Ginger Pickled Beets
Serve these beets as part of a picnic platter or relish tray, or use them in sandwiches or salads. Golden beets work as nicely as red ones. Leaving beet tails and an inch or so of the stems intact helps minimize the loss of color (as well as flavor and nutrients) during cooking. Trim and peel the beets after they’ve been boiled; the skins will come off easily.
Marinated Baby Artichokes
These make a wonderful addition to any summer salad or antipasto. They can also be served as a side dish with roasted or grilled lamb.
Perfect Gravy
For the best poultry gravy, do not roast the turkey or chicken in a nonstick roasting pan: It keeps the flavorful bits of meat and skin from cooking onto the pan.
Lobster Stock
Use this stock as a base for dishes such as seafood chowder, bisque, stew, and risotto.
Yogurt Parfaits with Blueberries and Lemon
You can prepare the blueberry sauce and the lemony yogurt up to 2 days ahead, and refrigerate both in airtight containers. To serve, simply spoon the layers into juice glasses and garnish.
Dashi
Dashi is a simple stock integral to Japanese cooking. The broth is used in both cold and hot soups and is delicious warm, all on its own. The ingredients may be found at an Asian grocer.
Steel-Cut Oat Porridge
Steel-cut oats (also called Irish or Scottish oats) take longer to cook than rolled oats but are creamier and chewier.
Corn Relish
This colorful relish is delicious with grilled chicken or shrimp. It also pairs well with the piquant flavors of quesadillas and crab cakes.
Coddled Eggs with Fines Herbes
The easiest way to coddle eggs is to place them in egg coddlers, special containers with tight-fitting lids, but you can also use ramekins or custard cups covered tightly with foil. Fines herbes is a combination of chopped fresh herbs, most often those below, but sometimes including others such as marjoram or savory.
Mole Sauce
This classic Mexican sauce is often used in enchiladas or served with tamales.
Cranberry Sauce with Dried Cherries
You can substitute dried cranberries or raisins for the dried cherries in this recipe.
Chickpea and Spinach Spread
Make a nutritious lunch by spooning this spread into whole-wheat pita halves and layering with tomato slices. Or, for a cocktail hour snack, dab a small amount on cherry tomato halves.
