Chicken on a Skewer (Yakitori)
Yakitori at its simplest is a chicken shish kabab with a very Japanese flavor. Pieces of dark meat are served either by themselves, neatly speared onto the ends of small bamboo skewers (three makes a serving), or interspersed with bits of green bell pepper or scallion. As the meat is grilled, it is dipped into a sweetened soy-based sauce. The servings are tantalizingly small, but you can have as many as you want. If you are hungry enough for a full meal, you can serve yakitori on a bowl of rice with tea and pickles on the side.

Jalapeño Sunflower Seed Pesto
Pesto is, of course, a great sauce for pasta, and this topping is also good on steamed vegetables and grilled meats.
Can be prepared in 45 minutes or less.
Turkey Tonnato
This is based on a classic Italian dish, vitello tonnato, in which chilled slices of veal are topped with a puree of tuna, anchovies, capers, and lemon. Here, the veal is replaced by sliced turkey, and the sauce can be made up to a day ahead. (Buy good-quality turkey breast from the deli section of the market.)
Greek-Spiced Game Hen with Clementines, Artichokes, and Olives
Serve with: Orzo tossed with fresh oregano and green onions, and buttered carrots.
Torquato's Zucchini "Cigars"
Torquato Innocenti, who sells his just-harvested, still-prickly zucchini — with flowers attached, a sure sign of freshness — offered me simple advice for the vegetable. Roast them whole in a "puddle" of oil and serve with basil. I bought a bag of his smallest (cigar-size) zucchini, pan-roasted them until browned sprinkled them with chopped basil — and loved the results.

Marinated Picholine Olives

If you're short on time, use a roast chicken from the supermarket instead of grilling chicken breasts. Serve Mexican beers alongside and tortilla chips for extra crunch.
Guacamole with Lime and Roasted Chilies
Serve with jicama sticks, radish slices, peeled cooked shrimp, and corn tortilla chips.
Chicken Muffuletta Salad
This salad — named after the famous New Orleans sandwich — would also be good on oversize rolls. Suitable sides include onion rings and carrot sticks with blue cheese dip. End with praline ice cream cones.
