Field Notes: My mom found this recipe in a church cookbook, where they were called Surprise Meringues. The surprise is that you only see a hint of the chocolate and nuts inside the cookie; when you bite into them, there is an explosion of flavor and textures.

Glazed Strawberry Pie
The Beranbaum family fell in love with this pie at a diner called Big Boy in Stroudsburg, Pennsylvania. We were addicted to this pie, consisting of a crisp crust filled only with fresh strawberries held together by a fruit juice glaze. We would drive fifty miles to Big Boy every weekend just to have it. When I tried to duplicate it in my kitchen, I discovered that a fruit glaze also works well with fresh raspberries or a mixture of raspberries and currants. The glaze preserves the freshness of the fruit for two days.

Apple Strudel Turnovers
The pastry chefs at Spago make fresh strudel dough, but we call for packaged phyllo here. For the breadcrumbs, finely grind crustless white sandwich bread in a processor, then toast the crumbs in a 350°F oven until dry, about 10 minutes. You'll need two 14-cube ice-cube trays for the filling.
