Lobster
I may be from a small town in south Georgia, but that doesn’t mean I don’t enjoy some fancy food, too. And just as I don’t expect people to turn their noses up at cheap pork shoulders that are delicious smoked, I don’t turn mine up at lobster tails. They’re expensive, but, man, are they good—especially if you cook the tails in the smoker. Try it.
Mullet
If you think I’m talking about the haircut—“business in the front, recreation in the rear”—you best move on to the next recipe. If you know good food, you’ve probably heard about mullet, which is a fish found worldwide in tropical and coastal waters and abundantly on both coasts of Florida and into Georgia. Mullet is a bony fish with light meat and a stout body—and it’s oily, so it takes especially well to absorbing smoke. Any good fishmonger should be able to get you some.
Steamed Lobster
I decided to make lobster the last recipe in this book so I could give myself the gift of a lobster dinner to celebrate. My father’s family in Montpelier, Vermont, were all passionate lobster-lovers. Being in an inland state, cut off from the sea, only made them more avid for a good lobster dinner, and they frequented The Lobster Pot on Main Street for every kind of celebration. My aunt Marian, after she became a widow, would often stroll down to The Lobster Pot to have dinner by herself, and it was there that she taught me the ritual of eating a lobster—sucking the juices and little morsels of flesh from each leg, and always saving the big claws for the last, because to her they contained the most delicious meat. So, for my treat, I stopped at Citarella’s in Manhattan and asked for a 1 1/4-pounder. The fishmonger held one up to demonstrate for me how lively the little lobster was as it wriggled and pawed the air with its tentacles. I was even asked whether I wanted a male or a female, and of course I said female, so I could enjoy the roe. But when I got it home, there was only the tomalley—the green-gray loose substance that is the liver; there was no roe. I looked in Julia Child’s The Way to Cook and realized that I should have checked first for the little swimmerets under the tail: the male’s are “clean and pointed,” whereas the female’s are “fringed with hair”—a test that is not easy to execute when the creature is wriggling desperately. I have always preferred steaming to boiling, because that way the lobster doesn’t get too immersed in water, and the small amount of steaming water becomes more intense. So I hauled down my largest pot, and arranged a collapsible steamer inside it.
Sautéed Scallops
As a child, and well into adulthood, I was allergic to scallops. But little by little I got over it. It can happen; the body does change. So I’ve been making up for my years of deprivation and quite often treat myself to a full plate of carefully cooked sea scallops. I remember Julia Child emphasizing how important it was to use a large pan, so the scallops would have plenty of space to brown. And because they needed to cook over high heat, clarified butter was essential. We were once having lunch at an elegant French restaurant in New York, which will be nameless, and Julia ordered scallops. After her first bite, she put down her fork and proclaimed that the chef hadn’t used clarified butter. As she tucked away most of the flawed dish, she emphasized again the importance of using clarified butter when browning over high heat, although she did admit that most Americans aren’t going to take the trouble to clarify their own butter, and that it was okay for the home cook to use half butter and half light vegetable oil, which would temper the burning. I am always careful to watch the pan, as if Julia is still looking over my shoulder, whenever I make this dish.
Soft-Shell Crabs
Soft-shell crabs are one of the great luxuries of spring. They may be expensive if you’re feeding them to a crowd. But just for one person, why not treat yourself ? If the soft-shell crabs are good-sized, I’ll eat only two, but I prefer the small ones and can devour three easily along with a spring vegetable. I usually buy them from a fishmonger at the end of the day. That way, he can do the killing and the cleaning, because they will be popped into the pan as soon as I get home.
British Kedgeree
Jane Grigson points out in her book English Food that this dish, borrowed from a Hindu creation of rice and lentils called khichri, became a favorite breakfast item among the Brits. However, she warns, it is only as good as the fish that goes into it, so don’t use tired leftovers. But good fish that has been recently and carefully prepared (i.e., not overcooked) is fine, and be generous with the butter and the cream. I have made this with salmon, flounder, and red snapper—all good.
Fish Salad
You can use almost any kind of leftover fish in this salad.
Corn and Salmon Pancakes
I concocted these pancakes one night when I happened to have an ear of corn left over and a small piece of salmon I’d cooked the night before. It turned out to be a lovely, natural marriage of flavor
A New England Bouillabaisse
This mock bouillabaisse is so scrumptious that you would never know it had anything “left over” in it. You do have to stop and pick up a dozen or so fresh mussels and a few clams the day you’re making it, but otherwise everything else is at hand, and you can put this together in half an hour. I am assuming, of course, that you have a good fish stock in your freezer; if not, plan to make this after you’ve had a lobster or a supper of steamed mussels and have some of that intense lobster or mussel broth left. Otherwise use clam juice, diluted by Half with water because it is quite strong.
Lobster Bisque
This is a rich, comforting soup to make if you have treated yourself to a whole steamed lobster (see page 254). You should have about 2 cups of lobster broth left in your pot after steaming, so be sure to save it. Also, check and scrape out any bits of lobster flesh still lodged in the shells, and use them as a garnish.
Steamed Mussels
Steamed mussels make a lovely dish to eat alone slowly, plucking the plump flesh from the shells as messily as you like and sopping up the heavenly liquor with chunks of French bread.
Sautéed Shrimp
Make this simple shrimp dish often, but only recently did I discover how good it is served on a bed of farro (see page 190), which Lidia Bastianich introduced me to. It’s also delicious with rice, grits, or polenta. You’ll get a good two meals out of this amount.
Roasted Branzino
When I spotted this appealing whole fish at Citarella, just about a pound, I thought that it would take well to roasting, and it did. I love to tackle a whole fish by myself because it is such pleasantly messy work. I made sure the fishmonger left the head on when it was gutted and scaled, because I wanted to relish the cheeks, as Irene Kuo’s husband taught me to do when we went out for a Chinese dinner to celebrate the publication of her book, The Key to Chinese Cooking. He carefully plucked out the cheeks with his chopsticks and offered them to me ceremoniously.
Fish Cakes
Those little bits of fish that you didn’t finish, or that you purposely put aside for another meal, take on new life in these scrumptious fish cakes. My rule of thumb is to use equal parts cooked fish and potatoes. If the fish you are using has been fried, scrape off the crusty exterior, because you want the cakes to be smooth inside.
Pan-Seared Salmon
Salmon is probably the fish that Americans cook most often. It is readily available, quick to prepare, and can be dressed in many different ways. I always buy a bigger portion than I need, so I have some for the next day. I find searing the fillet in a hot skillet on both sides, and then letting it finish in the oven briefly, is a good way to keep the salmon tasty on the outside and moist inside.
Broiled Bluefish or Mackerel over a Bed of Artichoke Hearts and Potatoes
Bluefish and mackerel are both rather fatty fish, and they take well to broiling, particularly when the fillet sits on a bed of flavorful vegetables and they exchange flavors. I also like this preparation because it requires only one pan. If it’s a handsome fireproof baking dish, it can come right to the table. Otherwise, scoop everything up with a spatula and serve on a warm plate.
