, Under the Stars. Our ritual is this. At about eight o’clock, we stop by at the Bar Centrale (the place most intelligently furnished with the splendid labels and vintages of Italian and French wines in all of Italy south of Rome, all of it accomplished with Abruzzese grace and humility by a man called Marcello Perpentuini). There we chat with Marcello and take an aperitivo. A bit before nine, Marcello telephones Antonio, the restaurant’s owner, orders a bottle of wine for us and tells him we’re on our way. We walk the few blocks through the quiet streets of Teramo to the little restaurant. Our wine has been opened, some lush plate of local salame and fresh, sweet pecorino laid on our table with warm breads, and, perhaps best of all, someone back in the kitchen is making our scrippelle.

La Fracchiata

This is a substantial soup classically made from fresh fava beans and a dried sort of bean/pea hybrid called la cicerchia, whose taste and texture are very like that of the fava when it is dried. This version, asking only for the dried favas since la cicerchia is not readily found in America, yields a rich, smoky flavor that is wonderful against the comfort of the warm crunch of the bread.

Pasta ai Pomodori Verdi

The cooling green tint of the sauce, its reserved, sensual sort of piquancy, make this a pasta good for high-summer lunch or supper after insalata di cantalupo (see page 22).

Pasta alla Gricia

From the somber mountain village of Amatrice in the Abruzzo—one of the areas from which have emigrated, to other regions of Italy and throughout the world, many cooks and chefs—was born the famous pasta all’ Amatriciana, prepared faithfully by the pilgrim cooks wherever they go. One evening in Rome, an Abruzzese cook asked if he might offer a different pasta to us, the one most nostalgic for him. What he presented was, indeed, pasta all’ Amatriciana, simply made without tomatoes. In dialect, its name contracts into gricia.

Gnocchi di Castagne con Porcini Trifolati

Twenty kilometers from our home sits the bustling Latian village of Acquapendente. There we find our trustworthy pork butcher, our panificio di famiglia (family bakery), and the only shop between Rome and Florence where Erich can find the music of Astor Piazzola. Hence, Acquapendente is a sort of vortex for us. It is on early Friday mornings when it beckons us most plaintively, the day the market—the mercato—comes to town. It is a good-enough market at any time of the year, but steeled in late January fogs is how we like it best. From our home in San Casciano dei Bagni, higher up by four hundred feet and, in winter, sitting nearly always in crystal air, we descend the narrow, sloping road past the sheepfolds, past the ostrich farm, away from the new, gold sun, fresh from its rise, and into the thick, purply mists of the rough little place. Wrapped in our woolens we stroll the abundant tables of green-black Savoy cabbages and violet broccoli, baskets of potatoes and turnips unwashed of their Latian earth. Here and there are lit small, consoling charcoal fires in funny little tripod burners over which the farmers thaw their ungloved hands. Just outside the fray are the humbler posts, those that beg no rent, that are had for their predawn staking. The farmers, sober in the unpacified cold, unwrap their often meager stuffs—a basket of chestnuts, one of cauliflower, and once, a man, standing beside his little pile of pumpkins, held a brace of pheasant, still dripping their blood on the frozen ground, his booty from a predawn hunt—offering them at far lower prices than those asked by their more prosperous colleagues inside the village. It was there, too, at the Friday mercato in Acquapendente that a woman from Bolsena, who was selling just-ground chestnut flour, sat on the edge of her table and wrote out this most wonderful recipe. The smokiness of the chestnut flour enlarges upon the forest scents of the mushrooms, the whole combining into a sensual sort of rusticity. If chestnut flour is not to be found at your specialty store, substitute whole wheat or buckwheat flour and mix 3 ounces of canned, unsweetened chestnut puree with the mascarpone.

Carciofi alla Romana

These are Rome’s other artichokes. Softened rather than crisped in their oil bath, they are of an extravagant goodness.
