This fairly classic recipe for Key lime pie comes from Pepe's Cafe in Key West, Florida, and is a favorite of lime pie aficionado and author David L. Sloan. The addition of whipped egg whites, says Sloan, makes for a filling that's fluffier than those in more traditional versions.

The Ultimate Key Lime Pie
This unusual pie was inspired by a version made by Fern Butters, who ran a small boardinghouse and dining room in the Florida Keys. According to David L. Sloan, a Key lime pie expert, President Truman used to travel to Key West just to enjoy Mrs. Butters' pie. The recipe contains vanilla ice cream, and is baked and then frozen. The end result is a pie with a soft and delicate filling reminiscent of Italian semifreddo. Most graham cracker pie shells are baked briefly before they're filled, but because this pie is frozen after it's baked, we recommend skipping the usual pre-bake for a tender, easily cuttable crust.

Parmesan Popovers
Irresistible is the only word for these light and airy popovers. Add them to the bread basket with dinner or lunch and see how quickly they disappear.
Granola
Chock-full of grains, nuts, seeds, fruits, and natural sweeteners, granola is easy to prepare, and, when it’s homemade, it’s much lower in sugar and fat than store-bought varieties. This basic recipe can be easily adapted to create many different versions, including the three variations that follow. You can omit the nuts or the dried fruit, as desired. For a vegan option, simply omit the egg whites; the granola won’t be as crunchy but will still be delicious. Freeze granola in an airtight container for up to three months (it thaws quickly), or store at room temperature for up to two weeks.
Quinoa, Apricot, and Nut Clusters
In this version of a granola bar, clusters of quinoa, apricots, pistachios, and sunflower seeds make a sweet and delightfully chewy snack. White quinoa is used in this recipe, but you can substitute any variety; all share the same nutritional qualities, flavor, and texture.
Double Dark Chocolate and Ginger Biscotti
Dark chocolate, walnuts, and crystallized ginger combine in these incomparably good biscotti. Chocolate with at least 70 percent cocoa helps keep them rich but not too sweet.
Spicy Croutons
Any combination of fennel, dill, caraway, or celery seed works well here; their flavors complement the paprika on the croutons as well as the dill and tomato in the soup.
Orange-Walnut Olive Oil Cake with Sweet Yogurt
Olive oil cakes are popular in Italy, where they are typically made with orange-flavored liqueurs. This version replaces the alcohol with orange juice (and zest), and calls for brown sugar instead of the more refined granulated variety. Use extra-virgin olive oil if you prefer a more pronounced fruitiness. This cake was made with an 8-by-2-inch round “professional” pan; the batter can also be baked in a standard 9-by-1 1/2-inch cake pan.
Oat Bran–Applesauce Mini Muffifins
Loaded with soluble fiber, the old-fashioned oats in these muffins help reduce cholesterol and regulate blood sugar. Dates and applesauce—both full of fiber, vitamins, and natural sugars—create a complex caramel flavor when combined with the honey.
Individual Sweet Potato and Apple Soufflés
The flavor and texture of these miniature spiced soufflés are reminiscent of sweet potato pie, but with far fewer calories and much less fat.
Banana Bread with Walnuts and Flaxseed
Banana breads tend to be high in fat and sugar, but this wholesome loaf relies primarily on bananas to keep the bread moist and flavorful. Walnuts and a generous amount of ground flaxseed add texture and plenty of nutrients; substitute toasted pecans for the walnuts if you like, or omit the nuts altogether.
Crème Brûlée
The allure of crème brûlée, French for “burnt cream,” lies in its apparent contradiction: a topping of sugar, singed to golden brown, crackles over a cool, creamy-smooth custard. To achieve that silky consistency in baked custards, it’s critical that the oven temperature be regulated (to be both even and gentle). This is why the custard molds are set in a bain-marie, or hot-water bath, made by pouring water around molds into a roasting pan, which insulates the custard from hot spots in the oven. Another precautionary measure is to eliminate any excess bubbles in the custard after it is poured into the ramekins (just before baking). These bubbles will rise as the custard bakes, causing holes to form in the top. To get rid of them, pass the flame of a kitchen torch briefly over the liquid in the ramekins. Don’t worry if some remain, since the tops will be caramelized, hiding any imperfections.
Chocolate-Rum Swiss Roll
Basically a chocolate génoise rolled around rum-flavored whipped cream, this is another supremely simple dessert that always manages to please. It’s a not-too-rich ending for any celebratory meal.
Jelly Roll
For this nostalgic dessert, a génoise cake is baked and spread with raspberry jam and a thick layer of whipped cream before being rolled into a log. If you’ve never made a rolled cake before, you are in for a surprise: the génoise sheet cake will readily roll up without the slightest resistance (and any slight rips or tears will be concealed with a generous dusting of confectioners’ sugar). It’s so simple to prepare and so utterly delicious to eat, it’s a wonder it ever went out of style. Make it once or twice and you might be inspired to bring it back into fashion.
