Spicy Corn Chowder

Pat: This creamy corn chowder, packed with vegetables and spices, has more sass than your average chowder (and the sweet potato and spices give it a distinct orange hue). The ingredients smoky bacon, fresh herbs, and a little Neely kick (cayenne pepper) combine for an over-the-top, out-of-this-world chowder flavor. When corn is at its peak, during the summer, we use fresh kernels straight from the cob. But since we crave this soup all year long, we use frozen corn as well and get great results. If you use frozen corn, look for the white kernels—they are particularly sweet.

Lentil and Broccoli Soup

This, like bean- and potato-based soups, can be made ahead, but will thicken a lot. The best bet, if you plan to make the soup in advance, is to reheat it slowly, adding water or stock as needed to restore the soup to its original thickness. And always check the seasoning of reheated soups before you serve them.

Minestrone–Vegetarian or with Pork

Sprinkling the onions with salt as they cook not only seasons them, but extracts some of the water and intensifies their flavor. Keep the water hot before adding it to the soup, as described below, and you won’t interrupt the cooking—it will flow smoothly from start to end. Remember this when braising meats like the short ribs on page 218, or when making risotto. You can use the method outlined below—bringing the beans to a boil, then soaking them in hot water for an hour—anytime you want to cook beans without soaking them overnight, or anytime you’ve forgotten to soak them a day in advance. It works especially well here because, by soaking the pork along with the beans, you kill two birds with one stone. (I soak the dried or cured pork to remove some of the intense curing-and-smoking flavor. If you like it intense, just rinse the pork under cold water before adding it to the soup.)

Escarole and White-Bean Soup

If you’re making salad with the tender, inner leaves of a head of escarole, this is a good place to use the tough outer leaves. In fact, they’re even better for this soup. Just remove any bruised or yellow parts of the leaf and shred the rest. If you like, double the amount of beans in this recipe, fish half of them out of the pot after cooking, and save them for the Arugula and White-Bean Salad on page 60. Spoon off all but enough of the cooking liquid barely to cover the remaining beans before adding the escarole and finishing the soup. Whole dried peperoncino or diavolillo peppers are the type of chili peppers that are used, seeds and all, to make the crushed red pepper that you are familiar with. Toasting the whole peppers along with garlic cloves in olive oil brings out their nuttiness and spice. I like to serve them whole right in the soup, where they can be easily spotted and removed.

“Reinforced” Soup

You have all seen those large, wax-coated provolone cheeses hanging like oversized pears in Italian groceries. When the same cheese is made into smaller shapes, which are hung to dry only briefly, they are sold as a softer, milder cheese known as provola. The wonderful soft texture of the cheese is perfect for this reinforced soup. If you cannot find provola, substitute a young soft cheese like Fontina or fresh Pecorino. You can use fresh mozzarella, but it will be very stringy when ladling and eating the soup. Boiling the meatballs before adding them to the soup may seem a little odd, but it removes some of the raw-meat flavor and helps keep the clear flavors of the soup intact.

Zucchini and Potato Minestra

Stock will make a much more flavorful soup, but if you do not have any handy, use canned broth or even water—the soup will still be quite good. When using canned stock for this soup, I always dilute it by half with water. In most cases, the flavor of canned broth is too pronounced when taken straight and masks the fresh vegetal flavor of the other ingredients.

Roman “Egg Drop” Soup

When I make a brodo—clear soup with a little something in it—I think of my father. He loved all kinds of soup, but especially these simple and elegant ones. My father was a very proper man who insisted on beautiful place settings and crisp linens. When we were young, my grandmother made this soup with duck eggs, chicken eggs, or even goose eggs—whichever type was freshest. Prepared without the spinach, this is a perfect soup for infants.

Chicken and Dumplings

This is a southern comfort food dish that some say came straight out of the Great Depression as a way to stretch a little bit of chicken to feed a big family. Flour and fat are combined to form a dumpling (such a sweet name for such an insidious food, don’t you think?) that is then is cooked in broth. In real life, those sweet little dumplings are calorie bombs that call for a healthier version—like this one.

“Cream” of Mushroom Soup

The highest form of “cream of” soup starts out with cooked, pureed vegetables and pure, fresh cream. The second-best incarnation of that same soup winds up being pastier, with cornstarch as a thickener and the fresh cream replaced with cheaper fats, like vegetable oils. There’s one more way to make cream soup, though—a way in which you get the freshest, purest, least diluted taste of the vegetables. There’s no cream in this recipe—and no cornstarch, either. You still get a great creamy texture by using a lot of mushrooms and chicken broth. The key is to not let the mushroom liquor (the juice expressed by the mushrooms as they cook) evaporate, and to use a good blender to create a luxurious puree.

Chicken Noodle Soup

This takes a recipe that already has a reputation for promoting good health (think “Grandma’s penicillin” and “nature’s antibiotic”) and makes it even healthier. It will cure what ails you, but you don’t have to be sick to enjoy it.

Cheddar Cheese and “Potato” Soup

If ever there was a dynamic duo of destructive caloric forces, cheese and potatoes is it. But they taste sooo good together, we dive in anyway. This potato-free cheese and “potato” soup reunites the duo but tames them to a mere shadow of their former fatness.

Broccoli and Cheese Soup

This beautiful green soup features broccoli two ways—pureed for body and in chunks for texture. The cheese in this rendition of broccoli-cheese soup is a whisper of Parmigiano-Reggiano cheese. The real creaminess comes from yogurt.

Tortilla Soup with Avocado and Cilantro

I must admit that I didn’t realize at first that tortilla soup was an American favorite, but it slowly dawned on me. One of my favorite hotels serves it, there is a movie called Tortilla Soup, and when I asked my Twitter peeps about soups, it came up over and over. Its origins are Mexican, but it has become Americanized over the years. In Mexico City, this soup is made simply with roasted tomatoes, chiles, chicken broth, and corn tortillas. This version is true to the original, with a few additions.

Black Bean Soup

Black beans are a very good source of cholesterol-lowering fiber and have many healthy properties that make them a good go-to ingredient. The best thing about black beans is their rich, meaty flavor. They lend themselves to many preparations, are great hot or cold, and the best news is that you don’t ever have to cook them if you don’t have the time or inclination. When purchasing, watch out for sodium levels, and buy organic if you can.
