Pea and Bacon Pirlou
A Charleston classic, pirlou (aka purloo or pilau) is an everything-but-the-kitchen-sink rice pilaf that is the lowcountry contribution to the family of rice dishes, including jambalaya and gumbo, hailing from the rice-growing regions of the Southeast. Pirlous usually feature seafood of some kind—as you might expect, given their watery origins—but I like the way this simplified version showcases the grassy flavor of fresh field peas.
Streak o’ Green Dirty Rice
Dirty rice is a Cajun specialty so named for the brownish hue imparted by the chicken livers or giblets that also provide its rich mineral flavor. Today, we mostly think of dirty rice as a side, but because it is a cheap source of protein and calories it would have been served as a main dish in leaner times. This version—streaked with a bright green scattering of fresh herbs—is my take on Paul Prudhomme’s classic recipe.
Creamed Vegetable Rice
Thick and saucy, this country ham and summer vegetable–strewn rice dish is my Southern version of risotto. Like risotto, it gets its full-bodied, creamy texture from the starch released by the rice as it cooks.
Roasted Tomato Grits with Country Ham and Cracklings
This is my go-to grits dish, the first one I think to make and the one to which I keep returning over the years. I love how the roasted tomatoes, flavored by the country ham, form a rich, saucy sort of gravy for the creamy cheese grits. Cracklings add big flavor. If they aren’t available, substitute crispy pieces of thick-cut bacon.
Creamy Grits with Roasted Butternut Squash and Blue Cheese
Oven-caramelized squash and tangy blue cheese make this creamy side hearty enough to double as a vegetarian entrée. It makes an excellent weeknight supper crumbled with crispy bacon or prosciutto and served with a simple green salad and a glass of crisp, sweet Sauternes or creamy Chardonnay.
Cheesy Grits Casserole
Over the years, my love of stone-ground yellow grits has turned me into a certified grits snob. And, like most Southerners with a grits chip on my shoulder, I tend to blame flavorless “quick grits”—the finely milled, prepackaged variety that has been pre-steamed to be partially cooked—for unfairly maligning this Southern delicacy’s reputation. So imagine my surprise when I discovered, thanks to an ingenious Craig Claiborne recipe, that this puffy, soufflé-like casserole is actually much better made with quick grits. There’s just no denying texture that light and airy. You can, of course, use stone-ground grits; the casserole will be a littler grainier but equally flavorful.
Foster Family’s Pot Roast with Herb-Roasted Vegetables
I grew up on this everyday pot roast, which each member of my family makes with his or her own special twist. My mom swears simple is best, with nothing more than meat and vegetables to flavor the dish. I, on the other hand, add wine, broth, and herbs to maximize the flavor of the meat, and I roast most of the vegetables separately so they get nice and caramelized on the outside and soft and sweet in the center.
Pickled Jalapeño Meatloaf
Meatloaf, like chili, is something I make when I have a dozen or so little jars of something-or-other in the fridge that need to be used up. That’s how I came up with pickled jalapeño, which adds a nice kick to this otherwise traditional meatloaf. In this version, a little pork adds extra flavor to the mix. It makes for a delicious and hearty meal, but it’s great for leftovers, too, which can be used to make sandwiches that are as scrumptious as they are out of the ordinary. Peter loves open-face meatloaf sandwiches topped with a fried egg.
Friday Night Steak Sandwiches
My dad was the unusual male who didn’t like to grill—he was a cast-iron fryer—so I became the family griller as soon as I was old enough; except for the three or four times a year when Peter makes burgers, I still am. This buttery, tangy, grilled steak sandwich—a favorite of my mother’s—is supereasy, and it was one of my first specialties.
Pimiento Cheese Burgers
As a kid, one of the things I looked forward to each fall was the arrival of the West Tennessee State Fair, which was held in Madison, my home county. Like all fairs, this one was chock-full of good, greasy things to eat, but I happily skipped past the corn dogs, turkey legs, and pulled pig in favor of the juicy griddle-fried hamburgers that flew like hotcakes from a booth lined with long, low benches. I top my version with tangy, creamy Pimiento Cheese for extra Southern flavor. If you don’t have a griddle, a cast-iron skillet will work just fine.
Pat’s Skillet-Seared Steak with Herb Butter
Forget the grill; Southerners have been pan-searing steak in cast-iron skillets since what seems like the beginning of time. That’s true enough in my family, where “let’s fix a steak” translates directly to “put the skillet on.” According to my brother-in-law, Pat, the best way to eat said pan-seared steak is hot out of the skillet with a fat knob of butter melting away on top. He’s right, of course, and this dish—embellished with a profusion of fresh green herbs—is for him.
Crispy Pork Chops
For an easy weeknight indulgence that is as crispy, crunchy, and succulent as fried chicken, make these skillet-sautéed pork chops. The key here is to pound the pork chops until they are very thin—sort of like German schnitzel—or buy them thinly sliced. (They can usually be found in the prepackaged section of your grocery’s meat department; in the South, they are labeled “breakfast chops.”)
Chicken-Fried Quail with Creamy Thyme Gravy
This crispy fried quail is for anyone whose favorite part of fried chicken is the crust. Because quail are so small, you get a satisfyingly high crust-to-meat ratio—but the meat itself is flavorful enough to stand up to all that crust. I drape my version in a veil of creamy, herb-flecked pan gravy.
Chicken Country Captain
This exotically spiced curry of chicken, tomatoes, peppers, dried fruit, and nuts is proof of Southern food’s cosmopolitan roots. Served with steamed rice, slivered almonds, and fresh parsley, it is wonderfully bone-warming and fragrant.
Braised Chicken with Country Ham and Turnips with Their Greens
The two-step cooking process here yields perfectly moist and flavorful results: First, you put a nice sear on the chicken in a skillet. Next, you finish it off in the oven, slow-cooking it in a wonderful pot likker of seasonal vegetables and country ham. That’s it. Once you get the hang of this basic method, you can use it to make endless variations.
Crispy Chicken Cutlets with a Heap of Spring Salad
This dish contains all the flavor and crunch you expect from fried chicken, but with all the health benefits of using boneless, skinless chicken breast. Plus, you get bonus points for scattering the cutlets over a tender arugula salad bursting with fresh herbs and drizzled with tarragon-infused Buttermilk Green Goddess Dressing.
Granny Foster’s Sunday Fried Chicken
Granny Foster made the best fried chicken in the world—salty and golden brown with a crackly crust that gave way to meat as moist and tender as could be. The secret is the overnight brine of water, salt, and spices that drives extra moisture and flavor into the meat, where they are locked in during the cooking process.
Shrimp and Crawfish Étouffée
Étouffée is a traditional New Orleans one-pot dish whose name literally—and appropriately—comes from the French word for “smothered.” Like gumbo, étouffée is a highly seasoned stew of fish or meat and vegetables that is served over steamed rice. Also like gumbo, it has a big-hearted, homey quality that makes it one of my favorite dishes to serve to crowds (especially when they include friends who aren’t from the South). Although serious purists might disapprove, I never make étouffée the same way twice, and I don’t take sides when it comes to never-ending debates about the proper shade of roux or whether there’s room for tomatoes in a bona fide étouffée. For me, one of the joys of Cajun and Creole stews is their variability, so feel free to experiment.
Soft-Shell Crabs with Salty Tomato Butter
Soft-shell crab season, which generally lasts from May through June, is short and highly anticipated. That’s because soft-shell crabmeat is unbelievably tender and buttery-sweet, and the shell, which you eat along with the meat, is perfectly crunchy without being the least bit tough or chewy. True fanatics don’t let a moment of soft-shell crab season go to waste, eating them for breakfast, lunch, or dinner, in sandwiches or served solo. Ask your fishmonger to clean them for you.
Salmon Croquettes
I grew up on these tasty little fried cakes, which Granny Foster used to serve for breakfast with fried eggs and biscuits, or sometimes for supper along with mashed potatoes and coleslaw. Like most Southerners, Granny used canned salmon in her croquettes. I opt instead for freshly poached or grilled salmon, a move that allows the delicate, grassy flavor of the fish to come through. Crispy and satisfying (the name croquette comes from the French for “to crunch”), these easy treats are an excellent way to revitalize leftovers from last night’s salmon dinner, ensuring that the switch from canned to fresh fish does not necessarily sacrifice convenience.
