Chicken and Almond Meatballs in White Gazpacho

White gazpacho is a soup from the time long before there were tomatoes in Spain for making chilled red gazpacho, a familiar and beloved paean to summer. But there were almonds, garlic, chickens, and bread. White gazpacho is essentially a mild chicken soup made forceful, filling, and hearty with a garlic-almond mayonnaise and bread soaked in the broth. To make it more sumptuous, I add chicken and almond meatballs, echoing those same ancient ingredients. It is ultrarich. A bowlful with a side dish of sturdy-leaf salad garnished with orange slices suffices for a meal. A tip: The recipe calls for a total of 3/4 cup slivered blanched almonds, divided into 1/4 cup portions for three different steps. To facilitate the division, toast the whole amount of almonds in a microwave or toaster oven until the nuts begin to brown and have a toasty smell, 5 to 6 minutes, depending on how fresh they are. Set aside 1/4 cup of the toasted slivers for garnishing the soup. Pulverize the remaining 1/2 cup in a food processor until reduced to a paste. Divide the paste into two parts, one for the sausage, one for the soup.

Chicken and Matzo Meatballs in Rich Chicken Broth

Uncomplicated, straight from the heart of the cook to the mouth and belly of the diner via the stove, a bowl of matzo balls in chicken soup is a sure-bet comfort food. With chicken in the matzo balls and the homemade “twice-cooked” broth, that simple bowl of comfort food becomes a substantial meal. It is a good idea to make the broth and meatball mixture the day before, so that when you’re ready to eat, there’s not a long wait. Also, that way you can use the fat that congeals on top of the broth, the schmaltz, in place of butter in the matzo balls.

Chicken and Spinach Crépinettes

Crépinettes get their name from the veil fat that is used to wrap them. They were a classic at Pigby-the-Tail, one of the most requested of our sausages for uncountable neighborhood and family potlucks and summer grilling parties. It’s no wonder. A crépinette patty wrapped in its transparent caul with a whole basil leaf showing through is a thing of beauty. Caul fat is difficult to find, though that is changing with the renewed interest in charcuterie (see page 154). If you prefer to keep it simple, here is the modified recipe, caul optional. Made without caul, the crépinettes are equally delicious, though somewhat less mysterious without the umami the caul provides, and the lovely look is simulated by pressing a basil leaf on top of the patty just after cooking.

Toulouse Sausage–Stuffed Duck Legs with White Beans

On my brief sojourn in the Toulouse area, I traveled to many local villages and towns acclaimed for their charcuterie. Among them was Castelnaudary, a small village built of stone, close by the fairy-tale-like medieval castle of Carcassonne. The castle was a thrill; even more so was the cassoulet I enjoyed in Castelnaudary, known as the cradle of cassoulet. I mustered the nerve to ask the chef what his secret was. He graciously shared his version of “the cassoulet secret”: The kind of beans you use is crucial. They should be lingot beans, also called white kidney beans or cannellini beans, or coco beans, which resemble slightly elongated navy beans. Both are sweetly buttery and cook up soft and tender enough to soak up juices, but still hold their shape. Then, the beans must be allowed to cool completely in their cooking liquid before assembling the cassoulet. Overnight is best. Stuffed whole duck legs (drumstick and thigh combination) make a delectable sausage star for a faux cassoulet. To sidestep the lengthy process of curing the duck overnight then braising it in duck fat to make confit, the whole legs are sprinkled with a salt and herb seasoning and refrigerated for a few hours to allow the seasonings to imbue. The sausage is then stuffed under the thigh skin, making a single package of sausage and duck meat.

Chicken Broth

Homemade broth makes a world of difference for the better in any dish that calls for chicken broth. Happily, a light and flavorful one can be made with only chicken backs and wings and water, no other elements—carrots, onions, celery, herbs—required, and briefly simmered for one unattended hour. It’s worth making a large amount to have on hand because it stores well in the refrigerator under the protective layer of fat that solidifies on the surface when it is chilled. If the fat seal is not broken, the broth will keep for 3 weeks in the refrigerator. If you break the fat to use just part of the broth, reheat the remainder until the fat melts completely, then cool and refrigerate it, checking to be sure the fat seals the entire surface again. The broth can also be frozen for up to 6 months. In this case, the fat layer prevents ice crystals from forming across the surface. For thrift, I use backs and wings for broth. But, you can also employ legs, thighs, and breasts, use them to make the broth, then remove them to serve as part of another dish.

Chicken Stock

Homemade stock is the foundation of all truly great soups and stews. Not everyone has the time to make it, but if you do you’ll find it really makes a difference in your cooking.

Dirty Rice

This is the ultimate “anything goes” dish. All you need is some sausage and any kind of raw or cooked meat you might have on hand. We use a tasty mix of sausage, chicken, pulled pork, and ham. The only thing you can’t skip are the chicken livers. That’s what makes Dirty Rice dirty and gives it its deep, rich flavor. We’ve been servin’ it every Wednesday as a featured side, and we’ve found that Central New Yorkers really appreciate this frugal New Orleans specialty. It’s also good as a stuffing for Cornish hens, pork chops, or turkey.

Soulful Stew

Here’s a stew that comes and goes on our menu, rotating with a couple of other meat stews. It’s lighter than the others and is simmered with ten different vegetables. It’s healthy food for your meat-lovin’ soul.

Chicken & Sausage Gumbo

Here’s another good old Louisiana dish we transported north for our menu. We thought its distinctive spicy, earthy taste was just what our customers were cravin’. Our gumbo is thick like a good hearty stew, and although we’ve personalized it, we’ve still kept it related to all other gumbos by thickening it with Brown Roux (page 139). The flour toasted in oil makes a dusky mix that binds all the veggies, meats, and seasonings into a veritable swamp of broodin’ flavors.

Chicken & Ham Jambalaya

Back in the early days of the Dinosaur Bar-B-Que, I made a pilgrimage to New Orleans, and it seemed natural to bring some of the wonders of the Big Easy back up north. The thing that really grabbed me was jambalaya, a dish with infinite possibilities. There’s no one recipe for jambalaya because its whole reason for bein’ is to let the cook get personal and real creative with the bits of meat or fish hangin’ around in the fridge. You can give it your personal touch any way the spirit moves you. Try makin’ it with other veggies, throwin’ in some shellfish, messin’ with the seasoning—this is your chance to be a link in the evolution of one truly great leftover dish.

Bar-B-Que Layered Hash

If you were wonderin’ what to do with all that leftover pulled pork or brisket you smoked, or if you have some nice roast turkey hangin’ around, give this a try. It’s our only breakfast item and it goes great with a couple of eggs on the side.

Chicken & Zucchini Piquante

This one-skillet dinner is loaded with flavor and easy to prepare. Serve over some steamin’ Perfect Rice or your favorite macaroni. You can also substitute boneless, skinless chicken thighs for some real concentrated chicken flavor—love that dark meat!

Chicken-Fried Chicken

If you love good fried chicken, this is the quick version. It’s just like its namesake, “chicken-fried steak.” Breading up and frying a nice boneless flat piece of meat, whether it’s beef or chicken, will give you a meal in minutes. It makes a great main course, or try slappin’ the finished product in a crusty roll or even slicing it over a mess of salad greens.

Chicken with Andouille Sausage & Peppers

This is a variation on an old Italian dish called Chicken Scaparello, which is made with cut-up chicken, sausage, onions, and peppers simmered in a tomato sauce. Out of respect, we gave our version a different name and spiced the dish up a bit usin’ sausages from Louisiana and a good dose of the Mutha Sauce. Either way it’s good home cookin’. So make it yourself and eat hearty.

Chicken Vesuvio Dinosaur-Style

The last time I was in Chi-Town, I got the history of my favorite Chicago dish. It seems that the Italian immigrants who grew up in the shadow of Mount Vesuvio and then came to settle in Chicago developed this chicken and potato dish to celebrate the abundance of meat available in their new country, as well as their Neapolitan roots. We’ve given it a Dinosaur twist to get Vesuvio really smokin’.

Oven-Roasted Mojito Chicken

Home cooking doesn’t get any easier than this. So if you’re serious about getting maximum flavor for a minimum amount of effort, this Cuban way of preparing chicken is for you. The onions and Mojito Marinade melt together into a tasty sauce that mingles well with some of our Perfect Rice.

Chicken Exotica

Indian spices and tandoori cooking inspired this one. The spicy, yogurt-based marinade tenderizes skinless chicken breasts to perfection. They cook up so tender you won’t even need a knife.

Chicken Paprika a.k.a. “The Thigh Master”

I’m very partial to chicken thighs, with their silky, succulent flesh. Slathered in a BBQ sauce spiked with good Hungarian paprika and made velvety with sour cream, this is a sensuous dish on a cold winter night, especially when served with buttered noodles to sop up all the good sauce.

Chicken Steak Grandiose

Just like the name says, this is a big chicken dish. Grilled whole boneless chicken breasts are layered with eggplant, prosciutto, basil, provolone, and BBQ sauce for a heaping meal-size portion. For those with dainty appetites, the same approach can be applied to half chicken breasts. You might even want to come up with your own grandiose combinations, like grilled zucchini, oregano, and feta; grilled portabella mushrooms, bacon, sautéed onions, and Cheddar; or grilled tomatoes, sliced sausage, chopped cilantro, and pepper-jack cheese. Remember, just think big.

Crispy Chicken with Lemon-Sesame BBQ Sauce

This dish perfectly combines the bright, bold flavors of Asian spices, fresh lemon, and BBQ sauce. All you’ve gotta do is fry up some chicken thighs and dress them in a tart, clingy sauce. The result is some powerfully provocative flavors. This sauce also works well with grilled chicken.
