Som Tum

This fiery, strong northern Thai specialty (if it’s made correctly, you will really reek after eating it, but it’s worth it) has become one of the most popular dishes in Thailand and at Thai restaurants in the States. When I was in Bangkok, I could not walk down the streets or through the markets without at least a dozen offers of Som Tum from the vendors, and it was hard not to stop for a little dish with some grilled meat and sticky rice. You can usually find green, or unripe, papayas and yard-long beans (and the Thai fish sauce called nam pla) at Asian or Latin groceries, but you can also substitute Granny Smith apples for the papaya and Napa cabbage for the beans.

Fresh Tomato Salad

The first time I ate this great summer salad, I could not figure out how the raw garlic flavor could be strong without being overpowering, but the reason is simple: the garlic is mixed with the dressing, then strained out. Peeling the tomatoes is far from necessary, but it’s a nice refinement. More important is to use delicious ripe tomatoes.

Dosa

Thin and crisp, the distinctively large and cylindrical dosa are the famous crispbreads of southern India. Made from a base of ground lentils and rice, they’re delicious and, paired with a simple raita or chutney, the basis of a meal for many people. I ate dosa with amazement throughout India, but I learned how to make them here, with help from Monica Bhide and Suvir Saran, both friends who have written wonderful books about Indian cooking. Note that the difficult part of the dosa-making process—soaking and pureeing—can easily be bypassed if you have an industrial milling machine that can pulverize the lentils and rice into flour straightaway. And a couple of companies do just that, adding salt and fenugreek for flavor, add baking soda to give them a little puff, and sell the resulting mix throughout India and in the States. This mix makes dosa a convenience food you can fry up at the drop of a hat. I think it’s still worthwhile to give this recipe a try, but if the soaking and pureeing are going to keep you from trying dosa, by all means use the mix. Soak the lentil and rice flour in water as directed on the back of the package, and when the batter’s ready, start with step 4. (You can use the mix for the uttapam on the next page as well.)

Pasta with Ham, Peas, and Cream

A pasta dish kids love and one that became traditional with mine whenever we left them with a sitter for the evening. It’s best if the ham is prosciutto, the cream thick and fresh, and the peas just shelled, but it’s pretty good with supermarket ham and cream and frozen peas, and I’ve made it that way plenty of times. For variety, add about a cup of sliced button mushrooms to the ham mixture.

Tamales

Labor intensive, yes, but typically made as a group project and a fun one at that. The tamales in the frozen food aisle may be a quick fix, but they’re barely worth eating. These, on the other hand, are worth the effort. If you are using any of the chicken fillings, shred the chicken finely, then mix with the accompanying sauce. You can buy dried corn husks at any market that carries a range of Latin products; same with masa harina, though finding fresh masa may be a bit more challenging, depending on where you live.

Harira

In the holy month of Ramadan, Muslims fast from sunrise to sunset and partake of a hearty meal after sunset. This often includes harira, a filling, flavorful, and easily varied soup. If your cilantro comes with roots, wash them well, tie them in a bundle, and add them to the stew for extra flavor; remove before serving.

Couscous with Vegetables

A hearty, delicious vegetable stew, whose ingredients can be varied however you like. Chickpeas and squash—both summer (zucchini) and winter (pumpkin or butternut)—are the most commonly included vegetables.

Jota

Jota, often referred to as Slovenia’s national dish, is also found throughout Friuli, in extreme northeastern Italy, and especially in the area around Trieste. It’s a good one-dish meal, not unlike a soupy version of cassoulet. The addition of sauerkraut, however, cuts through the rich pork and the beans, and while it might not exactly “lighten” the dish, it makes it somewhat less dense. Buy “pure” sauerkraut—just cabbage and salt—packed in plastic bags or a barrel. Serve with good crusty bread.

West Lake Beef Soup

Too few soups are both hearty and quick to make, but West Lake soups—named after their area of origin (West Lake is in the northern Chinese city of Hangzhou)—are stunning exceptions. I’ve eaten West Lake soup only in restaurants and homes in this country, but the preparations have always offered wonderfully clear and intense flavors and a marked richness. This comes not only from dropped egg whites but from loads of meat or fish, cilantro, peas, and, as I found out in the cooking, a bit of cornstarch, which is not altogether necessary but is harmless enough. Caldo Gallego

Galicia’s hearty bean and meat stew makes a terrific one-pot meal but is often served in cups as a starter. The rich flavors of the meat and beans are complemented by the sharp turnip and greens. In Galicia, the meat base is made from unto, a cured pork belly that I would tell you how to find if I knew. It’s not unlike pancetta but most like the fatty part of prosciutto, which would make a great substitute; salt pork or bacon is also fine—here I use a combination. There are as many ways to vary Caldo Gallego as there are to vary beef stew. For example, substitute chickpeas for the white beans; add chunks of pork shoulder, ribs, beef brisket, shin, chuck, or oxtail with the beans (increase the cooking time somewhat); replace the chorizo with other sausage; add peeled chunks of winter squash, pumpkin, apple, or pear; or substitute green beans or kale, collards, or chard for the cabbage.

Sopa de Habas

When families in Mexico give up meat—either for Lent or for other reasons—they turn to soups like this one. You might have trouble finding fresh favas, though Latin markets frequently stock them, especially in spring, and I’ve even seen them at supermarkets in recent years. Their wonderful flavor has no exact match, but fresh peas are a good substitute. The best chile for this dish is the mildly hot dried chile negro; it’s best when toasted, which is an easy enough process: put the chiles in a dry, ungreased skillet over medium heat and cook, turning as each side browns, until browned and fragrant, 5 to 10 minutes.

Mediterranean Squash and Chickpea Soup

Brilliant orange pumpkinlike squash fill the vegetable stands of Morocco and most other Mediterranean countries every fall, and they show up in stews, couscous, pasta, and soups like this.You may find the same squash in the States, but butternut, acorn, or sugar pumpkin—pumpkin grown for flavor, not size—are perfect substitutes and easy enough to find. (Canned pumpkin is an acceptable if not ideal alternative; drain it well.) Make this up to a day in advance, reserving the cream and cilantro to add just before serving.

Chickpea and Pasta Soup

A substantial soup (if you use chicken stock instead of water, it will be even more so) and a perfect winter lunch or a solid dinner when teamed with a light grilled dish, like Grilled Swordfish Rémoulade (page 256) or “Grilled” Mackerel with Garlic and Rosemary (page 266). Remember, though, that chickpeas can take a long time to cook, so if you have any inkling you’re going to make this soup, cook the chickpeas in advance. (Canned chickpeas are also good, or you can use lentils for speed; see the variation.) This soup can be refrigerated for a few days and reheated before serving, but it’s best to add the pasta at the last minute.

Chickpeas in Their Own Broth, with Fried Bread Crumbs

A soupy appetizer (you can make it a little drier if you like) and a good one, a terrific example of making something delicious out of a few scraps. You must cook dried chickpeas yourself for this one; canned chickpeas will not cut it. Likewise, you must make homemade bread crumbs. Do these two things and you will love this dish

Spinach and Chickpea Soup

Most people seem to adore chickpeas, and one of their strongest attributes is that, unlike other dried legumes, they produce delicious cooking liquid. So if you lack stock for this dish, don’t worry about it. But—and this is true for the several chickpea recipes that follow as well as this one—the cooking time for chickpeas is unpredictable. Cook the beans the day before you plan to make the soup if at all possible, or at least soak them for several hours to reduce the cooking time (or, in a pinch, use canned chickpeas). Once they’re done, the cooking time is just a few minutes. If you are so inclined, this soup remains equally authentic and becomes more substantial if you add 1/2 to 1 pound browned sausage chunks. You can brown the sausage right before the onions, in the same skillet.

Red Lentils with Rice

Rice and lentils are both daily fare in much of India, but rarely are they cooked together. An exception is made for the quite-quick-cooking red lentils, which are prepared in a manner not unlike that used in the Middle East.

Rice and Beans, Korean Style

Every culture that relies on rice mixes other common ingredients into it, to boost both flavor and nutrition. Most people are familiar with Fried Rice (page 506) and Coconut Rice (page 516), but this recipe is quite different from those. If you make this dish with red beans only, use all the bean-cooking liquid for the rice; it will give it a lovely pink tinge.

Green Bean Soup with Mint

If you want a little crunch, process the soup without the green beans, then stir them back into the puree before serving. This is best served at room temperature, since heat will dull the mint’s bright flavor

Soupe au Pistou

Pistou is a garlic-basil paste almost identical to pesto—the names in fact are the same, just in different dialects. In France it’s used less to dress pasta than to thicken soups while heightening their flavor. Pistou is usually passed at the table so your guests can add as much as they like.

Potage de Lentilles à l’Oseille

Here sorrel brings both acidity and lightness to an often heavy mixture. You can substitute watercress or spinach for the sorrel to similar effect, especially if you add a squeeze of lemon at the end. Though it has only two primary ingredients, this soup is quite complex, particularly when you begin with good stock. The best lentils to use here are lentilles du Puy or other small dark green ones. Use the greenish brown variety only if you cannot find these.
