Mott’s Breakfast Soufflé

Every Southern cook has his or her own version of this stratalike breakfast soufflé, but I’m willing to bet that each and every one begins with white sandwich bread. In the past, I’ve tried to fancy it up using challah or brioche or some other bread, but it was never quite as good. I first had this particular variation on a visit to Meridian, Mississippi, catering my cousin’s rehearsal dinner. My crew and I were working so hard we hadn’t even stopped to eat. One of the local ladies, Mott, brought us this soufflé, ready to bake. Hot out of the oven, it was utterly delicious. Note that it should be prepared the night before, allowed to soak overnight, and baked the following morning.

Roasted Asparagus with Country Ham, Red-Eye Gravy, and Poached Eggs

Red-eye gravy—which for most Southerners is the only acceptable sauce for country ham—is a savory and slightly bitter mixture of black coffee and the pan drippings left behind from frying country ham. I’m not sure how the coffee first made its way into the pan, but I like to imagine it was one of those happy accidents born of necessity. It rings true, anyway, because Southerners love gravy so much that they will find a way to eke some out of a greasy pan no matter what. I lighten my version of this quintessentially Southern dish with a bright shock of fresh, green asparagus, which plays perfectly off the saltiness of the red-eye gravy and the richness of the runny egg yolks.

Judy’s Warm Ham and Cheese Rolls

My sister used to make these rich rolls for her husband and kids when they went duck hunting. She would prepare them the night before, wrap them in foil, and refrigerate. Then, when Pat and the kids got up to go hunting—sometimes as early as four in the morning—they would just pop the rolls in the oven to melt the cheese and hit the road. The way everything melds together on the soft, steamed rolls is so irresistible, I’m pretty sure the rolls never made it to the duck camp, or even out of the driveway. For nonhunters like me, these rolls, served warm or at room temperature, are great for tailgating, picnics, and road trips.

Foster’s Sausage and Egg Biscuit

Southerners take sausage and egg biscuits for granted. They are just about everywhere in the South—we make them at Foster’s, and you can even buy them at country convenience stores, where you might find a stack wrapped in cellophane in a basket by the register. If you haven’t already had sausage and egg biscuits yourself, I hope this recipe will make you a convert. For extra flavor, cook the eggs the way my dad did, by frying them directly in the sausage grease left in the skillet rather than using butter. Feel free to scramble rather than fry the eggs if you prefer.

Holiday Cornbread Dressing

This moist and flavorful cornbread dressing—or what you non-Southerners may call stuffing—appeared in Martha Stewart Living, and it remains one of our most requested recipes at the Market. The mix of pillowy egg bread and crusty, grainy cornbread is a real winner. Try stirring in leeks and wild mushrooms in spring or oysters and hot Italian sausage in winter.

Crispy Crusty Jalapeño Cornbread Sticks

Cornbread sticks are a Southern specialty and an example of function following form. I imagine that whoever dreamed them up was probably just trying to be cute by fashioning a corn-shaped mold for cornbread, but the end product, with its high ratio of crispy crust to soft innards and perfect shape for dipping in chili or pot likker, is a whole different animal. In this version, I kick things up a notch by adding sharp Cheddar cheese and spicy jalapeño pepper. If you don’t have (or care to purchase) a corn stick pan—cast-iron only—you can, of course, use a skillet.

Cornbread Toasts

These crunchy, savory toasts are the upside of cornbread’s short shelf life. Scrumptious and versatile, they can be used in dozens of dishes and snacks—but I’m especially partial to the way they complement zingy Pimiento Cheese.

Caramelized Red Onion Tarts

I make these sweet and savory tarts all year round as a first course or served with a salad as a light lunch. The onions take on a lovely blushing red color when they caramelize. Shake it up with a SAZERAC (see page 28)

Eggplant Roulades with Garlic Goat Cheese and Roasted Tomatoes

This is one of my favorite dishes for entertaining. The tender roasted eggplant sheets are used like cannelloni pasta and rolled around the savory cheese filling. The sweet roasted tomatoes add just enough acidity. If you are short on time, fresh tomatoes marinated in oil and vinegar are a great alternative. If you want to get fancy, secure each bundle with a blanched chive for a beautiful presentation.

The Best Stuffed Artichokes, Italian-Style

Preparing fresh artichokes takes some effort, but it’s worth it because they are so delicious. In The French Laundry Cookbook Thomas Keller says that cleaning artichokes is one of his favorite things to do. I’m just the opposite. When I started out at Louis XVI, I had to clean two cases a day. My fingers were perpetually dried out and stained a nasty tobacco brown, and they didn’t want to come clean, no matter how much lemon I rubbed on them. I still clean the occasional case myself, and cuss under my breath the whole time. So, if you’re not put off by this introduction, read on to learn how to clean, cook, and stuff your way to happiness.

Turkish Stuffed Eggplant with Spicy Lamb and Rice

Aaaaahhh, Mediterranean comfort food! Think of this as a heady, warmly spiced alternative to your mom’s stuffed bell pepper. The baked eggplant flesh becomes a tender bed for the luscious meat and rice filling, and the whole is so succulent and moist that no sauce is needed. Some chilled sliced cucumber and onion with olive oil and vinegar would be a good starter or side dish.

Soy-glazed Pork with Quick-fried Rice

Pork loves the salty, “meaty” flavor of soy sauce just as tomatoes love basil. This quick little sweet-and-hot marinade, fragrant from garlic and ginger, permeates and perfumes the meat, and helps it to caramelize over the heat. Flavored with crunchy vegetables, Quick-fried Rice makes a fresh one-pan accompaniment that is nutritious and provides great leftovers. Feel free to add a few stalks of celery or a cup of broccoli florets to the rice. If you’re pressed for time, plain white or brown rice is perfectly fine.

Indian-spiced Turkey Breast with Creamy Red Lentils

This dish just scratches the surface of the marvelous world of Indian cuisine. In European and American cooking we have embraced the virtues of fresh herbs, but it is in the Indian kitchen that we begin to understand how spices can work together in fragrant and intense combinations, creating lingering flavors. In this dish the warmth of cinnamon romances cumin and other savory spices. The yogurt tenderizes and adds moisture to the lean turkey meat, and the creamy lentils eliminate the need for sauce. This dish needs nothing more than a scoop of warm basmati rice, but it’s also delicious with Brown Butter Cauliflower (p. 296).

Polenta Gratin with Savory Vegetables

This is what I call a “close your eyes and sigh” dish—one of those fragrant and comforting meals that remind us what makes eating such a soul-satisfying experience. It can be served as a vegetarian entrée or as a side dish with chicken, veal, or lamb. Polenta provides the creamy base that melds alternating layers of cheese and vegetables. During baking, the flavors intermingle, and the fontina and roasted garlic provide a pleasing gooey texture. A simple tomato basil sauce brightens up the mellow flavor of the polenta. The result: a perfect confluence of luscious Italian flavors. If you have never had real Val d’Aosta fontina cheese, this is an excellent time to try it. The difference is noticeable: Val d’Aosta is firm and has a savory, slightly grassy flavor. If you are short on time, forgo the sauce; this polenta is delicious without it.

Vegetable and Cheese Enchiladas with Ancho-Tomato Sauce

While these are definitely a contemporary take on a Mexican classic, vegetable enchiladas are as satisfying and flavorful as any meat version. The preparation takes some time, but they’re a cinch to assemble. My advice is to make the sauce a day in advance or to start this early in the day before you get too hungry. The only difficult part about this recipe is deciding what vegetables to leave out. There are countless choices, but I’ve narrowed it down to a tasty combination that works well with the mildly spicy sauce. Substitute or add your seasonal favorites, including—but not limited to—chayote squash (known as mirliton in New Orleans), corn, yellow squash, pumpkin, eggplant, and so forth. If you want to fire up the grill, that’s another great way to prepare the vegetables. Just keep the veggies in large pieces, brush them with a little olive oil and seasoning, and grill a few minutes on both sides; then cool them and cut into smaller pieces. You also have a number of cheeses to choose from, such as white cheddar, Monterey Jack, and pepper Jack.

Speedy Shrimp with Tomatoes, Feta Cheese, and Basil

This is a dish I make often, especially for informal parties. It is delicious, easy, and pretty, and makes a great buffet item, especially when paired with all those other Mediterranean dishes I love to cook and eat, such as Eggplant Caviar and Black Olive Tapenade (p. 191), Artichoke Dolmades with Lemon Sauce (p. 20), and Simple Orzo Salad with Black Olives and Feta (p. 115). The tomato sauce is also a good base for moussaka or baked stuffed eggplant, or just tossed with noodles and some sharp Greek cheese, such as kasseri. The dish can be completed up to the final baking point and kept refrigerated for several hours or even overnight. Bring it to room temperature before baking, or it will overcook.
