Mulled Cranberry Sauce
Rick Rodgers, cookbook author and teacher, says, "The inspiration for this recipe came to me one Thanksgiving when my friends and I were sipping mugs of mulled wine while preparing dinner. I was doing a basic cranberry sauce and tossed in a bit of the spiced wine. The result was a fabulous mix of sweet and spice—and I've been making it this way every year since."

Chili Mayonnaise '21' Club
Can be prepared in 45 minutes or less.
This sauce is great with roast beef, grilled steaks, and roasted chicken. It is also delicious as a sandwich spread or as a dip for crudités or tortilla chips.
The "heat" of the mayonnaise will depend on the variety of chili you use. In a bind, chili powder can be substituted for the chili paste.
Citrus Pesto
Toss one cup of the pesto with one pound of cooked pasta, or try it as a sauce over baked chicken or fish.
Orange, Onion, and Balsamic Sauce
No need to squeeze oranges for this recipe, as the sweetness and body of store — bought juice are key. If you cook the mixture down until most of the liquid is evaporated, you’ll end up with a delicious onion confit rather than a sauce. Either way, we like to serve this with grilled meats and chicken as well as fish.

Simple Veal Pasta Sauce
For some time I had been thinking: How can I pare down a classic meat sauce for those occasions when I have neither the time to make nor the voracity to consume a full-scale ragù? The sauce below is the answer I came up with. I replaced beef with veal; eliminated the milk, the wine, the carrot, and the celery; and reduced the cooking time from several hours to half of one. It is as easy to take as it is to do. Is it a favorite dish? Sure — it is my favorite simple meat sauce.
Suggested pasta: The ideal carrier for this simple meat sauce is a homemade noodle, in particular one scented with rosemary and sage, cut into fettuccine or tonnarelli. Boxed dry pasta in a short tubular shape such as penne or maccheroncini can be a satisfactory alternative.
