Basic Brioche

This is my basic brioche recipe, soft, light, and intensely buttery. For those who desire even more butter, it can be increased to 6 ounces, which will also make the crumb finer, denser, and more cake-like. This is actually a very easy dough to make, especially in a bread machine, which handles this small amount of dough perfectly. TIME SCHEDULE
Dough Starter (Sponge): minimum 1 1/2 hours, maximum 24 hours
Minimum Rising Time: 10 hours
Oven Temperature: 425°F (350°F for the loaf)
Baking Time: 10 to 15 minutes for small brioche, 35 to 40 minutes for the loaf

Cocoa Nib, Chocolate, and Citrus Dacquoise

A dacquoise is a French dessert made by layering nut-flavored meringues with whipped cream. In this version, cocoa nib meringues are layered with chocolate chiffon cake, mascarpone whipped cream, and blood orange marmalade, then covered in a rich chocolate glaze.

Smoked-Tea-Infused Chocolate Pots de Crème

Lapsang souchong, the variety of tea called for in this recipe, is made by smoking tea leaves over a cypress or pine wood fire. Steeping the tea in the milk mixture gives the dessert a subtle smokiness. Find Lapsang souchong at tea shops, specialty foods stores, and online at englishteastore.com. If you don't care for the taste of smoked tea, use Earl Grey instead.

Almond Cakes with Chocolate Passion-Fruit Sauce

To neatly and evenly transfer the cake batter to the ramekins, Fleming likes to use an ice cream scoop, but if you don't have one, the batter can just as easily be poured.

50% Whole Wheat Sandwich Bread

This is a whole-wheat version of basic white sandwich bread. It's a little less soft but a lot more wheat-y and substantial. The use of bread flour gives this bread a lighter texture, while the milk powder and oil help soften it. TIME SCHEDULE:

Minimum rising time (including starter): about 4 hours
Oven temperature: 450°F, then 400°F
Baking time: 40 to 50 minutes

Roquefort and Pear Strudel

In this satisfying first course, the sweet-savory filling is wrapped up in a delicious homemade strudel dough. Keep in mind that the dough needs to chill overnight, so start this recipe one day ahead. Serve slices of the strudel alongside the watercress salad .

Basic Sourdough Bread

Editor's note: To make your own sourdough starter, follow Beranbaum's instructions. This bread is as homespun as bread can get, using a stiff sourdough starter cultivated from wild yeast. It has a characteristic sourdough profile: tangy, complex flavor; thin, crisp crust; and springy moist crumb with uneven holes of moderate size. I love this small loaf because of the size of the whole slices when cut. Also, for those who may have just one banneton (dough-rising basket), I wanted to provide a recipe for just one loaf. A loaf of this size is ideal for two people for three days, with a few slices to share with anyone who comes by to visit. If your family is larger, you will want to double the recipe. Sharing the sourdough starter for bread is a time-honored tradition around the world. I got my first starter from Kurtis Baguley, a baker in San Francisco. And when my friend Angelica Pulvirenti asked me for a bread recipe to use on her boyfriend's boat, one that was easy and had good keeping qualities (so it wouldn't mold from the humidity), I gave her this recipe and some of my starter to make it. She was especially delighted because sharing a bread starter was a long-standing custom in a small village near Ragusa, Sicily, where she grew up. She said that her mother, at the end of baking day, always passed some of her unbaked bread dough to her friends. She loved the sense of community this imparted and is thrilled that she and I are continuing it. TIME SCHEDULE Stiff Sourdough Starter: minimum 13 hours, maximum 34 hours

Bittersweet Chocolate and Carob Ganache Tart with Malted Candy Brittle

Pizza Margherita

The secret to a great pizza Margherita is to use the best ingredients you can find—and to approach them with restraint. (Just because a little cheese is good doesn't mean a lot will be better!) We always start with our all-time favorite pizza dough, adapted from chef Chris Bianco, of Pizzeria Bianco, in Phoenix. This slightly wet dough, in conjunction with a hot pizza stone, produces a crisp yet chewy crust, the perfect canvas for bright homemade tomato sauce, fresh mozzarella, and verdant basil leaves.

Ricotta Cheesecake

The difference between fresh and commercially prepared ricotta is proven dramatically with this cheesecake. Made with the commercial product, it tastes bland and somewhat grainy. When prepared with fresh ricotta, however, the cake dissolves creamily on the tongue and the ricotta's delicate sweetness shines through clean and true. To further emphasize the ricotta, we keep the other flavors to a minimum—just a smidgen of cinnamon, lemon zest, and vanilla is all you need.

Panettone Bread Pudding

Store-bought panettone is the foundation of this raisin and bread pudding. Because the bread is so eggy, it bakes into an extra-silky custard that contrasts with a generous expanse of buttery golden brown crispness on top. (Using a shallow pan is key.)
