Cracked Wheat Waffles

Nutty cracked wheat (okay, it’s technically bulgur) adds a welcome touch of texture to these waffles. Made with whole wheat flour, the waffles are a bit healthier and heartier than standard ones without being the least bit leaden. Spicy cinnamon and complex allspice lend their flavors to the creamy butter. A sweet blueberry syrup drizzled—or ladled—over the waffles makes the whole dish special. I wouldn’t recommend making the syrup with frozen berries as they are too wet to burst as the fresh berries do. If you have extra berries left over, sprinkle them on top before serving.

Steel-Cut Oatmeal

Bland and mushy are forever banished; this is oatmeal for grown-ups. Steel-cut oatmeal (also referred to as Irish oatmeal) has a wonderfully nutty taste and a texture that is at once creamy and chewy. As a kid I always loaded my oatmeal with raisins and brown sugar; now I cook tart apple slices with the same ingredients for an unexpected yet familiar treat to layer with the oatmeal. A sprinkling of turbinado sugar and a quick hit from the broiler create a sweet brûléed crust and an extra touch of decadence. Crack the crust with your spoon and pour in the cinnamon-scented cream . . . oh yeah, you’ll be in love with oatmeal after this.

Miss Stephanie’s Biscuits

My beautiful wife, Stephanie, may live in New York, but when it comes time for breakfast, she is still a Texas girl through and through. She can put away a plate of biscuits, sausage, and cream gravy like nobody’s business. This dish was created in her honor. I highly recommend making your own sausage patties; it’s so easy to do, and it puts you in total control of what you are eating. Think fresh herbs and garlic as opposed to the nitrates and excessive sodium you’ll find in many supermarket sausages. A healthy dose of black pepper punches up the flavor of the silky cream gravy.

Eggs Benedict With Biscuits and Cajun Hollandaise

Eggs Benedict is the quintessential dish of the New York Sunday brunch. I like to put a southern spin on the classic, starting with a fluffy buttermilk biscuit. A Cajun blend of seasonings gives a kick to the luscious hollandaise sauce, which is right at home with New Orleans’ beloved tasso ham. Tasso is cured and hotsmoked pork shoulder crusted with a spicy blend of flavorings such as garlic and cayenne pepper. (If you can’t find tasso, you can try substituting slices of Italian capicola, which is prepared similarly.) Griddled tomatoes are an addition to, not a substitution in, the original Benedict, but I like the slightly sweet, fresh balance they bring to the richness of the other components.

Blue Corn Fried Eggs

A Mexican-inspired brunch is my favorite way to recover from a long night out, and this spin on huevos rancheros is how we serve it up at Bar Americain. This plate is layered with taste and texture, from the crisp, salty tortillas up to the cool and chunky guacamole on top. Savory black beans make this dish extra satisfying, while the chile sauces pump up the color—and heat. I like the slightly sweet, nutty flavor of blue corn tortillas, but if you can’t find them, yellow ones are an easy substitute.

Gold Corn Johnny Cakes

Native Americans showed the Pilgrims how to cook with maize (corn) and probably taught them to make johnny cake, a dense cornmeal bread whose thick batter is shaped into a flat cake and baked or fried on a griddle. These cakes (basically just fried corn bread) are the perfect vehicle for many toppings. One of my favorites is barbecued duck and cranberry butter. Feel free to make your own cranberry relish, use what’s left over from your holiday meal, or purchase a good-quality prepared one.

Goat Cheese and Onion Tart

This classic French bistro dish is a delicious way to start a meal. Just as good at room temperature as it is hot, it’s a versatile appetizer that can be made ahead of time and even served as cocktail party fare. Thin rings of onion, caramelized until sweet and golden brown, are covered with a rich and eggy custard, topped with tangy crumbles of fresh goat cheese, and baked in a delicate crust much like a quiche. (In fact, this would also do very well at brunch!) Home-grown ingredients like local onions and a good American goat cheese, such as one from Coach Farm or California’s Laura Chenel, steer this tart from purely French to positively American. A cool salad of tender mesclun greens, lemony parsley, delicate chervil, and tarragon is tossed in a bright vinaigrette made with a reduction of fruity Pinot Noir. Plate the salad directly atop the tart so that each bite contains a bit of buttery crust, savory filling, and fresh herbs.

B and Tea

When I am in Kentucky, there are two things that I drink a lot of: sweet tea and bourbon. So, when we were creating our cocktail menu for brunch, it only made sense that I would pair my two favorite southern specialties in one glass.

Pickled Mary

The Bloody Mary is probably the most popular brunch cocktail in the United States and with good reason; spiced-up tomato juice and vodka garnished with a stalk of celery—the classic version—is a perfect weekend pick-me-up. There are many variations of the Bloody Mary that contain everything from beer to beef bouillon. My version has a southwestern theme, where roasted tomatillo sauce—spiked with vinegar and pickled horseradish—joins tomato juice to give the drink great body while adding a slightly tart, slightly smoky flavor.

Sweet Potato Biscuits

Cooked sweet potato adds body and flavor to these biscuits, but they are more savory than sweet—just right for buttering and sopping up gravy of any kind. Try them with Not Really Son-of-a-Bitch Stew (page 221), Tom Perini’s Chicken-fried Steak (page 227), or Beer-braised Short Ribs (page 222).

Avocado Pancakes with Crème Fraîche and Trout Roe

These delicate, pale-green avocado pancakes come from my former big-city life as executive pastry chef at Anthony’s, owned by Tony Vallone, one of Houston’s top restaurateurs. The recipe for these savory pancakes was shared by a sous chef there, and I fell in love with them. We served them with crab and pico de gallo. In this version, I top them with homemade crème fraîche and trout caviar, a gorgeous, orange, medium-grained roe. (It is also more reasonably priced than many caviars and sustainably raised.) Incredibly simple, the pancakes must be made at the last minute and served warm.

Party-in-a-Shot-Glass Oyster Shooters

My friend Yvonne and I tested my Bloody Mary oyster shooters and got lightly “toasted” at the same time. We kept draining our shot glasses and after each one we figured we needed one more, just to make sure the seasoning was right. And besides, each shot glass contained dinner (an oyster and a vegetable) and a drink (a spot of vodka), so why stop before our appetites waned? Before we knew it we’d moved from testing to party mode. We laughingly dubbed our oyster concoction a “party in a shot glass,” and the name stuck. One thing is sure: start slurping these and you’ve got a party whether it’s for just the two of you or for a crowd of your best buddies.

Butternut Squash Bread

Everyone makes zucchini bread, but somehow it feels so blah to bring another loaf of this admittedly delicious stuff to a potluck. Here’s a new take on the old theme, using butternut squash, which lends a golden hue and a delicate flavor to the bread. Large loaves, which can be sliced on-site, work beautifully as potluck fare. Wrapped mini loaves tied with ribbons and adorned with handwritten tags make memorable party favors. For family reunions, spell out the family name, the date, and the reunion site, such as “Wright Family Reunion, May 2009, Elderville Churchyard.” Just about any event, from wedding showers and baptisms to graduations and birthday parties, can be commemorated this way, leaving guests with a nonperishable memento that can be saved in scrapbooks long after the last scrap of bread disappears.

Deviled Eggs

Here’s a portable egg favorite for those who like eggs and bacon for lunch or dinner (who doesn’t?) that’s certain to disappear at any gathering. The recipe comes from my friend Penny Perry-Hughes, co-owner with husband, Jerry, of Der Kuchen Laden, a first-rate kitchen shop located just across Main Street from Rather Sweet. As a student at London’s Le Cordon Bleu years ago, she remembers promising to bring her family’s prized deviled eggs to a party thrown by a group of fellow Americans. “My mother almost died laughing that I called from London to get her deviled egg recipe,” she says. Worst part was, Penny prepared the deviled eggs in advance, but got sick just before the party and couldn’t go. The eggs went without her, never to be seen again.

Savory Smoked Tomato-Asiago Scones

My friends Larry Butler and Carol Ann Sayle, owners of Boggy Creek Farm in Austin, sell the most fabulous smoked tomatoes. I’ve used them to enhance meat dishes and salads. But I’d never tried them in a bread or scone, so I came up with this recipe to showcase them. As soon as the first fragrant scone came out of the oven, I knew I’d be delighted with the result. I even devised a way to use the day-old scones to stuff my Three Pigs pork tenderloin (page 33). As much as I love Larry’s smoked tomatoes, I must admit the scones are delicious made with any high-quality sun dried tomatoes.

Coconut French Toast with Bananas Foster

I placed this dish in the dessert chapter, but it’s so filling it might be best thought of as a brunch dish, or perhaps dessert-for-dinner. Adding sweetened bread crumbs to the preparation makes a French toast with extra crunch and a dark exterior, a nice contrast to the light, moist interior. I’ve turned the French custard toward the tropics by using coconut milk, and taken the topping to New Orleans with the classic combination of bananas, butter, rum, and pecans. Any other seasonal fruit can work: sliced apples or peaches sautéed in butter, fresh berries, or, when the fruit bowl is empty, your favorite jam.

Austin-Style Breakfast Tacos

I have to admit, it was a little strange writing a recipe for breakfast tacos, as much as I love them, because I think of them as so free-form. In my college days in Austin, when I powered my way to class by eating a couple of these every morning, I would change up the order pretty much each time. Cheese and salsa are must-haves, but otherwise my favorite combination is potato, egg, and chorizo. But you can also add (or substitute) black beans, avocado, bacon, and the like, in whatever lineup gets you going. Leftover breakfast foods, such as hash browns, are welcome additions, too. This makes two hefty tacos: a hearty breakfast or brunch.

Puffy Duck Egg Frittata with Smoked Salmon

I’ll admit to a tendency toward obsession, especially when it comes to food, as my experience with duck eggs proves. I bought my first dozen a few years ago at the Saturday farmers’ market at 14th and U Streets in Washington, D.C., and from the first time I fried one, I was pretty much hooked, buying duck eggs and only duck eggs and going through a dozen every week or two, at least while the ducks were laying. I’ve since veered back toward moderation, especially after remembering that these richer, more flavorful eggs are also higher in saturated fat and much higher in cholesterol. Still, I like to splurge every now and then, and this puffy frittata is one of my favorite ways. It also illustrates the magical properties of egg whites as a leavener; the simple process of separating whites from yolks, beating the whites to the soft-peak stage, and folding the two together results in a light-as-air texture, something between a frittata and a soufflé. Nonetheless, you can use these same ingredients in a more straightforward frittata; instead of separating the eggs, just follow the method for the Mushroom and Green Garlic Frittata (page 32). And if you can’t find duck eggs, chicken eggs work fine here, too.

Shrimp and Potato Chip Tortilla

I don’t make a habit of having potato chips in the house, because I really don’t have much self-control around them. But when I read in Anya von Bremzen’s go-to cookbook, The New Spanish Table, that chef-genius Ferran Adrià makes a tortilla de patatas (that glorious traditional Spanish omelet) with potato chips, I was tempted to buy some. That same year, 2005, my friend, chef José Andrés, a protégé of Adrià’s, also included a potato-chip tortilla recipe in his energetic book, Tapas: A Taste of Spain in America, so the decision was obvious. It turns out that this humblest of dishes, one of my favorites when I traveled in Spain, was perfectly easy to scale down to single-serving size. To justify its place on my dinner table, though, I added shrimp to make it a meal. Eat with a green salad or other crisp vegetables on the side. If desired, spoon some Red Pepper Chutney (page 17) on top.
