A wonderfully versatile salad that can be served with almost any main course. The vinaigrette is zesty and fresh, yet it's mild enough to work well with a variety of flavors.
Chard and Cheddar Omelet
This southern-style omelet would go nicely with sautéed plum tomatoes and warm corn bread. Dessert can be butter pecan ice cream drizzled with bourbon.
Monkfish Saganaki
A taverna standard, saganaki (fried cheese slices) is named for the two-handled pan it's cooked in. Here, the cheese is melted to make a sauce for fish. Chef Costas Spiliades uses a medium-textured feta, such as Mt. Vikos or Dodoni brands, for this dish. He also uses a Greek Chardonnay, Katsaros, which is sold at some U.S. wine shops.

Minted Spring Vegetables
Because this dish was developed to complement the strong flavors of Pork Loin with Morel Stuffing, we kept the seasoning in these vegetables to a minimum. If you plan to serve this dish with simpler fare, you might want to increase the amount of garlic and herbs.

Swordfish with Lime-Ginger Glaze
Serve the fish with steamed rice and braised bok choy or Napa cabbage for an elegant and easy Asian-inspired dinner. Begin marinating the fish at least three hours before you plan to cook it.

Swordfish with Salmoriglio Sauce
The Strait of Messina is a rich source for swordfish, which the Sicilians prepare in many ways. Here it is at its simplest: grilled and served with salmoriglio sauce. (In Sicilian, it is sammurigghiu sauce.) The words means "brine", a translation that does not convey the taste or texture of this cooked blend of olive oil, lemon juice, garlic and herbs. Serve with bread and pour a white wine, preferably Sicilian. For dessert, offer cannoli from the bakery.
