Leeks in Red Wine
As with all braised vegetable dishes, the results here depend largely on the quality of two ingredients: the vegetable itself and the braising liquid. Since it’s easy enough to find good leeks, you have to be certain that the red wine is, if not great, then at least drinkable; and if you have good homemade stock, this is the place to use it. Other vegetables you can prepare this way: Belgian endive, split in half the long way; onions, halved or quartered (or spring onions, left whole).
Torta di Porri
Somewhat more elegant than its more famous French cousin, which is featured in the variation. Good hot, perhaps even better warm or at room temperature, this is an ideal buffet or picnic preparation. Like the eggplant pie on page 459, this may be prepared without a crust. Other vegetables you can prepare this way: onions of any type.
Cod with Chickpeas and Sherry
Sherry, garlic, and chickpeas, a decidedly Andalusian combination of flavors, is served by itself or as a side dish with almost any cut of meat, fish, or poultry. But I like it best with cod: the subtlety and tenderness of the fish are offset wonderfully by the big, almost meaty flavors of the scented chickpeas yet are not overwhelmed by them. If you have any advance inkling at all that you’re going to be tackling this recipe, try to cook dried chickpeas for it in advance (page 431). The best sherry to use here is Amontillado, which is slightly but not overpoweringly sweet; a ten-dollar bottle of Amontillado will suffice, and since you’re only going to use about a quarter of the bottle, there will be plenty left to chill and drink. Second choices would be slightly sweeter Oloroso or drier Fino.
Sweet and Sour Onions
I like this best with shallots, which are prettier and tastier than boiling onions. Some people add raisins (about 1/4 cup, from the beginning), which does not turn me on. Others garnish with toasted pine nuts, a nice but unnecessary touch. Other vegetables you can prepare this way: almost any member of the onion family, including leeks, scallions, and any kind of onion—if the onions are large, peel and quarter them, then insert a toothpick into each quarter to hold it together during the cooking.
Mackerel Fillets Simmered in Soy Sauce
Many Japanese cooks treasure dark, oily, full-flavored fish and treat it with a simple dose of powerful seasonings and a simple cooking technique that might be called “pan-steaming.” If you think you don’t like mackerel, try it this way; it may change your mind. Serve this with short-grain white rice (page 507).
Steamed Crabs with Soy Dipping Sauce
This is one of those odd dishes that are easier to cook than to eat. Blue crabs take a lot of work; but they’re so delicious they’re worth the effort. If you live on the West Coast, you’ll probably use Dungeness crab, which will be easier.
Steamed Dungeness Crab with Ginger
Unless you live in Alaska or know a good fishmonger in the Pacific Northwest, it’s almost impossible to buy Dungeness crab that has not already been cooked. That’s not a problem; they can still be steamed, as they are here. This is a subtle preparation, but Dungeness is so wonderful that’s all it takes. (You can use lobster if you prefer.)
Squid (or Cuttlefish) with Artichokes and Garlic
The presence of artichokes in Liguria (the “Italian Riviera”) is enough to make you envious; they’re everywhere, they’re good, and everyone seems to know what to do with them. Here’s a simple dish, assuming you can get your hands on some good artichoke hearts. This is wonderful with either crusty bread or a simple rice dish, like Rice with Onions, Garlic, and Herbs (page 518). See page 98 for squid cleaning instructions if you need them.
Squid in Red Wine Sauce
Among my favorite squid dishes. Although sautéing, stir-frying, and deep-frying are good, fast techniques for squid, they tend to be messy because of squid’s marked tendency to spatter when cooked in oil. A gentle braise in flavorful liquid and seasonings is the perfect alternative, and this one, with its Provençal spirit, is delicious and warming. See page 98 if you buy squid that hasn’t been cleaned. Crusty bread is a must; keep the vegetable simple.
Sauerkraut Braised in Wine
The combination of sauerkraut, juniper, and fruity wine is a divine one. You might as well use a German wine to be completely consistent. Best with pork, like Baeckoffe (page 399).
Stir-Fried Shrimp with Cabbage and Black Beans
Though Chinese cabbages, like bok choy and Napa, have become more widely available here, I still prefer this dish with ordinary green cabbage; its crunch is unsurpassed. Serve this with Basic Long-Grain Rice or Fried Rice (page 506).
Clams in Sherry Sauce
Every winemaking culture in the world cooks with its local product, but only Spain has sherry. And while sherry is not quite all-purpose, as simple white wine is, it is manifestly more powerful and incomparably more complex; in fact it rivals stock in the character it adds to many dishes. (When Spanish food comes with a good-tasting but anonymous “brown sauce,” you can bet it contains a hefty dose of sherry.) Sherry combined with seafood, olive oil, and garlic, as in this recipe, produces a magically Spanish dish, one that is not only classic but awesome and one you can consider a template for many others. You can spend a fortune on sherry, but since each bottle is the product of several different vintages it is consistent from year to year, and the fact that it is stabilized by alcohol enhances its shelf life (refrigerated, an opened bottle retains flavor good enough to drink for several days, and sometimes even longer if used for cooking). In short, all real sherry is good, and bottles costing ten bucks are more than acceptable. Fino is probably best for drinking, but the slightly sweeter, nuttier Amontillado and Oloroso are perhaps a little better for cooking. As is almost always the case in cooking, the clams you use here should be as small as you can find. Tiny ones the size of a quarter are fun, but the slightly larger cockles or West Coast “butter” clams are equally tender and easier to eat. Mahogany clams or good littlenecks are also fine; do not use “steamers,” whose sand will spoil the dish. In any case, buy only live clams; their shells should be undamaged and nearly impossible to pry open. Rinse them, scrubbing their shells if necessary, to rid them of all sand. Those that do not open during the cooking are fine; just pry them open at the table with a dull knife. Serve this as an appetizer or a main course, with good bread for sopping up the sauce.
Tofu with Black Beans
If you’re a tofu fan, chances are you’re always on the lookout for ways to spice it up. This is one of the best. For a meatier texture, use the technique in step 1 of the previous recipe. For a bigger stir-fry, add some vegetables—red bell peppers are nice. Salted black beans are sold in supermarkets and in every Chinese store. They’re almost always soaked before being used.
Pasta with Duck Sauce
This is a dark pasta sauce served in much of Italy, made with stewed, shredded meat. I like to make it with duck legs, though you could use rabbit, pork—cut from the ribs or shoulder—or even the dark meat of a good chicken (hardest to find). The meat must first be braised in red wine or, even simpler, cooked in its own fat as I do here. That’s the only time-consuming part of the process, and it may be done a day or more in advance. (Refrigerate both meat and juices if you complete this step more than an hour or two before proceeding.) Sharp pecorino Romano is a better choice of cheese than Parmesan here, though chopped parsley also makes a good garnish.
Spaghetti with Octopus Braised in Red Wine
If you love octopus, this dish will satisfy your cravings. Just be sure to allow enough time for the octopus to become fully tender. (You can also use squid, which will cook much more quickly.) This dish employs the unusual but excellent technique of completing the cooking of the pasta in its sauce, something done throughout Italy.
Yau Mei Faan
Hearty and warming, this is a popular winter dish in China, and rightly so. If you have a rice cooker, this is a good place to use it; it will allow you both to make the rice and to keep it warm. Even better is to wrap the rice in lotus leaves, as in the variation, which gives it a rich, smoky flavor and produces a dish often served at dim sum brunches. You can find lotus (or banana) leaves, as well as Chinese sausage and dried shrimp, at most Asian markets.
Figs Poached in Wine
You can poach dried figs, of course, but fresh ones achieve a kind of swollen, bursting tenderness that is sublimely sensual. Green figs, not quite fully ripe, are best for this purpose, but the more common Black Mission figs—also not quite ripe—are almost as good.
Caramelized Pears Poached in Red Wine
A light, appealing dessert that is a French classic. You may simply serve the pears after poaching them but the browning is a very nice touch. Pinot Noir is the ideal wine for this, but any fruity, not-too-tannic red will do.
Multifruit Soup
This is often served as an appetizer, but most people are going to find it more appropriate for dessert. The fruit can be varied, but cherries really make the best base. For wine, use Gewürztraminer or Riesling, preferably from Germany and at least slightly sweet (if the wine is very sweet, reduce the sugar).
Gelato Affogato al Caffè
This is quite possibly the simplest dessert “recipe” imaginable: vanilla ice cream doused with coffee. The dessert probably originated in Turin, an important city for both coffee and ice cream, and is served in bars there all over town.
