Torte aux Carottes de Pâque

I have always felt that cooking is the time to tell stories. In the sixties, when I learned to make this Passover carrot torte from Ruth Moos in Annecy, we talked about lots of things, but never about World War II. When I cook this torte now, after her death, I tell the story of how brave she was during the occupation. Not only did she help so many Jews trying to flee, but she had a narrow escape herself once. When the Annecy police warned the Mooses that the Gestapo was looking for her husband, Rudi, he went underground, hiding between the pork sausages and hams in a butcher’s smokehouse. Looking for him, the Gestapo went to the hotel where the Mooses had been hiding in nearby Talloires. Ruth, walking outside for a quick breath of fresh air while her tiny daughter was sleeping upstairs, turned around to see the Gestapo agents entering the lobby. In order to sneak past the guards, she grabbed some sheets from a chambermaid and, posing as a maid herself, climbed the stairs, passing the Gestapo. Terrified, she snatched her baby and fled to safety.

Tarte au Citron

When I was a student in Paris, I became hooked on intensely tart yet sweet French lemon tarts, and sampled them at every pastry shop I could find. I still love them, especially when they are bitingly tart.

Tarte à la Rhubarbe Alsacienne

“I’m not much of a cook,” Michèle Weil told me as she ushered me into her charming kitchen in a residential section of Strasbourg. Fresh basil was growing on her kitchen windowsill, and paintings from the Jewish School of Paris adorned the walls. “But,” she continued, “I have to cook. All French women cook.” A full-time pediatrician and the mother of three boys, Michèle is smart enough to know she can’t do it all. On medical call before we arrived for dinner, she quickly pulled from the freezer a package of hunks of frozen salmon and cod, bought at Picard Surgelés. Then she boiled some potatoes, put the fish in the oven, and opened a carton of prepared Hollandaise sauce, which she microwaved and poured over the baked fish. Putting this together with a green salad with tomatoes and her homemade vinaigrette, she had made a quick and balanced dinner. Like all working women, Michèle has to make compromises. “My mother would never have given you frozen food,” she apologized. “But, no matter how busy I am, I would never buy desserts. I always make them,” she told me as she presented a free-form rhubarb tart that she had made before going to work. It seemed that every Jewish cook I visited in Alsace served me rhubarb, the sour-tasting sign of spring. Unlike Americans, who almost always marry tart rhubarb with strawberries and lace the two with large quantities of sugar, French cooks make a less sweet tart using only rhubarb. They peel the stalks first, which I do not. I think it might be one of those French fetishes, like always serving radishes with butter, or tomato juice with celery salt. Alsatian home cooks also serve their tart with a delicious custard topping made from cream and eggs.

Baba au Rhum

Baba is the yeast pastry that became familiar in Lorraine in the early nineteenth century and is eaten, as described above, by the Jews of Alsace for Purim breakfast; it was sometimes confused with Kugelhopf. The French gilded the lily, dousing the dry baba with rum—a novelty from America. Today babas are baked and served two ways, in either a large or a tiny bulbous mold. I adore baba soaked in rum and order it whenever I can. After tasting an especially light baba in a tiny sixteen-seat restaurant called Les Arômes in Aubagne, I asked the chef, Yanick Besset, if he would give me his recipe, and here it is. As you can see, a good baba dough itself contains very little sugar, the sweetness coming from the sugar-rum bath spooned on after baking.

Kugelhopf

Kugelhopf, seen in every bakery in Alsace, is the regional special-occasion cake par excellence. The marvelous nineteenth-century illustration by Alphonse Lévy shows how this tea cake, which he calls baba, was also revered by the Jews of Alsace. Kugel means “ball” in German, and hopf means “cake” in Alsatian. This cake is found all over Germany, Austria, Hungary, and parts of Poland. According to food historians Philip and Mary Hyman, a Kugelhopf is first mentioned in German texts in the 1730s, where it is described as a cake baked in a mold shaped like a turban. I suspect that this cake went back and forth throughout the Austro-Hungarian Empire with travelers and cooks, and possibly came back to Lorraine as baba, also a turbaned cake in its original form. Sometimes kugelhopf is raised with yeast; some later versions use baking powder. It may contain raisins, or a combination of raisins and almonds. Kugelhopf molds are as varied as the myriad recipes. You can easily find kugelhopf molds at fine kitchen-supply stores, or you can use a small-capacity Bundt pan. Be careful to watch the cake as it cooks, since baking time will vary depending on the size and material of your pan, and you do not want to let the cake dry out.

Tarte à la Compote de Pommes

My first taste of a French applesauce tart was in a convent in Jerusalem many years ago. When I was visiting Biarritz recently in late autumn, I was delighted to taste it again, at the home of Nicole Rousso. She learned how to make the tart from her grandmother, who came from the Vosges Mountains. Nicole has a penchant for bio and healthy products, and uses fresh grapes as a sweetener in the applesauce. I love her elegant French touch of thinly slicing an apple and arranging it on top of the applesauce before baking.

Tarte au Fromage

No large sign—just a plaque next to a simple security button—tells you that this is the gate to a simple building housing the Cercle Bernard Lazare. The center was named in memory of Bernard Lazare, who, during the Dreyfus Affair, was a left-wing literary critic, anarchist, Zionist, and newspaper editor. He bravely defended Captain Dreyfus, and won over Jewish artists such as Camille Pissarro to the cause. The center sponsors Jewish cultural events, choosing not to advertise its location because of previous anti-Semitic attacks. When I entered this very bare-boned building, it was full of activity. Jeanine Franier came out of the kitchen to greet me, bringing along a waft of the delicious aromas from her oven. Every Thursday, before the center’s weekly lectures, she cooks. She believes that people listen to lecturers more attentively if they know a little food will be served. Regardless of what her staff cooks as a main course, this cheesecake from her Polish past is served for dessert. It has become an integral part of the lectures, and was published in the Cercle’s cookbook, called Quand Nos Boubés Font la Cuisine (When Grandmothers Cook), which she wrote in part as a fund-raising device, in part as a way of preserving a culture that is rapidly being forgotten. The cheesecake reminds me of many I ate all over France, including the one at Finkelsztajn’s Delicatessen in Paris. It tastes clearly of its delicate component parts, unlike the creamy block of cheesecake with a graham-cracker crust we find in the United States.

Gâteau de Hannouka

Danielle Fleischmann bakes this apple cake in the same beat-up rectangular pan that her mother used. Known as a “Jewish apple cake” because oil is substituted for butter, it is called gâteau de Hannouka in France. When Danielle makes the cake, she uses very little batter, and half sweet and half tart apples, a combination that makes a really tasty version of this simple Polish cake. Although her mother grated the apples, Danielle cuts them into small chunks. I often make it in a Bundt pan and serve it sprinkled with sugar.

Charlotte or Schaleth aux Cerises

This classic charlotte or schaleth aux cerises is adapted from Françoise Tenenbaum, a deputy mayor in Dijon who is responsible, among other things, for bringing meals on wheels to the elderly poor. At a luncheon in the garden of a fifteenth-century building where the film Cyrano de Bergerac, with Gérard Depardieu, was filmed, Françoise described this Alsatian version of an apple, pear, or cherry bread pudding that she makes for her family. Starting with stale bread soaked in brandy, rum, kirsch, or the Alsatian mirabelle liqueur, it is baked in an earthen schaleth mold or, as Escoffier calls it, a “greased iron saucepan, or a large mold for pommes Anna.” Earlier recipes were baked in the oven, for 4 to 5 hours. Françoise bakes hers in a heavy cast-iron skillet or pot for less than an hour, at Passover substitutes matzo for the bread, and, except during cherry season, makes hers with apples.

Gâteau de Savoie

Gâteau de Savoie is one of the earliest French cakes to use whipped egg whites as a leavener. Savoie is the mountainous area between Italy and France, long used as a travel route, and home to many Jews from the twelfth century on. The area was first integrated into France in 1792. The similarity between the gâteau de Savoie, pan d’España, and Italian ladyfingers (also known as savoiardi) leads me to believe that the recipe may have traveled throughout the Mediterranean with Sephardic Jews and other travelers. This sponge cake tends to dry out after only a day, but it can also absorb a large amount of liquid. Serving it with a homemade fruit syrup, or just fresh strawberries with a little sugar, will keep it moist.

Frou-Frou Chalet

One of the cooks highlighted in a day celebrating Jewish food history and the presence of the Jews in France was Huguette Uhry. I first noticed her intriguing recipe for frou-frou chalet on the Web site www.LeJudaïsmeAlsacien.com. Similar to a light, caramelized apple tarte Tatin, it is traditionally served at the dinner prior to the fast of Yom Kippur. When I called Madame Uhry, she walked me through the recipe and told me that frou-frou means “the rustling of silk” or “to make a fuss,” and a charlotte—or, as she spells it, chalet—means a kind of apple cake. You can substitute Passover cake meal for the flour.

Chocolate Almond Cake

This recipe for chocolate-almond cake is four hundred years old, and was passed down orally in one Bayonne family from mother to daughter in Spanish, Ladino, and then French. The accent of rum was probably introduced in the seventeenth century. My guess is that at first the eggs would have been whole, and later separated, the whites whipped to give it more height, probably in the eighteenth century. This cake can be made with matzo cake meal for Passover.

Molten Chocolate Cake

Recently, a number of stylish kosher restaurants have opened in Paris. One is the superchic Osmose, which calls itself a fusion and health-food restaurant. When I dined there, it was packed with well-dressed young French couples who could clearly afford the steep prices. The food, prepared by French-born Jewish Tunisian chef Yoni Saada, is delicious and sophisticated. Our meal began with a long, narrow plate filled with cumin-roasted almonds, fava beans, and tiny olives, and a tasty carrot-and-mango soup served in a champagne glass. And for dessert: an extravagant plate with that now classic molten chocolate cake and little marshmallow lollipops. Molten chocolate cake began as a simple French birthday cake that everyone’s grandmother made until the Alsatian chef Jean-Georges Vongerichten accidentally undercooked one. To his surprise, the guests loved it. An instant classic was born, now found just about everywhere, even at this chic kosher restaurant in Paris. The beauty of this cake is that the batter can be made ahead, poured into a cake pan or muffin tins, refrigerated, and baked 10 minutes before serving.

Tian of Zucchini, Spinach, and Rice

When I was visiting the Luberon, we wound our way up to the top of the hillop village of Bonnieux and stopped at the Musée de la Boulangerie. There, in an ancient house, the history of bread and baking is traced. Among the ancient pots and pans were shallow unglazed earthenware bowls called at the museum “tians,” which were and are used much like Dutch ovens for cooking vegetables in the embers of a fire. In the south of France, there are many recipes for tians, layered casseroles of vegetables sometimes mixed with eggs and sometimes with rice and served in the Jewish way as a main course for a dairy meal. In this recipe, a nice substitute for the spinach would be Swiss chard, also a vegetable used since antiquity.

A Jewish Twist on Tarte Flambée

If anything is typical of Alsace, it is tarte flambée, a pizzalike flat bread covered with runny white and tangy cheese (a thin mixture of farmer’s cheese, crème fraîche, heavy cream, and fromage blanc or Gruyère, depending on your preference) and a sprinkling of diced onions and lardons. Dating back hundreds of years, tarte flambée is served everywhere in Alsace, with connoisseurs arguing about their favorite versions. In the old days, the farmers would take leftover bread dough, roll it out paperthin, spread some heavy cream mixed with egg over it, scatter some lardons or ham and onions on top, put it in a hot, wood-burning oven, and—voilà!—dinner was ready. The tradition still stands today, and tarte flambée is particularly enjoyed accompanied by a green salad as a simple Sunday night dinner. At the end of a late Sunday afternoon in April, I was driving Yves Alexandre, a traveling salesman who loves to cook, near fields resplendent with signs of spring—white asparagus and rhubarb, and yellow rapeseed flowers (more commonly known in the United States as the flowers that produce canola). We stopped at Le Marronnier, a charming winstub in Stutzheim, a little town about ten miles from Strasbourg. It was here that I tasted my first tarte flambée. Most of the patrons were seated at outdoor tables in the cobblestoned courtyard with wisteria climbing over the brick walls. A marronnier, a sprawling chestnut tree, stood smack in the center of the patio. “You have to eat the tart hot,” Yves told me as tarts were being rushed to tables near us. The two Mauritian tarte-flambée bakers make a few hundred every Sunday, with a topping of farmer’s cheese and crème fraîche. This Jewish version, with leftover challah dough as a base, of course omits the ham or bacon. At Passover, Yves told me, some Alsatian Jews use matzo for their Sunday night tarte flambée.

Quiche Savoyarde à la Tomme

After getting reacquainted over a game of Ping-Pong with Caroline and Philippe Moos, cousins I had not seen in many years, I joined them for a dairy dinner with four of their nine children in their house in Aix-les-Bains (see page 212). The meal was delicious, consisting of a vegetable soup, an apricot tart for dessert, and this Savoyard tomato-and-cheese quiche as the main course. This is one of those great recipes in which you can substitute almost any leftover cheese you may have in your refrigerator.

Quiche à l’Oignon

The ever-popular lardon-laced quiche Lorraine is off limits for Jews who eschew pork. In an effort to adapt the regional specialty to fit their dietary limitations, the Jews of Alsace and Lorraine created this onion tart, which I find delicious. I learned how to make it from the great chef André Soltner, who, before he came to America, worked for a kosher caterer in his native Alsace. Trust me, you won’t miss the bacon.

Quick Goat Cheese Bread with Mint and Apricots

When I ate dinner at the Home of Nathalie Berrebi, a Frenchwoman living in Geneva, she served this savory quick bread warm and sliced thin, as a first course for a dinner attended by lots of children and adults. For the main course, Nathalie prepared rouget (red mullet) with an eggplant tapenade on top, something all the children loved. The entire dinner was delicious, but I especially liked that savory bread with the unexpected flavor combination of goat cheese, apricots, and fresh mint. Now I often make this quick bread for brunch or lunch and serve it with a green salad.

Oatmeal Bread with Fig, Anise, and Walnuts

The French love their bread, but they usually buy it in boulangeries. In many homes I visited, though, people would make a quick bread like the goat-cheese-and-apricot bread on page 145. When they had a bit more time, on a weekend morning perhaps, they would make a heartier bread and eat it throughout the week. This recipe, which I tasted at a friend’s house in Paris, is very forgiving and can withstand additions and variations. I often add bits of leftover nuts and dried fruit. Great for breakfast with goat cheese or preserves, it is also a wonderful sandwich bread.

Hutzel Wecken

Most Jews in France prior to the twentieth century used handwritten cookbooks passed down from mother to daughter. And since Alsace-Lorraine was under German occupation between 1871 and 1918, the majority of the Jews living there read German, using many of the dozen or so kosher cookbooks published in Germany in the late nineteenth and early twentieth centuries. Combing through these German books and her mother’s handwritten cookbook, Agar Lippmann, a caterer in Lyon, came across a recipe she had been trying to track down for years. Hutzel wecken, which literally means hat- or dome-shaped little rolls in German, is a very old Hanukkah and To B’Shevat (the new year of trees) fruitcake rarely made today. I prefer it treated more as bread, sliced very thin and served with cheese or really good butter. My guess is that the peanuts were a later addition. If you don’t have all the different dried fruits and nuts, just use what you have. The recipe is very flexible. Once, when I made it for a party, some of the guests liked it so much that, unbeknownst to me, they took home little slices hidden in paper napkins for their breakfast!
