Gruyère Cheese Puffs
"I never had a cookbook until I moved here in my twenties to do some graduate work at the University of Oregon," writes Fanny Carroll of Eugene, Oregon. "I fell head over heels for this guy (now my husband), and he gave me Pellaprat's Modern French Culinary Art for Christmas. Still, many of the everyday dishes I made when I was raising my daughters are recipes I learned from my mother while I was growing up in the suburbs of Paris. She was quite a cook, and with a husband and seven kids to feed, everything had to be fast."
Called gougères in French, these cocktail snacks are irresistible.
Coconut Bread
This bread is slightly sweet, like some corn breads, and works well as an accompaniment for the island pork tenderloin salad . It also makes a nice island-style tea bread when served in the afternoon with lime marmalade and hibiscus tea.
Twice-Baked Almond Croissants
Brushed with sweet orange syrup, filled with almond cream, and covered with toasted almonds, even the most run-of-the-mill store-bought croissants are transformed into something heavenly.
Chocolate-Amaretto Layer Cake

Lemon Shortbread Bars
"Here in Seattle, there's a place called 60th Street Desserts that makes fabulous lemon shortbread bars; the cookies are both sweet and tart," says Lucille van der Hagen of Seattle, WA. "Could you ask Joan Williams, the owner, for the recipe?"
A crumb topping makes a nice addition to the classic bar cookie. Prepare the filling while the crust is baking; if the crust cools before the lemon filling is poured over it, the filling might seep beneath the crust.

Chile and Chorizo Cornbread
Just about every book we've ever seen on southwest cooking includes a recipe for one of the spicy cornbreads of the region. Once you've tasted one, you'll know why — they are really delicious. This version is more of a pudding than a bread because it is quite moist and cheesy in texture. It makes a wonderful side dish to replace potatoes or rice, or it is quite satisfying eaten as a light entrée or lunch with a salad of fresh young greens.
