Orange-Pineapple Gelatin Salad

Buttermilk heightens the flavors of the fruit in this kid- and adult-pleasing salad or dessert.

Yogurt Brûlée with Blueberries

This breakfast treat looks so elegant, your family will think it took hours instead of minutes to prepare. You can also serve this as dessert, but caution is advised: You may be tempted to eat dessert first!

Pear and Goat Cheese Salad

Crunchy pecans and a mildly tart dressing enhance juicy, sweet pears topped with tangy goat cheese.

Ricotta and Blackberry Breakfast Sandwiches

These delicious, good-for-you breakfast sandwiches are reminiscent of traditional Danish pastries straight from the bakery.

Mini Cinnamon Stack Ups

Have fun at breakfast with this terrific taste combination of mini waffles, cinnamon-sugared fruits, and yogurt. Or serve later in the day with frozen yogurt as a different way to enjoy an old-fashioned ice cream “cone.”

Tropical Sunrise Smoothie

Does your morning routine need a wake-up call? This smoothie will energize you—and might even make you look forward to getting out of bed!

Cheesecake-Sauced Fruit

Turn a serving of your favorite fruit into a delectable dessert with an extra-easy sauce reminiscent of cheesecake.

Ambrosia Parfait

Here’s a modern twist to a comforting favorite. It’s perfect not only for dessert but also as a starter for a summer brunch.

Turkey Tortilla Soup

Use leftover turkey from the holidays for this festive soup, or for a grilled turkey version, use leftover turkey from the Grilled Turkey Cutlets with Pineapple—without the pineapple (page 162).

Lemon Mini Tarts

These creamy tarts will solve the problem of what to serve for dessert when you have company for dinner. Vary the yogurt and fruit combination to suit your family’s preferences.

Stacked Mushroom Nachos

These nachos use mushrooms instead of high-fat fried chips as their base. Plan on having plenty around—they disappear quickly!

Cheese-Filled Bell Pepper Boats

When the colorful allure of the many bell pepper varieties draws you in at the supermarket’s produce section, try this recipe for an unusual vegetable tray. The cream cheese mixture is also wonderful on celery, on cucumber rounds, or in hollowed-out cherry tomato halves.

Mini Vegetable Cheese Balls

Don’t let the small size of these cheese balls fool you. They’re loaded with flavor and crunch!

Dill and Sour Cream Dip

The subtle, fresh taste of dill is at its best when teamed with cucumbers. Cut some into spears, rounds, or wedges and try them with this super-simple dip.

Caramel Apple Sundae Snack

Though most caramel apples might be off limits, this sweet snack sure isn’t. It’s easy to throw together and great any time of the day . . . even for breakfast! Next time you go to a warehouse or club store, pick up some clear plastic containers with lids. You can make a few of these at a time and store them in your refrigerator for a few days so they’re ready when you are.

Peppermint Brownie “Pizza”

Ever since I created my Chocolate Chocolate Brownie cups, which are an even easier version of my brownies that Jenna Fischer from The Office raved about on The Tonight Show with Jay Leno, saying, “They played no small part in my recovery [speaking of her back injury],” I’ve been particular about eating only a select few varieties of brownies. Because mine taste like they are full of fat, I don’t see a reason to eat actual fatty ones that don’t taste any better. I will say, however, that when prepared as suggested as part of this recipe, the No Pudge! Brownies are definitely worth the calories. This recipe even shocked my team—it’s truly delicious, not to mention fun! To crush the peppermints, place the unwrapped candies in a resealable zip-top bag. Using the flat end of a meat mallet or the bottom of a heavy skillet, pound them until they are crushed into fine shavings. If you really want to save time, look for peppermint sprinkles near ice cream cones and ice cream toppings (brands such as Ken Craft and Wilton make them). They’re more expensive than buying the peppermints and crushing them yourself, but they’re a timesaver! If you’re not serving this pizza to your guests immediately, add the toppings to the brownie just before serving. If made too far ahead, the peppermints tend to run slightly on the whipped topping so it won’t look quite as pretty (though it will still taste delicious!).

Mexican Caprese Salad

When using fresh herbs, be sure to dry them thoroughly after washing them so they are fluffy, not dense, when chopped. You not only get a more precise measurement, but they’ll also distribute more evenly in your dishes.

Creamy Mustard Tossed Green Beans

This simple recipe actually makes quite an elegant side dish. Though the sauce contains only two ingredients, it has a complex flavor. Your guests will think you spent a ton of time, but you can have the dish ready in the few minutes it takes to steam the green beans.

Grilled Asparagus with Goat Cheese Crumbles

I love using goat cheese in my healthy cooking. Although it has 6 grams of fat per ounce, I find I don’t need to use nearly as much as I do of other cheeses since it has such a great strong punch of flavor. I’ve served this asparagus side at many a dinner party, and guests have always raved.

Mexican Mac & Cheese

The key to good mac and cheese is gooey cheese and the perfect creamy sauce. Here, I’ve simplified things to create this twist on a classic. Instead of thickening cream or milk, I grabbed a natural cheese sauce, then simply added a Mexican cheese blend to give it that must-have gooeyness.
