Coleman Farm’s Treviso with Gorgonzola, Walnuts, and Saba

Local farmer Bill Coleman specializes in all sorts of exotic herbs and greens, such as curry leaf, epazote, purslane, and fenugreek. When he can, Bill travels to faraway places to source unusual herbs and spices and little-known fruits and vegetables. He carries home the precious seeds and plants them at his farm near Santa Barbara, providing a wonderful source of inspiration for us lucky local chefs. It’s always exciting to see what he will, literally, unearth next. A few years back, Treviso, a beautiful elongated relative of radicchio from the north of Italy, was his plant of the moment. Bill Coleman’s Treviso practically dared me to come up with a dish that would show off its striking magenta leaves and complex, slightly bitter flavor. I paired the Treviso with pungent Gorgonzola and drizzled both with sweet saba, a syrup made by reducing grape must with sugar. This salad-meets-cheese course is the perfect beginning (or ending) to an autumn meal.

Braised Rice Soubise

This dish was inspired by an old Julia Child recipe that my mom used to make when I was a kid. Lots of stewed onions are bound with a tiny bit of Arborio rice, like a very loose risotto in which the onion, rather than the rice, is the key player. Finished with Gruyère and a touch of cream, it’s great with grilled lamb, rabbit, and even braised beef.

Haricots Verts and Fresh Shell Bean Ragoût

I like to use a variety of shell beans for this dish. Because of their different sizes and shapes, cook each type of bean separately, dividing the other ingredients as necessary. You may need a little more oil if you have many varieties of beans. The starchy liquid from cooking the beans is delicious in the ragoût.

Spaghetti with Heirloom Tomatoes, Basil, and Bottarga Breadcrumbs

This is the dish to make in the middle of the summer when heirloom tomatoes are everywhere. I can think of few more satisfying things to eat. Bottarga, considered the caviar of Sicily, is a delicacy made by drying tuna or mullet roe in the sun until it forms a dense, rust-colored block. Here, it’s shaved and tossed into the pasta, adding a deep oceany essence and salty-savory contrast to the sweet summer tomatoes.

Chilled Red Pepper Soup with Sumac, Basil, and Lemon Yogurt

This refreshing chilled purée wakes up your palate with a jolt of sweet pepper essence, cooling yogurt, and the ubiquitous Middle Eastern spice sumac. Sumac is made from the dried berries of a sumac tree, and in the Middle East it’s sprinkled over everything from kabobs to yogurt to rice. The dark-crimson powder lends an acidic, lemony flavor to this soup.

Marinated Peppers and Eggplant

Part of what makes these marinated peppers and eggplant so delicious is the involved process they go through to get to their seemingly simple final state. In her book, The Zuni Cafe Cookbook, Judy Rodgers suggests that the chef’s eternal quest is to make the simplest process more difficult: “Stop, think, there must be a harder way,” she writes. There are easier ways to make peppers and eggplant, but once you taste this version, it’s hard to go back. If you like, make them the day before and let the vegetables marinate overnight.

Ricotta Gnocchi with Chanterelles, Sweet Corn, and Sage Brown Butter

Gnocchi is one of those dishes that many home cooks shy away from. Whether they’re made of potatoes or cheese, the process seems mysterious—until, of course, you finally take the plunge and make a batch yourself at home. These ricotta gnocchi are quick and easy and the perfect launch into your gnocchi-making career. Once you get the hang of rolling them off the tines of the fork, there’s nothing to it. And when you’ve become the accomplished gnocchi-maker you never thought you’d be, you’ll find all sorts of ways to serve them. Try them with a fresh tomato sauce, or simply toss them in this sage brown butter.

Grilled Halibut à la Niçoise with Haricots Verts, Olives, Cherry Tomatoes, and Anchovy Butter

This warm salad is pure southern France: tomatoes, olives, anchovies, basil, green beans, and soft-cooked eggs. It’s easy to make, but it helps to do some of the steps beforehand. As long as your spinach is cleaned and your haricots verts, potatoes, and eggs are cooked, you won’t have to do much until the last minute, when you’re pulling it all together. While your potatoes are roasting in the oven, light the grill, have a glass of rosé, and look calm, cool, and collected as you wait to finish the last-minute tasks. Recruit an unsuspecting guest or your significant other to grill the halibut while you brown the anchovy butter and finish the warm salad.

Bucatini and Clams with Fennel, White Wine, and Thyme Breadcrumbs

My very first chef position was at a twenty-eight-seat restaurant called Alloro, located in Boston’s very Italian North End. At that point in my career, my cooking experience was rooted mostly in French cuisine, but the owner didn’t seem to mind. When I asked him if I had to cook strictly Italian food, his answer was, “No, no, no! Cook whatever you want. We’ll just give it an Italian name.” The French bistro classic salmon with beluga lentils and red wine butter was abbreviated to “Salmone” on the menu, and other quasi-French dishes were likewise masked under short Italian names. The pasta dishes I made at Alloro also strayed from Italian tradition. For my version of the classic spaghetti alle vongole, I added generous amounts of onion, fennel, and olive oil, and sprinkled breadcrumbs toasted with thyme on top. I also finished the sauce with a spot of butter (the French influence again), which thickened and enriched it. In theory, I’m sure my version of spaghetti with clams would outrage purists in both the Italian and the French camps, but one bite ought to be enough to convince them they have lots to learn from each other. Though you might not think of it as such, the water in which you cook pasta is a valuable ingredient, in virtually any pasta recipe. Do your noodles seem a little dry once you’ve tossed them in the sauce? Rather than correcting the problem with stock (which can alter the flavor balance) or oil (which can add greasiness), add a little pasta water instead. Not only will it moisten the dish, but the starch in it (left from the cooking of the pasta) will also help bind the sauce to the noodles. Try it out; it works.

First-of-the-Season Succotash Salad

There’s a moment in late May when something in the air shifts. Fava beans and other spring treats are still plentiful and the evenings are still cool, but change is coming. The air at the farmers’ market is suddenly humid with the scent of basil. Small piles of cherry tomatoes, summer squash, and fresh beans show up on the folding tables beside mounds of fresh corn. It’s as if summer is testing the waters, seeing if we’re ready, because it can hardly hold back any longer. Before changing my spring menu to summer, I sample a few beans, checking for crunch. I peel back a cornhusk, bite into the cob—is the corn sweet yet? And finally, I pop a cherry tomato in my mouth to gauge its sugar. If they all pass the test, it’s time to make this First-of-the-Season Succotash Salad, dressed with a simple lemon vinaigrette. After waiting all year, what a joy it is to taste all these sunny flavors on one plate.

Open-Faced Crab Sandwich

One weekend in Waccabuc, I was looking for something to snack on. I smeared some garlic aïoli on grilled slices of bread and topped it with some crab. It hit the spot, so I decided to turn it into a complete sandwich with a little chile and herbs. This is a great use of fennel fronds, which usually end up in the trash. Dill works just as well, too.

Portobello Parmesan Sandwich with Rosemary Mayonnaise

This will delight vegetarians—and carnivores, too. The warm, meaty mushrooms are so satisfying, especially when topped with pickled chiles, arugula, and Parmesan shavings. Fragrant fresh rosemary, which too often overpowers, adds a subtle depth of flavor to homemade mayonnaise, which is key here.

Quinoa with Spinach, Goat Cheese, and Sautéed Shiitakes

My wife, Marja, counts this simple dish as one of her favorites. The meaty mushrooms are great with the nutty grains and creamy cheese.

Gruyère and Tomato Salad

This is something I grew up with, a dish my grandmother and mom always served family-style. For me, this combination—a fluffy, snowy mountain of shaved Gruyère with sliced sweet-tart tomato—is home. In Alsace, we sometimes mixed wine vinegar with honey and spices for the dressing, but sherry vinegar has a similar nuanced sweetness that works very well here.

Lemony Shaved Summer Squash and Pecorino on Arugula

I’m always looking for inspiration when I shop at farmer’s markets. The heirloom varieties of summer squash, like Goldbar, Paddle, and 8-Ball, are among my new favorites. To highlight their subtle flavor, I splash them with a simple lemon dressing, then surround them with sharp cheese and peppery greens.

Butter Lettuce, Radish, and Avocado Salad with Mustard Dressing

When I compose a salad, I like to pair buttery flavors with bright ones. Here, creamy avocado is offset by the mustard vinaigrette and peppery radishes. I especially like making this in early spring, when the first radishes appear at the market.
