New Year's Orange and Brandy Cake

Editor's note: The recipe and introductory text below are from Aglaia Kremezi's book, The Foods of the Greek Islands. As Kremezi explains, this special cake is enjoyed on New Year's Eve or New Year's Day and has the potential to be lucky. Vassilopita On New Year's Eve or after the family lunch on the first day of the New Year, the father of the family cuts into this rich and aromatic cake, which has the year written in almonds on top and a lucky coin secreted inside. A piece is distributed to each family member, starting with the older ones, and whoever gets the symbolic coin is rewarded with a gift of money and starts the year with an advantage. The basic recipe always contains orange juice, eggs, butter (a luxury in the old days) or margarine and brandy. Like our family, most islanders bake this fragrant cake just once a year. This is my mother's recipe. Serve it on its own for breakfast or as a snack with coffee, tea or a glass of orange juice.

Frozen Grand Marnier Torte with Dark Chocolate Crust and Spiced Cranberries

This easy dessert has it all: chocolate cookie crust; rich, creamy filling; and a glistening tumble of berries on top.

Hazelnut Crunch Cake with Honeyed Kumquats

Tender cake, creamy filling, crunchy nuts, and tangy–sweet kumquats add up to one glam holiday dessert.

Caramel-Pecan Bûche de Noël

Yule log meets that New Orleans classic, bananas Foster, in a make-ahead dessert.

Trio of Mini Pound Cakes

These tiny cakes make terrific gifts, packaged in sets of three — one of each flavor. The basic vanilla batter is also wonderful for other variations — try orange rind and white chocolate-chip, raisin-walnut, or "the kitchen sink" (that's whatever you need to get rid of in your pantry). I also like to keep some of these loaves in my freezer for impromptu breakfast parties. Just move them to the refrigerator before bed, and they'll be thawed by morning.

Chestnut Cheesecake

Editor's note: The recipe and introductory text below are from Feast: Food to Celebrate Life, by Nigella Lawson. There is no doubt about it, anything with chestnuts in it, even if they come vacuum-packed or canned and are perennially available, is so right for this time of year. This hums the tune, but in a subtler key. The chestnuts are present, in the form of a gritty, grainy sweetened purée: some to add to the cookie base; some to fold through the plain cheesecake filling before baking; and yet more — well, it is Christmas — to drip in a thick syrup over the cake when served. And yet, you know, the chestnuttiness is not blaring: there is something undeniably festive about this, but not in a full-on, party hat kind of a way. As with all cheesecakes, you need to bake this the day before you want to serve it.

Dark Fruit Cake

Editor's note: The recipe and introductory text below are from The Fannie Farmer Cookbook by Marion Cunningham. To read more about fruitcake, see the related Daily Dish. Every kitchen file should have a recipe for a distinguished dark fruit cake. This is as good as any to be found.

Chocolate-Pistachio Torte with Warm Chocolate Ganache

There will be a bit of pistachio paste left over: stir it into your next batch of brownies.

Cornmeal Pound Cake with Rosemary Syrup, Poached Pears, and Candied Rosemary

It's all about the interplay between cake, syrup, and pears in this sophisticated dessert. The rosemary syrup would also be delicious in a cup of tea.

Frozen Eggnog Mousse Torte

A creamy frozen eggnog mousse layered with paper-thin sheets of crisp chocolate. Be sure to make the chocolate disks and lace before making the mousse filling.

Black Forest Torte

Coarsely ground black pepper lends a spicy note to this dense, moist brownie cake studded with dried cherries and chocolate chips. Cherry Preserves are thicker than cherry jam and give the Black Forest Torte more body. Look for cherry preserves in supermarkets.

Dark Chocolate-Caramel Cake with Gold-Dusted Chestnuts

A sumptuous chocolate-caramel ganache alternates with layers of cake sweetened with chestnut cream.

Pink Cuts

These dainty tea cakes took many of us back to our childhood. A few drops of kirsch gives them a faintly eastern European air.

Small Pear and Almond Cakes

Muscat-poached Seckel pears are tucked into moist almond cakes for a charming dessert. Besides being cute, these tiny cakes leave guests room for pumpkin pie.

Chocolate Cranberry Cakes with Bourbon Whipped Cream

These luscious cranberry-studded cakes enriched with bourbon and pecans break away from traditional pumpkin pie without eliminating all those beloved ingredients that say Thanksgiving.

Pumpkin Cheesecake Crumble Squares

A favorite from the '70s, pumpkin cheesecake is even more fun as a crumbly, nutty bar.

Orange Blossom Cheesecake with Raspberry and Pomegranate Sauce

New York-style cheesecake gets a flavor update with a hint of orange and spice. The sweet-tart sauce balances the rich filling.

Key Lime Cheesecake

Reminiscent of Sara Lee's 1950s-era graham-cracker and sour-cream cheesecake, this version features a thick layer of delicious sour cream atop the creamy filling and tart Key lime custard.
