Manila Clams, Arugula, and White Beans with Preserved Lemon Vinaigrette

Although you might think of cooked beans as red-wine food, when they’re tossed with shellfish, greens, and a lemony dressing, they pair better with Sauvignon Blanc. Brian created this recipe for a Workshop session on wine and food matching, to demonstrate how ingredients like citrus and arugula can steer a dish toward white wine. Note that you need to soak the beans overnight.

Kabocha Squash Panna Cotta

This modern, savory interpretation of panna cotta comes from Chef Debbie Gold, who participated in the 2000 Workshop. It has the silky, quivery texture of a traditional dessert panna cotta, with an appetizing butterscotch color. For an autumn first course, serve the custard with crisp toasts and a tart salad for contrast. Note that the panna cotta must be chilled for at least four hours before serving.

Rock Shrimp and Yuca Cakes with Spicy Mango Salad

Crab cake fans will enjoy chef Marc Ehrler’s golden shrimp cakes, a dish that reflects his years cooking in the Caribbean. Chef Ehrler, a 1991 Workshop participant, substitutes rock shrimp for crab, grated yuca for bread crumbs, and cilantro for parsley to make an appetizer that tastes like something you might find at a seafood shack on Martinique. A mango salad seasoned with chile and lime is the palate-tingling accompaniment. Look for yuca, the starchy root vegetable also known as cassava, in markets that cater to a Latin American or Caribbean clientele.

German Potato Salad

New potatoes are really just young potatoes of any variety. They are crisp, waxy, and hold their shape when boiled or roasted, as in the recipes that follow. Try any of these rustic potato dishes with roast chicken, pork, or beef (see page 284).

Chopped Salad with Pork and Buttermilk Dressing

Use the extra loin from the Pork Loin with Figs and Port Sauce (page 217) in the recipes below (you’ll have enough meat to make both).

Pork and Soba Noodle Salad

Make the Pork Tenderloin with Sautéed Apples and Leeks on page 205, and then use the extra roasted tenderloin in one of these recipes (page 206)—one with Asian flavors, one with Mexican.

Flank Steak and Arugula Salad

Turn leftover meat from Flank Steak with Parsley-Garlic Sauce (page 194) into one of these weeknight dinners. The steak for the salad can be served cold, while the steak in the fajitas will warm through as it gets cooked with the rest of the ingredients.

Chicken Salad

A bit of planning ahead makes preparing weeknight dinners a breeze. Use the extra chicken from Roast Chicken and Parsnips with Swiss Chard (page 149) in one of the recipes below.

Salmon, Cucumber, and Green Bean Salad

The salmon and green beans are equally good served warm or cold. If chilling, prepare recipe through step 3; refrigerate fish, green beans, and dressing separately, then proceed with step 4 just before serving.
