Chickpeas and lentils are the staple legumes of India, but red beans are cooked from time to time and, typically, done in an extremely flavorful manner. You can add meat to this preparation, which is already quite a bit like chili. Like Dal with Butter and Cream (page 433), this is excellent with some butter (and cream, if you like) stirred in toward the end of cooking. Make it entirely in advance if you like; it will keep, refrigerated, for a couple of days. Serve with rice. Other legumes you can prepare this way: chickpeas, black beans.
Black Beans with Garlic and Cumin
The familiar version, served in Latin American restaurants everywhere. Leave the beans soupy if you plan to serve them over rice. Allow plenty of time, because black beans can take a while, and they’re best served quite soft. But by all means prepare them in advance if you can and reheat before serving. Epazote is a typical addition to black beans in Mexico, and it contributes a distinctive flavor, but the beans are just fine without it. Other legumes you can prepare this way: red beans, white beans.
Lentils with Bulgur
A relative of tabbouleh, but (usually) served hot and made with lentils. This is a good vegetarian main course, but also a fine side dish at a Middle Eastern or other meal. The onion-mint garnish is terrific stuff.
White Beans with Garlic
One of the most basic, simple, and delicious bean dishes. When my kids learned how to make this, they would open a can of beans, heat it with olive oil and garlic, and add some salt. Period. My way is a tiny bit more sophisticated, but not much. These are great on their own but also fantastic as a side dish with grilled meats of any kind. As with all legumes, if you have a chance to soak the beans ahead of time, they will cook a little more quickly, but it isn’t essential.
Aromatic White Beans with Chicken Stock and Tomatoes
The addition of stock boosts this simple bean preparation (not much different from the preceding one in technique) to another level, and it’s a good one. This is a more elegant bean dish, at home with any good dish of roast meat, like Lechon Asado (page 375) or Grilled or Roast Lamb with Herbs (page 358). As with all legumes, if you have a chance to soak the beans ahead of time, they will cook a little more quickly, but it isn’t essential. Other legumes you can prepare this way: chickpeas (allow for longer cooking time), flageolets (the traditional French accompaniment to leg of lamb).
Rice, Pine Nut, and Currant Filling for Grape Leaves, Cabbage Leaves, Peppers, and Tomatoes
A flavorful vegetarian filling for stuffed vegetables (pages 445–447 and 492) that is simple, quick, and easy to make in advance. If you have a mild chile powder (like one made from Aleppo or New Mexican chiles), use 1/2 teaspoon or more of it in place of the cayenne. Some cooks add about 1/2 cup grated hard sheep’s cheese, of a type like pecorino Romano, to this mix.
Glazed Carrots
This easy, fast cooking process turns carrots into a luxury vegetable. For even better flavor, add the grated zest of an orange or a lemon when about five minutes of cooking time remain. Other vegetables you can prepare this way: turnips, radishes, onions, beets, parsnips, or other root vegetables.
Glazed Chestnuts
Boiling is the easiest way to shell chestnuts, though it’s still a pain. Frozen, pre-peeled chestnuts are a good alternative. Other vegetables you can prepare this way: see Glazed Turnips (page 496).
Choonth Wangan
It took me a long time to figure out what was in this mysteriously flavored concoction, and even then I had to ask my host (who was from Kashmir, where this is common) what was going on here. The apples and eggplant complement each other perfectly, to the point where each loses a bit of its identity and gains something unusual. Serve this as a side dish any time you like, not just with Indian food.
Red Snapper or Other Fish Fillets in Paprika Sour Cream
Sour cream sauce is standard throughout Eastern Europe, and it’s not as bland as you might think or as you might have experienced. The dish should be quite sour, for one thing, and a bit hot—if your paprika has little flavor, either buy a new supply or spike it with cayenne—and it should be finished with fresh herbs. Serve this over rice or buttered noodles or with crusty bread.
Sea Bass or Other Fillets in Saffron Sauce
A lovely, flavorful, and colorful sauce with an elusive perfume that is the result of the saffron-vinegar combination. This is suitable for any firm-fleshed fish fillet. If you make the variation with the potato salad, you’d pretty much have a one-dish meal here; bread and salad would be nice additions.
Run Down
This dish is usually made with pickled or salted fish, but it’s simpler (and, in my opinion, better) when made with lightly salted fresh fish. To be truly authentic, the chile should be a Scotch bonnet (habanero), which has a distinctive though fiery flavor, but any chile will do in a pinch. Serve this with Coconut Rice (page 516) or, even better, Coconut Rice and Beans (page 516).
Peperonata
A sweet classic, peperonata, like many vegetable stews, is easily varied: add chunks of potato, chicken, or zucchini or some minced garlic; a small chile or a bit of cayenne is also appropriate. Serve it hot as a side dish, warm as a topping for Crostini (page 41), or cold as a relish.
Ndizi wa Nazi
Plantains, a staple throughout much of Africa, are spiced up here to be served as a slightly sweet side dish. Warm, deeply satisfying, and quick, this is unusual and good even on weeknights. Best with West African, Caribbean (especially Lechon Asado, page 375), Mexican, and South American dishes. Other vegetables you can prepare this way: green bananas or potatoes, both of which will need longer cooking time.
Mackerel Fillets Simmered in Soy Sauce
Many Japanese cooks treasure dark, oily, full-flavored fish and treat it with a simple dose of powerful seasonings and a simple cooking technique that might be called “pan-steaming.” If you think you don’t like mackerel, try it this way; it may change your mind. Serve this with short-grain white rice (page 507).
Soy-Glazed Flounder or Other Fillets
This is an ultraquick recipe, lightly sweet, and one that will work for any white fillet—even thick ones if you extend the cooking time slightly. I prefer very thin ones, though, because the sauce almost permeates them and the cooking time is so short. The soy glaze makes this a natural over white rice.
Fish Fillets Poached in Caramel Sauce
There were two things I couldn’t get enough of in Vietnam: crunchy lemongrass dishes and caramel sauce dishes. Here’s one of the latter, in which the caramel sauce—essentially melted sugar, which becomes oddly bitter while retaining its sticky sweetness as it browns—is used to poach the fish. Make sure you use lots of black pepper, which is one of the characteristic seasonings of Vietnam, and serve this unusual, delicious dish with Basic Long-Grain Rice (page 506). Red Snapper or Other Fillets in Red Sauce
The heat from the sauce—red because of the chiles—and the tartness of the tamarind give these otherwise mild fillets a wonderful kick. For sweet and spicy flavors, try the variation. The spice mixture can be made well ahead of time and this dish finished in just a few minutes. See page 500 for information on Thai fish sauce (nam pla). Serve with any simple rice dish.
Panfried Spicy Potatoes with Eggplant
An unusual combination of textures and flavors, but—like the eggplant and apple mixture on page 458—one that really works. Serve in combination with other Indian dishes or as an unusual side dish with Western food. Other vegetables you can prepare this way: for the eggplant, substitute cauliflower or thick slices of red or yellow bell pepper or a combination.
Chile Crab
One of the most popular snacks sold at the famous open-air food bazaars of Singapore is a huge platter of fresh crabs stir-fried in a sweet, spicy sauce. You eat this crab dish, like many others, with your fingers; it’s worth the mess. (If that doesn’t appeal to you, try this dish with precooked crabmeat.) Remember, crabs must be alive and kicking (or cooked) when you buy them. Information on Thai fish sauce (nam pla) is on page 500.
