Butter-Blanched Mustard Greens
As a rule, I season my greens in direct proportion to their degree of bitterness. To mellow the edge of mustard greens without overwhelming them with seasoning, I use this technique of cooking them in salty boiling water with butter melted into it. It infuses the greens with tons of flavor, but keeps their natural edge intact. If you love that hot, mustardy bite, be sure to add the mustard oil at the end.
Sesame-Lime Roasted Mushrooms
Hen of the woods, also known as maitake, are my favorite mushroom. They’re as meaty and rich as steak and they make a great side dish. You can also try this technique with oyster mushrooms in clusters or even shiitakes, both of which will cook more quickly. The seasonings couldn’t be simpler, but the unusual combination of sesame, parsley, and lime is utterly delicious.
Fresh Corn Pudding Cake
My version of corn “cake” is pure corn. There’s no flour, eggs, or any other binding element—the natural juices of the corn are starchy enough to hold everything together as a tender, custardy whole.
Buttered Asparagus with Lemon and Parmesan
People often ask me why the asparagus in my eponymous restaurant tastes so much better than similar-looking spears they’ve had elsewhere. The answer is simple: We cook each batch to order. Most kitchens blanch the asparagus early in the day and then reheat it just before serving; a lot of flavor is lost that way. This is one of the first lessons my chef de cuisine Mark Lapico teaches new cooks at my flagship. Once you try this recipe at home, you’ll never throw your asparagus in ice water again. Of course, you can make this dish with olive oil, but it’s especially good with butter.
Seared Steaks with Buttery Hot Sauce
This dish is unbelievable. It may just be one of my favorite ways to eat steak. The complex depth of floral, almost fruity flavors in this hot sauce shines when served with a simply grilled steak and cuts through the richness of the meat.
Soy-Syrup Roasted Duck
My alsatian upbringing and my time in Asia often merge in my cooking. This take on classic Cantonese roasted duck pairs beautifully with Sweet and Sour Cabbage (page 193). I love when the soy-infused duck juices run into the tender vegetables.
Heirloom Tomato Crostini
Make this quintessential summer dish when ripe, fresh tomatoes and fragrant basil are abundant at farm stands (or in your garden). Seek out an artisan sourdough to complement them. Be sure to assemble these as soon as the toast is ready. The hot bread releases the juices and tangy sweetness of the tomatoes.
Garlicky Greens
You may not feel like dealing with a big mess o’ greens when you’re in a huge hurry to eat, but if your main dish is a breeze and you have a few minutes to spare, it’s a great investment of time. Recently, I fell in love with kale, so preparing a batch in this manner no longer seems like a big deal. Greens—especially kale and collards—provide a reliable source of calcium for vegans. This is a good way to prepare Swiss chard, kale, or collard greens.
Fingerling Fries
Here’s a quick and clever way to make potato fries without a lot of peeling and cutting. Fingerling potatoes, if you are not familiar with them, are small potatoes with a long, narrow shape—hence their name. They come in several varieties; I like to use organic golden fingerlings like Russian Banana. These are ready, from start to finish, in about 20 minutes.
Cheese Grits with Corn
Here’s a tasty and speedy side dish my family loves. It’s a good accompaniment to bean dishes, and is a nice change of pace from potatoes or rice.
Cinnamon Sugar Crumb Topping
If your family has a favorite kind of fruit pie, this traditional crumb topping is a great way to mix things up on top while keeping the Traditional Pastry Piecrust (page 5) on the bottom. It adds a sweetness and texture that blend wonderfully with a number of fruit pies, including Country Apple Pie (page 19), Blueberry Pie (page 27), and Peach Crumb Pie (page 43), to name just a few. This crumb topping can be made ahead of time and kept in the refrigerator for up to five days before use.
Graham Cracker Crust
Extremely simple to make, this crust infuses pies with an unexpected sweet honey taste and a great, crunchy texture.

Macadamia-Coconut Crumb Topping
This is not your average pie topping. Macadamia-Coconut Crumb screams “summertime,” adding a refreshing tropical twist to even the most classic pie recipes. This topping really enhances pineapple- and mango-based pies (see Pineapple-Mango Pie, page 57), but works well with any tropical fruit pie recipe. It will also transform Peach Crumb Pie (page 43) or Blueberry Pie (page 27) into an extra special dessert.
Oreo Cookie Crust
Talk about having your cookie and eating it, too! Be sure to try this crust with classic Chocolate Cream Pie (page 102), Coffee–Heath Bar Crunch Pie (page 118), Chocolate–Peanut Butter Dream Pie (page 104), and Candyland Pie (page 137). For an especially simple treat, you can fill this crust with vanilla ice cream—it’s the easiest ice cream pie you could ever hope for.

Syrup can be made up to one week in advance; refrigerate in an airtight container until ready to use.
